LEMON SORBET
Lovely Lemon Sorbet to cleanse your palate after a meal!

Steps:
- In a saucepan, stir together the diced lemon peel, 1 cup of water and sugar. Bring to a boil, then reduce heat to medium and simmer for 5 minutes. Remove from the heat, and allow to cool.
- In a pitcher or bowl, stir together the lemon syrup with peel, lemon juice and mineral water. Pour into an ice cream maker, and freeze according to the manufacturer's instructions. Garnish each serving with a twist of lemon peel.
- If you do not have an ice cream maker, you may freeze it in a tall canister. Freeze for 1 1/2 hours. Remove and stir with a whisk. Return to the freezer and stir about once every hour for about 4 hours. The more times you stir, the more air will be incorporated, resulting in a lighter finished product.

- Place sugar and water in a small saucepan; bring to a boil over medium heat, stirring constantly. Reduce heat; simmer, uncovered, 2 minutes. Cool completely. , Stir in lemon zest and juice. Fill cylinder of ice cream maker no more than two-thirds full; freeze according to manufacturer's directions. , Transfer sorbet to a freezer container, allowing headspace for expansion. Freeze until firm, about 4 hours. If desired, serve in cookie cups with lemon wedges and top with additional lemon zest.

LEMON DAIQUIRI
Is a daiquiri a daiquiri only if it includes lime? Nope. Even bars in Cuba, the drink's homeland, play pretty fast and loose with daiquiri variations. The lime shortage of 2014 inspired me to try it with lemon instead, and the result is bracing and a little disorienting (in a good way) - like a union between a traditional daiquiri and a Tom Collins. And I like what the distinctive funkiness of rhum agricole adds to the drink. Swap in different fresh, seasonal citrus juices whenever the mood strikes (but adjust the amount of simple syrup accordingly, as other fruits are inherently sweeter than lemons). I'm thinking a daiquiri with clementine juice will hit the spot come winter.

- Grate the zest from 1 lemon and set aside.
- Juice the lemons, saving the pulp but removing pits.
- Stir the sugar, corn syrup, and water together in a mixing bowl until the sugar dissolves.
- Stir in the lemon juice/zest.
- (You can also add the rum here, but if you wait until the end, it won't take as long to freeze because of the alcohol.) Transfer to ice cream maker and freeze.
- Just before it is at sorbet consistency, add rum.

- In a saucepan combine water and sugar.
- Heat over medium heat until mixture comes to a boil and sugar dissolves.
- Remove from heat and cool syrup completely.
- Place strawberries in a food processor bowl or blender container. Cover; process or blend till nearly smooth.
- In a bowl stir together pureed strawberries, rum, lime peel, lime juice, and orange liqueur. Stir in the cooled syrup.

Steps:
- In small saucepan, sprinkle gelatin over 1 cup water; let stand 5 minutes to soften gelatin.
- Add 1/3 cup sugar and 1-1/4 teaspoons Sweet'N Low.
- Cook over low heat, stirring, until gelatin and sugar dissolve completely.
- Pour into large bowl; add remaining water and lemon juice.
- Chill until syrupy, about 2-1/2 hours.
- Beat egg whites with remaining tablespoon sugar and 1/4 teaspoon Sweet'N Low until stiff but not dry.
- Fold into syrup mixture with lemon peel.
- Pour into aluminum loaf pan or rectangular baking pan.
- Cover with foil and freeze 2 hours or until frozen 1 inch around edges.
- Spoon into large bowl and beat until smooth.
- Return to aluminum pan, cover and freeze 3 hours.
- Transfer to bowl and beat again.
- Return to pan, cover and freeze until firm, several hours or overnight.

LEMON SORBET

- With a sharp paring knife, cut off the tops of the lemons (about one inch). With a teaspoon, remove the pulp from the lemons, being careful not to damage the shells.
- Extract the juice from the lemon pulp by pressing it through a sieve into a bowl. Reserve one cup of the juice.
- Put lemon shells including tops on a tray in the freezer.
- To make the sorbet, combine water and sugar in a heavy saucepan, and bring mixture to a boil. Boil for three minutes.
- Remove saucepan from heat and add lemon juice and lemon rind. Allow to cool.
- Put mixture into sorbet machine and freeze according to manufacturer's instructions.
- Beat the egg white and fold into the sorbet. Store in freezer.
- Just before serving, fill the lemon shells with the sorbet, decorate each with a mint leaf, and replace the tops.

BEN & JERRY' S RASPBERRY SORBET
This recipe is from Ben & Jerry's Homemade Ice Cream and Dessert Book and it got many ooo's and ahhh's at a dinner recently. It is sized for a countertop freezer but you can double or triple the recipe for a larger ice cream freezer. The "cooking" time is an estimate for chilling and a "soft" freeze. It will take longer if you want it hardened. I use only 1 cup of sugar and still find this sorbet plenty sweet. Also I prefer using a blender or food processer to process the raspberries, sugar, lemon juice and water. I refrigerate the result and add the wine and corn syrup just before freezing. You can't taste the wine but I think the tannins add to the complexity of the flavor which is truly excellent in my book.
