GREEN BEANS WITH LEMON AND GARLIC

- Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
- Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.
GREEN BEANS WITH GLAZED SHALLOTS IN LEMON-DILL BUTTER

- In 4-quart Dutch oven, heat 1 to 2 inches water to boiling. Add beans; boil uncovered 8 to 10 minutes or until crisp-tender. Drain; return to Dutch oven.
- Meanwhile, in 10-inch skillet, melt butter over medium heat. Add shallots; cook 2 to 3 minutes, stirring occasionally, until crisp-tender. Stir in sugar. Cook 2 to 3 minutes longer, stirring occasionally, until shallots are glazed and brown. Stir in lemon juice, dill weed and salt.
- Add shallot mixture to green beans; toss to coat.

- Roast garlic in oven at 350 for 20 min,cool.
- Cover Green Beans with water.
- Bring to boil,high simmer for 2-4 minutes.
- Drain water.
- Shock beans in ice water bath,drain.
- Add olive oil to medium hot skillet.
- Add mashed garlic.
- Add green Beans,saute for another 4-5 minute.
- Add lemon juice ,saute for another 30 sec.
- just before serving toss with Dill and season salt.

I am always looking for a diffrent way to cook my beloved green beans. My family will actually eat them if I start with fresh green beans. the directions are for cold green beans but I am sure you could serve them warm with the vinaigrette.

- In a large saucepan bring 1 inch water to boiling. Place green beans on a steamer rack and set the rack in the pan. Cover and steam 7 minutes or until green beans are tender. Immediately transfer green beans to a bowl of ice water then drain.
- Meanwhile, for the dressing, in a small bowl whisk together the lemon juice, zest, dill, oil and mustard.
- Place green beans in a large serving bowl. Add dressing, toss lightly to coat.

- Fill a pot with water. Season with salt so that you can taste it. Bring to a boil.
- Plunge beans into water. Cook 2 to 3 minutes or until just tender but still quite firm. If you're using green beans, it will take a minute or so longer. Drain. Return beans to pot. Add butter, stir in 2 tablespoons dill and season with pepper.
- Stir and toss beans in pot over low heat, until butter is melted. Taste a bean and season with salt and more pepper, or dill, if desired.
