½ cup orange juice
½ lime, juiced
1 tablespoon honey
1 teaspoon crushed red pepper flakes
4 (6 ounce) skinless, boneless chicken breast halves
1 tablespoon chopped fresh cilantro

Steps:

  • Whisk together the orange juice, lime juice, honey, and red pepper flakes in a bowl, and pour into a resealable plastic bag. Add the chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 30 minutes.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the chicken from the marinade, and shake off excess. Discard the remaining marinade. Place the chicken on the grill and cook the chicken breasts until no longer pink in the center and the juices run clear, about 6 to 8 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Top with cilantro and serve.

Lee doesn't cook. Ever. But after watching "Woman on Top," she got inspired to invent this marinade. Maybe I should change the name to Woman on Top Marinade. lol No matter what we call it, it's a good, tropical-tasting marinade that is great for grilled chicken or seafood.

Number Of Ingredients 9

2 limes, juice of
1 head garlic, crushed (use less if you're not a garlic fan)
1 jalapeno pepper, minced
2 -3 chipotle peppers, minced
1 teaspoon meat tenderizer, makes the meat marinate faster (optional)
1 teaspoon adobo seasoning
1 cup sour orange juice or 1 cup regular orange juice, if you can't find sour OJ
1/4 cup olive oil
fresh ground black pepper

Steps:

  • Mix all ingredients together and pour over chicken.
  • Marinate at least 30 minutes.
  • If you use the meat tenderizer, don't marinade for more than an hour or so, or the meat fibers will break down too much. If you leave it out, marinate as long as you'd like. I prefer overnight.
