LEMON-COCONUT MATZO JELLY ROLL

1/4 cup vegetable oil, plus more for brushing
1/3 cup kosher potato starch, plus more for the pan
1 cup sweetened shredded coconut
1/3 cup matzo meal
1/4 teaspoon salt
Finely grated zest and juice of 1 lemon
8 large eggs
1 cup granulated sugar
Confectioners' sugar, for dusting
1 cup raspberry jam
Fresh raspberries, for serving (optional)
2 large egg whites
1/2 cup granulated sugar
1/4 teaspoon finely grated lemon zest
2 teaspoons fresh lemon juice
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Make the cake: Brush a rimmed 11-by-17-inch baking sheet with vegetable oil and line with parchment paper. Oil the parchment and dust with potato starch, tapping out any excess.
  • Spread the coconut on a separate baking sheet; bake until lightly toasted, about 8 minutes. Let cool. Finely grind all but 1/4 cup coconut in a food processor; add the matzo meal and process until finely ground. Transfer to a large bowl and stir in the potato starch and salt.
  • Combine 1/4 cup vegetable oil with the lemon zest and juice in a bowl; set aside. Put the eggs in their shells in a bowl and cover with hot tap water; let stand 5 minutes. Crack the eggs into a bowl; add the granulated sugar and beat with a mixer on medium-low speed until combined, 1 minute. Increase the speed to medium high and beat until thick and fluffy, 12 minutes. Fold the egg mixture into the matzo meal mixture with a rubber spatula until combined. Stir in the lemon-oil mixture until just combined. Spread the batter on the baking sheet; bake until the cake is golden and springs back when pressed, 18 to 20 minutes. Transfer to a rack and let cool 5 minutes in the pan; run a knife around the edge of the cake to loosen.
  • Dust a kitchen towel with confectioners' sugar and invert the cake onto the towel. Peel off the parchment. Starting with a long side, carefully roll up the cake, using the towel to help you. Wrap the towel tightly around the rolled cake and let cool completely, about 15 minutes.
  • Make the frosting: Put the egg whites, granulated sugar, lemon zest and juice, and salt in a heatproof bowl. Set the bowl over a saucepan of simmering water (do not let the bowl touch the water); whisk until the sugar is dissolved, 3 minutes. Remove the bowl from the pan and beat with a mixer on medium-high speed until thick, glossy and cool, 3 to 5 minutes.
  • Assemble the cake: Unroll the cooled cake and spread with the raspberry jam. Reroll the cake, cover with the frosting and top with the reserved 1/4 cup coconut. Serve with raspberries.

Unsalted butter, for the pan
1 cup all-purpose flour, plus more for dusting
1 1/2 cups granulated sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
4 large eggs, separated, plus 2 egg whites, all at room temperature
1/2 cup vegetable oil
1/2 cup coconut milk, at room temperature
1 1/2 teaspoons coconut extract
Pinch of cream of tartar
Confectioners' sugar, for dusting
1 tablespoon white rum
6 large egg whites, at room temperature
1 cup plus 2 tablespoons granulated sugar
3 sticks unsalted butter, at room temperature, cut into pieces
3 tablespoons white rum
4 cups sweetened shredded coconut

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Butter an 11-by-17-inch rimmed baking sheet and line the bottom with parchment paper. Lightly butter the parchment and dust with flour, tapping out the excess.
  • Whisk 1 cup each flour and granulated sugar, the baking powder, baking soda and salt in a medium bowl. In a large bowl, whisk the 4 egg yolks, vegetable oil, coconut milk and coconut extract. Whisk in the flour mixture in 2 batches.
  • Beat the 6 egg whites and cream of tartar in a large bowl with a mixer on medium speed until foamy. Increase the speed to medium high; gradually add the remaining 1/2 cup granulated sugar and beat until stiff, shiny peaks form. Fold one-third of the beaten egg whites into the egg yolk mixture with a rubber spatula, then gently fold in the rest.
  • Spread the batter on the prepared baking sheet and bake until the cake is golden and springs back when pressed, 15 to 20 minutes. Loosen the edges of the cake with a knife; transfer the baking sheet to a rack and let the cake cool slightly. Dust a large piece of parchment paper with confectioners' sugar. Invert the cake onto the parchment and peel off the parchment on top. Brush the cake with the rum.
  • Make the frosting: Whisk the egg whites and granulated sugar in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water) until the mixture is warm and the sugar dissolves. Remove the bowl from the pan; cool slightly.
  • Beat the egg white mixture with a mixer on medium-high speed until stiff peaks form, 12 to 15 minutes. Beat in the butter a few pieces at a time, then continue beating until glossy and smooth, 5 to 7 more minutes. (Don't worry if the mixture looks curdled at first; continue beating.) Beat in the rum.
  • Spread about 2 cups of the frosting on the cake, then sprinkle with 2 cups coconut. Starting at a short end, roll up the cake, using the parchment to help you. Transfer to a platter, seam-side down. Cover the cake roll with the remaining frosting and sprinkle with the remaining 2 cups coconut.

COCONUT MERINGUE ROULADE WITH LEMON CURD CREAM AND RASPBERRIES



Coconut Meringue Roulade with Lemon Curd Cream and Raspberries image

The word 'roulade' comes from the French word for 'to roll' (rouler). Roulades can be savory - made with meat or vegetables and filled with various ingredients - or sweet: made as a cake or meringue and filled with fruit and cream, as I've done here. Meringue roulades make wonderful summer desserts. I love the combination of crunchy, chewy and creamy textures. The meringue can be made a day in advance and stored unfilled and covered with foil. Just fill and roll the roulade on the day you intend to serve it.

Vegetable oil, for brushing
4 egg whites
8 ounces caster sugar (superfine)
2 ounces desiccated coconut (shredded or ground unsweetened coconut)
3 1/2 to 5 ounces heavy cream, lightly whipped
4 ounces (1/2 cup) lemon or lime curd
9 to 11 ounces fresh or frozen raspberries
Icing sugar (confectioners'), for dusting
Fresh raspberries
Fresh mint leaves, optional

Steps:

  • Preheat the oven to 350 degrees F. Line a 9 by 13-inch Swiss roll pan or jelly roll pan with foil, folding the sides up to make a frame of 1 1/2-inches high and squeezing the corners together. Brush lightly with vegetable oil.
  • Place the egg whites in the spotlessly clean stainless steel bowl of an electric food mixer, or use a hand-held electric beater and whisk until soft peaks form.
  • Add all the sugar, but if using a hand-held beater, add the sugar in stages, and whisk at full speed for about 4 to 5 minutes, or until stiff peaks form. Using a large metal spoon, fold in the coconut firmly and quickly.
  • Smooth the meringue into the prepared tin with a palette knife, and bake in the oven for 15 to 20 minutes, or until faintly browned and firm to the touch.
  • Allow the meringue to cool for a few minutes, and then turn out onto a sheet of foil (slightly bigger than the roulade) deftly turn it upside down onto the sheet gently removing the foil on the base. Allow to cool completely.
  • For the filling, stir the cream and curd together. Adjust to taste. It should have a good 'lemony'/'limey' tang to contrast with the sweet meringue.
  • Spread the curd cream mixture evenly over the meringue, leaving the long edge nearest to you, about 1 1/2 inches free of filling. Cover the cream with the fruit.
  • Holding the foil closest to you, roll up the roulade away from you and leave it in the foil until you are ready to serve (it will hold neatly here for a couple of hours in the fridge).
  • When ready to serve, unwrap the roulade, and gently push it onto a serving dish using a palette knife or cake slice.
  • Dust with icing sugar and decorate with a few more raspberries and mint leaves, if you wish.

LEMON ROULADE

Classic lemon drizzle cake gets a 'bakeover'. This striped sponge roll is filled with lemon mascarpone

drizzle of oil , for greasing
4 medium eggs
100g golden caster sugar
100g plain flour
1 tsp baking powder
zest 2 unwaxed lemons
yellow and orange artificial food colouring pastes (see tip, below)
½ tsp vanilla extract
250g tub mascarpone cheese
3 tbsp icing sugar , plus extra for dusting
juice ½ lemon
5 tbsp lemon curd
2 disposable piping bags
30 x 24cm Swiss roll cake tin

Steps:

  • Heat oven to 200c/180c fan/gas 6. Grease the tin with a little oil and line the base with baking parchment. Put the eggs, caster sugar and a pinch of salt in a bowl. Whisk with an electric hand whisk until thick and doubled in volume - this will take about 5 mins. When ready, you should be able to lift out the beaters and the ribbons of batter that fall back to the bowl should remain visible on the surface for a few seconds.
  • Sift in the flour and baking powder, then use a large metal spoon to fold in until just combined. Working quickly, tip half the mixture into another bowl. Add the lemon zest and yellow food colouring to one bowl, and the vanilla and orange colouring to the other. Mix again until just combined - try not to overmix as this will knock out the air, giving you a flat sponge. Transfer each mixture to a piping bag.
  • Snip the end off of one piping bag, about 2cm from the tip. Quickly pipe lines along the tray. Repeat with the other bag, then bake for 10 mins.
  • While the sponge cooks, spread a tea towel on your work surface with a sheet of baking parchment on top. When the sponge is cooked, flip it onto the parchment, then flip the whole thing over again, so that the brighter side of the sponge is now on the bottom. Using a sharp knife, trim the edges to neaten, then, with the shorter end facing you, use a sharp knife to score along one edge, about 2cm from the end - this will help to roll it up. Tuck the scored edge into the sponge, then continue rolling away from you, rolling the parchment and tea towel with it as you go. leave to cool completely like this for 20 mins.
  • To make the filling, mix the mascarpone with the icing sugar and lemon juice. Once cooled, unroll the sponge and remove the baking parchment. Spread the mascarpone over the inside of the sponge, top with blobs of lemon curd, then re-roll, dust with a little icing sugar and serve. Will keep in the fridge for 2 days.

1 1/2 teaspoons grated lemon peel
1/8 teaspoon salt
1 cup canned sweetened cream of coconut (such as Coco Lopez)
1 cup whipping cream
1/2 teaspoon grated lemon peel
5 large egg yolks
2 tablespoons all purpose flour
9 tablespoons unsalted butter
1 tablespoon white rum
1/4 teaspoon imitation coconut extract
1 cup chilled whipping cream
1/4 cup sour cream
3 tablespoons white rum
2 tablespoons sugar
1/2 teaspoon grated lemon peel
1/2 teaspoon vanilla extract
1 cup sweetened shredded coconut, toasted
8 thin lemon slices, cut into quarters

Steps:

  • Preheat oven to 350°F. Butter 11x17-inch jelly roll pan. Line with parchment. Finely grind coconut and flour in processor. Using electric mixer, beat yolks and 1/4 cup sugar in large bowl until pale yellow and slowly dissolving ribbon forms when beaters are lifted, about 5 minutes. Stir in lemon peel. Using clean dry beaters, beat whites and salt in another bowl until medium peaks form. Gradually beat in remaining 1/4 cup sugar and beat until stiff but not dry. Fold whites into yolk mixture in 2 additions. Gently fold in coconut mixture. Spread batter evenly into prepared pan. Bake until toothpick inserted into center comes out clean, about 15 minutes. Run small sharp knife around pan sides to loosen cake. Slide cake on parchment onto rack; cool. (Can be made 1 day ahead. Return cake to pan. Cover with plastic; store at room temperature.)
  • Bring first 3 ingredients to simmer in heavy medium saucepan. Whisk yolks and flour in bowl to blend. Gradually whisk in some of hot cream mixture. Return mixture to saucepan and stir over medium heat until custard boils and thickens, about 2 minutes. Pour mixture into bowl. Cool to lukewarm. Add butter and whisk until smooth. Whisk in rum and coconut extract. Cover and chill until very thick but still spreadable, about 1 hour. Slide cake on parchment onto work surface. Run long sharp knife between cake and parchment to loosen.
  • Spread filling over cake, leaving 3/4-inch border. Starting at 1 long side, roll up cake jelly roll style. Transfer to platter seam side down. (Can be prepared 8 hours ahead. Cover and refrigerate.)
  • Whip cream, sour cream, rum, sugar, lemon peel and vanilla in medium bowl to stiff peaks. Spread frosting over cake. Press coconut onto sides of cake, leaving 2-inch-wide strip without coconut down center. Decorate center strip with lemon.
