NO-BAKE LEMON PIE
Easy lemon pie that's oh-so simple. Serve with a dollop of whipped cream on top, or with a small spoonful of cherry pie filling.

Steps:
- Place cream cheese in a microwave-safe bowl; microwave at 50% power for 45 seconds.
- Blend sweetened condensed milk, lemon juice, and vanilla extract together in a bowl until smooth. Add softened cream cheese and blend until smooth.
- Pour filling into graham cracker crust. Refrigerate until filling sets, about 1 hour.

LEMON GRAHAM CRACKER PIE
I don't remember where I got this recipe, I only know I've had it for years and it's always a hit. Make the crust or use a ready made.

Steps:
- Filling: Mix all ingredients except egg whites in medium bowl until blended.
- In another bowl beat egg whites with mixer until stiff peaks form.
- Fold into other mixture.
- Pour into prepared pie crust, smooth top.
- Bake 25 minutes until filling is set.
- Cool completely.
- Crust: Mix graham cracker crumbs, cinnamon and flour.
- Add melted butter, stir with fork until blended.
- Press firmly and evenly over bottom and up sides of a 9-inch pie plate.
- Refrigerate 1 hour or until firm.

- Preheat oven to 350°F. Break up the graham crackers and place them in a food processor. Pulse until the graham crackers are processed into fine crumbs.
- In a heavy saucepan, combine sugar and cornstarch. Whisk in milk and lemon juice. Place over medium-high heat and cook, stirring frequently, until thickened and bubbling. Reduce heat to low and cook for 2 more minutes, stirring frequently. Remove from the heat.
- Before serving, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Top the pie with whipped cream (I used a star tip and piped it on, but you can also spread it using a butter knife or offset spatula). If desired, garnish with a sprinkling of finely grated lemon zest.
