SLOW COOKER VEGAN LEEK AND POTATO SOUP



Slow Cooker Vegan Leek and Potato Soup image

A hearty soup without animal products but still full of rich flavor. Sauteing before slow cooking brings out the flavor of seemingly simple ingredients.

¼ cup vegan butter
3 tablespoons olive oil
2 large leeks, diced
1 yellow onion, minced
1 large carrot, diced
1 cup minced Pleurotus mushrooms (oyster mushrooms)
2 pounds potatoes, peeled and diced
4 cups low-sodium vegetable broth
1 cup unsweetened oat milk, divided
1 tablespoon potato starch
salt and ground black pepper to taste

Steps:

  • Turn on the Saute function on your slow cooker. Heat vegan butter and olive oil. Add leeks, onion, carrot, and mushrooms. Cook and stir until leeks and onions are translucent and softened, carrots have softened, and minced mushrooms have liquefied, about 7 minutes. Add potatoes and vegetable broth; mix well. Mix 1 tablespoon of the oat milk with potato starch to create a slurry and stir it into the soup.
  • Heat remaining oat milk in a microwave-safe bowl in the microwave until hot, about 30 seconds. Pour it into the soup and season with salt and pepper. Turn off Saute function.
  • Cook in the slow cooker on Low for 6 hours or on High for 3 1/2 hours. Stir soup before serving.

2 carrots, rough cut
2 celery ribs, rough cut
1 onion, peeled and quartered
2 leeks, white part only rough cut
2 garlic cloves, peeled
40 g olive oil
400 g potatoes, rough cut
1000 ml vegetable stock
salt
pepper

Steps:

  • Add the carrots, celery, onion and leeks to TM bowl. Chop 7 sec/speed 5 - drop the garlic cloves through the hole in the lid while the blades are spinning.
  • Add the olive oil and cook 5 minutes/100º/speed 1.
  • Add the potato and cook another 5 minutes/100º/speed 1.
  • Add 750 ml veggie stock to TM bowl. cook 15-20 min/100º/speed 2.
  • Puree by slowly raising speed from 1-9 - allow 20-45 seconds to completely puree the soup.
  • Pour in the remaining 250 ml stock. Cook 3 minutes/100º/speed 4.
  • Season with salt and pepper as desired and serve immediately!

  • Leeks, start by removing and discarding the root ends and thick dark green parts. Cut the leeks in half lengthwise and rinse each half under cold water, pulling apart the layers to remove any sand or debris nestled inside, slice the leeks crosswise. Alternatively, slice the leeks, then put in a colander and wash well under running water. Should yield 4 – 5 cups. Cut potatoes into 1/2 inch cubes. Feel free to peel the potatoes or leave the skin on (I left the skin on).
  • In a large dutch oven or pot, heat the oil/water over medium heat. Add the leeks and cook, stirring frequently, until soft and wilted, about 10 minutes. Adjust the heat as necessary so as not to brown the leeks.
  • Add the potatoes, broth, bay leaves, herbs, salt to pot and bring to a boil. Reduce heat, cover and simmer on low for 15 minutes, or until the potatoes are fork tender.
  • Remove the bay leaves, and puree the soup using a hand-held immersion blender until smooth. Alternatively, use a regular blender to puree the soup in batches. Taste for seasoning.
