No-Bake Lemon Pie image

Easy lemon pie that's oh-so simple. Serve with a dollop of whipped cream on top, or with a small spoonful of cherry pie filling.

1 (8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk
½ cup lemon juice
1 teaspoon vanilla extract
1 (8 inch) prepared graham cracker crust

Steps:

  • Place cream cheese in a microwave-safe bowl; microwave at 50% power for 45 seconds.
  • Blend sweetened condensed milk, lemon juice, and vanilla extract together in a bowl until smooth. Add softened cream cheese and blend until smooth.
  • Pour filling into graham cracker crust. Refrigerate until filling sets, about 1 hour.

I don't remember where I got this recipe, I only know I've had it for years and it's always a hit. Make the crust or use a ready made.

Number Of Ingredients 9

1 (14 ounce) can sweetened condensed milk
1 teaspoon freshly grated lemon, rind of
1/2 cup fresh lemon juice
1/4 cup sugar
2 large eggs, yolks and whites separated
1 1/3 cups fine graham cracker crumbs (20 sq. crackers)
1 teaspoon ground cinnamon
1 teaspoon flour
6 tablespoons butter or 6 tablespoons margarine, melted

Steps:

  • Filling: Mix all ingredients except egg whites in medium bowl until blended.
  • In another bowl beat egg whites with mixer until stiff peaks form.
  • Fold into other mixture.
  • Pour into prepared pie crust, smooth top.
  • Bake 25 minutes until filling is set.
  • Cool completely.
  • Crust: Mix graham cracker crumbs, cinnamon and flour.
  • Add melted butter, stir with fork until blended.
  • Press firmly and evenly over bottom and up sides of a 9-inch pie plate.
  • Refrigerate 1 hour or until firm.

  • Preheat oven to 350°F. Break up the graham crackers and place them in a food processor. Pulse until the graham crackers are processed into fine crumbs.
  • In a heavy saucepan, combine sugar and cornstarch. Whisk in milk and lemon juice. Place over medium-high heat and cook, stirring frequently, until thickened and bubbling. Reduce heat to low and cook for 2 more minutes, stirring frequently. Remove from the heat.
  • Before serving, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Top the pie with whipped cream (I used a star tip and piped it on, but you can also spread it using a butter knife or offset spatula). If desired, garnish with a sprinkling of finely grated lemon zest.
