BRIOCHE BREAD PUDDING

Brioche bread pudding image

Creamy bread pudding made with leftover brioche bread.

Provided by Aleksandra

Categories     Breakfast     Dessert

Time 50m

Number Of Ingredients 8

1 (1lb/450g) brioche loaf
4 large eggs
4 1/2 cups (1080g) milk
1/2 cup (100g) sugar
1 teaspoon cinnamon
1 tablespoon vanilla extract
1/4 teaspoon fine sea salt
1 tablespoon butter (for greasing the form)

Steps:

  • Preheat the oven to 350°F / 180°C / Gas Mark 4 (if you have a convection/fan oven, reduce the temperature by about 20° or follow the manufacturer's instructions).
  • Grease a 9x13-inch (23x33cm) oval baking dish with butter.
  • Cut the brioche into roughly 1-inch (3cm) cubes and add to the baking dish.
  • In a large bowl, whisk (or mix with an electric mixer) all the other ingredients: milk, sugar, cinnamon, vanilla, salt.
  • Pour the custard into the baking dish. Move the bread cubes to ensure they are coated with the custard (milk-egg mixture) on all sides, press them in slightly. The mixture should cover almost all brioche cubes but the tips of the cubes should be above the milk mixture (they will crisp up nicely).
  • Bake the pudding for about 40 minutes or until the pudding is golden and crispy on top and custard is set and not jiggly (you can measure the temperature of the bake to make sure it's baked through, it should be 160°F/71°C in the center of the pudding).
  • Enjoy!

BRIOCHE AND BERRY BREAD PUDDING WITH LEMON FONDANT

Brioche and Berry Bread Pudding with Lemon Fondant image

Provided by Tyler Florence

Categories     dessert

Time 1h10m

Yield 6 to 8 servings

Number Of Ingredients 12

Butter, room temperature
4 eggs
3/4 cup whole milk
3/4 cup heavy cream
1 tablespoon vanilla extract
1 teaspoon lemon zest
1/2 cup sugar, plus more for dusting and topping
4 large slices brioche bread
2 cups mixed berries (blueberries, strawberries, raspberries, blackberries), plus more for garnish
2 cups powdered sugar
2 tablespoons water
2 lemons, zested and juiced

Steps:

  • Butter and sugar 6 (6-ounce) ramekins.
  • In a medium bowl, whisk together the eggs, milk, cream, vanilla extract, lemon zest, and sugar. Combine well with a whisk - then let it settle so there are no air bubbles on the surface otherwise these will cause lumps in your anglaise.
  • Preheat the oven to 350 degrees F.
  • Tear the brioche up into large pieces using your hands, add to the custard mixture and toss to combine. Equally divide the berries among the ramekins and top with the bread mixture. Gently press down so they are packed evenly. Sprinkle with more sugar, then refrigerate for 10 to 15 minutes to let soak.
  • Bake for 25 minutes in the center of the oven. The pudding is ready when it has puffed up and the custard is set. The top should be a nice golden color. Remove and allow to cool slightly.
  • Make the fondant. In a mixing bowl combine sifted powdered sugar, water, lemon zest and juice.
  • Once the pudding has cooled slightly, invert onto an individual serving plate. Drizzle the lemon fondant over warm bread pudding and serve with extra fresh berries.

1/4 cup unsalted butter, melted (1/2 stick)
1/2 cup sugar
1 tablespoon sugar
4 cups half-and-half
6 slices lemon zest, removed with a vegetable peeler
2 tablespoons minced crystallized ginger
6 large eggs
salt, a pinch

  • Remove from the heat and whisk in the vanilla.
  • Pour the mixture through a fine strainer set over a large glass measure or bowl.
  • Transfer the bread to the baking dish and toss with the apricots.

GINGERED BRIOCHE SUMMER PUDDING WITH SOUR CREAM MASCARPONE

Gingered Brioche Summer Pudding with Sour Cream Mascarpone image

This summer pudding yields 6 servings, allowing second helpings for a party of 4 or a breakfast treat for the next morning. In addition to an 8-inch square glass baking dish, you will also need another one, glass or metal, of the same size.

Yield Serves 4 generously

Number Of Ingredients 9

1 cup sugar
3/4 cup water
5 teaspoons finely grated peeled fresh gingerroot, or to taste
4 firm-ripe nectarines (about 1 3/4 pounds), pitted and cut into 1/2-inch wedges
4 firm-ripe plums (about 1 1/2 pounds), pitted and cut into 1/2-inch wedges
3 cups picked over blueberries, rinsed
2 teaspoons fresh lemon juice
four to eight 1/2-inch-thick slices (about 1/2 pound) from loaf of brioche or challah
Accompaniment:Sour Cream Mascarpone

Steps:

  • In a large saucepan bring sugar, water, and gingerroot to a boil, stirring until sugar is dissolved. Stir in fruit and simmer gently, covered, carefully stirring occasionally, until blueberries just begin to burst, about 5 minutes. Remove pan from heat and stir in lemon juice. Transfer fruit mixture to a shallow baking dish to cool as quickly as possible. Transfer 1 1/2 cups cooled fruit mixture to a bowl and reserve, covered and chilled.
  • Preheat oven to 400°F.
  • On a baking sheet arrange bread slices in one layer and toast in middle of oven, turning them if necessary, until golden brown on both sides. Transfer bread to a rack to cool.
  • In an 8-inch square glass baking dish set inside a larger shallow baking dish arrange half of bread slices, overlapping slightly if necessary and trimming to fit, and top with half of unchilled fruit mixture. Layer remaining bread slices and unchilled fruit mixture in same manner. Cover surface of pudding with plastic wrap. Put another 8-inch square glass or metal baking dish on top of plastic wrap and weight pudding evenly with about 6 pounds of weight (such as cans of food). (Chill pudding at least 8 hours and up to 1 day.)
  • Just before serving, remove weights, baking dish, and plastic wrap from pudding, reserving juice that has spilled over into larger baking dish, and cut pudding into 6 portions. Transfer 4 portions with a spatula to plates and spoon reserved juices and chilled fruit mixture around them.
  • Serve pudding with sour cream mascarpone.

Provided by Renate

Categories     Desserts     Specialty Dessert Recipes     Bread Pudding Recipes

Time 2h40m

Yield 16

Number Of Ingredients 20

cooking spray
1 (1 pound) loaf brioche bread, cut into 3/4-inch cubes
6 large eggs
¾ cup white sugar
⅛ teaspoon salt
1 ½ cups heavy whipping cream
1 ½ cups half-and-half
1 teaspoon vanilla extract
¼ cup dark brown sugar
3 tablespoons unsalted butter
¼ cup rum
1 tablespoon fresh lemon juice
¼ teaspoon salt
4 ripe bananas, sliced
aluminum foil
2 cups powdered sugar
1 ¼ cups heavy whipping cream
¼ cup dark rum
¼ teaspoon salt
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x12-inch glass baking dish with cooking spray.
  • Spread bread cubes on an ungreased baking sheet.
  • Bake in the preheated oven, stirring once or twice, until toasted, 5 to 7 minutes. Remove from the oven and set aside.
  • Whisk eggs, sugar, and 1/8 teaspoon salt together in a large bowl until blended.
  • Bring cream and half-and-half to a simmer in a medium saucepan. Remove from heat. Pour some of the hot cream mixture into the egg mixture, whisking quickly to avoid scrambling the eggs. Continue adding cream mixture slowly and whisking until all has been added. Whisk in vanilla extract and set custard aside to cool.
  • Combine brown sugar and butter in a large skillet over medium-high heat; whisk until butter is melted and mixture is smooth. Whisk in rum, lemon juice, and 1/4 teaspoon salt. Add bananas and toss just until coated. Remove from heat.
  • Toss 1/3 of the toasted bread in the prepared baking dish and top with 1/2 of the banana-syrup mixture. Layer with 1/2 of the remaining bread, the remaining banana-syrup mixture, and the remaining bread. Pour custard over the top and allow pudding to stand for 30 minutes, pressing down on the bread occasionally so it absorbs the custard.
  • Cover bread pudding with aluminum foil and place the baking dish inside a large baking pan. Fill the large pan with warm water so it reaches halfway up the sides of the pudding dish.
  • Bake in the preheated oven for 30 minutes. Uncover and bake until pudding has puffed up and the center is set, about 45 minutes longer. Remove from the water bath and let stand for 15 minutes.
  • Meanwhile, pour powdered sugar evenly into a heavy saucepan. Cook, without stirring, over medium-high heat until sugar begins to melt and caramelize on the bottom, 3 to 4 minutes. Stir until all sugar is melted and smooth. Add 1 cup cream, rum, and salt; stir until smooth. Stir in remaining 1/4 cup cream. Remove from heat and stir in butter until caramel sauce is smooth. Serve with bread pudding.
