SPRING PEA FISH CHOWDER

Spring Pea Fish Chowder image

Sweet peas, pea shoots, and a sprinkle of lemon zest give this light, just-creamy-enough chowder an extra dose of freshness. While cod might be a more traditional chowder choice, we love halibut for its meatier texture and sweeter flavor.

Yield 4 servings

Number Of Ingredients 12

3 leeks, white and pale green parts only, tough outer layer removed
2 Tbsp. extra-virgin olive oil
1 lb. baby creamer (Yukon Gold) potatoes, halved (quartered if larger than 1 1/2" in diameter)
2 tsp. kosher salt, divided
1 1/2 tsp. freshly ground black pepper, plus more
1 cup pure clam juice
2 bay leaves
1 lb. skinless halibut or cod fillet, cut into 2x1" pieces
1 cup heavy cream
1 (10-oz.) bag frozen sweet peas, thawed
1 Tbsp. fresh lemon juice
Pea shoots (tendrils) or sprouts, basil leaves, finely grated lemon zest, and flaky sea salt (for serving)

Steps:

  • Cut leeks into 1/4" rounds. Rinse, tossing with hands so that leeks separate into individual rings, and drain thoroughly. Transfer to a medium pot. Add oil and toss to coat. Cover pot and cook over medium heat until leeks begin to soften, 5-6 minutes. Add potatoes, 1 tsp. kosher salt, and 1 1/2 tsp. pepper and stir to combine. Add clam juice, bay leaves, and 2 cups water and bring to a boil. Reduce heat to medium-low and cook, uncovered, until potatoes are fork-tender, 10-12 minutes.
  • Season halibut with remaining 1 tsp. kosher salt. Add to pot along with cream and peas and stir to combine. Cook, stirring occasionally, until halibut is opaque, 3-4 minutes. Remove from heat and stir in lemon juice.
  • Divide chowder among bowls. Top with pea shoots, basil, and lemon zest. Season with sea salt and a generous amount of pepper.

LEEK AND POTATO CHOWDER

Leek and Potato Chowder image

This recipe is my tribute to James Crockett, the host of 'Crockett's Victory Garden' on PBS in the 1970's. Jim would raise leeks the size of baseball bats and brag about leek and potato soup. His skill in teaching gardening inspired me to pursue a career in horticulture. This version of your soup is my tribute to you.

Time 3h25m

Yield 6

Number Of Ingredients 9

3 leeks
6 tablespoons butter, divided
¼ cup all-purpose flour
2 (15 ounce) cans chicken broth
5 small red potatoes, peeled and diced
2 slices crispy cooked bacon, chopped
salt and ground black pepper to taste
½ cup water as needed
1 cup half-and-half

Steps:

  • Clean leeks by cutting off the roots and the tips of the leaves. Make a vertical cut from the root end to the tops, being careful to not cut through completely. The leeks will now open like the pages of a book, and any mud can be cleaned out between the leaves under the faucet. Slice the cleaned leeks into quarter-inch strips.
  • Melt half the butter in a skillet over medium-high heat. Saute leeks in hot butter until wilted, 3 to 5 minutes; transfer to a slow cooker.
  • Melt remaining butter in the same skillet over low heat. Gradually whisk flour into the melted butter until the mixture forms a clump of dough. Slowly stream chicken broth into the skillet, continually whisking until the broth is entirely incorporated; pour over the mixture in the slow cooker. Add bacon and potatoes to the slow cooker. Season mixture with salt and pepper; stir.
  • Cook on Low until the potatoes are soft, stirring water into the mixture if it gets too thick, at least 2 hours. Stir half-and-half into the mixture and continue cooking for 1 hour more.

  • Steamed Winter Veggie Bowls. Steaming vegetables isn't the flashiest cooking technique, but it truly lets veggies become their best selves. Here, they get a little help from sherry vinegar, honey, and cayenne.
  • Braised Leeks, Peas, and Lettuce. Braising may sound like a winter move, but this delicate spring braise will bring something fresh and nuanced to your table.
  • Spring Greens and Leek Gratin. The contents of this cast iron skillet demonstrate the best way to eat your greens: with creamy, cheesy leeks, of course!
  • Glazed Leeks With Pine Nut Salsa Verde. This is a great side dish to help you get to know leeks more intimately. They're brought to life with a nutty, herby salsa verde and spiked with a little honey-sweetened sherry vinegar.
  • Leek and Potato Galette With Pistachio Crust. Few things go together as well as humble leeks, potatoes, and goat cheese. But the ground pistachios in the crust make this galette truly luxe.
  • Leeks in Vinaigrette with Walnuts and Tarragon. If you want to show off that you know your way around a leek, make this riff on a classic leeks in vinaigrette.
  • Spring Pea Fish Chowder. What makes this fish chowder sing is its leek backbone. Every bowl is fragrant with sweet alliums, and the broth is infused with their subtle flavor.
  • Charred Leeks With Honey and Vinegar. Sometimes you want to burn your dinner on purpose. Alliums (plants in the onion family, such as leeks) are among the group of ingredients that really benefit from a good char on a grill.
  • Chicken and Rice With Leeks and Salsa Verde. This one-skillet meal shows what leeks can do for chicken and rice, but it's the deeply savory anchovy-garlic-caper salsa, and the hit of lemon juice before serving that boosts this dish toward lift-off.
  • Leek-Top Baking-Sheet Hash. This recipe highlights one of the most under-utilized greens: leek tops. If you're trying to get more bang for your buck and cut down on waste in the kitchen, keep this one in your back pocket.
