SOUTHERN VINEGAR BARBECUE SAUCE
This is a traditional vinegar-based Carolina style barbecue sauce recipe. Notice that there is no tomato base in this recipe, just lots of flavor.

- Gather the ingredients.
- Melt the butter in a saucepan.
- Add the lemon juice, Worcestershire sauce, honey, salt, and pepper. Bring the sauce to a simmer over medium heat for 5 minutes, or until honey has melted through and the sauce is well combined.
- Remove the sauce from the heat and carefully add in the vinegar a little at a time. Let the sauce cool for 5 to 10 minutes before using.

- Preheat oven to 325 degrees. Top garlic with oil, zest, thyme, salt, and pepper, and wrap in parchment-lined foil. Bake until garlic is golden and soft, 1 1/2 hours. Unwrap, and let cool for 10 minutes. Squeeze garlic from peels, and puree with zest, thyme, and lemon juice in a food processor.
- Combine garlic mixture and barbecue sauce in a medium saucepan over medium heat. Gently simmer for 5 minutes. Let cool, and refrigerate.

- Whisk together the first 10 ingredients. Add onion; set aside 1/4 cup. Pour remaining marinade into a large resealable plastic bag; add chicken.
