4 slices bacon, diced
1 ½ cups chopped onion
1 ½ cups water
4 cups peeled and cubed potatoes
1 ½ teaspoons salt
½ teaspoon ground black pepper to taste
3 cups half-and-half
3 tablespoons butter
2 (10 ounce) cans minced clams

Steps:

  • Place diced bacon in large stock pot over medium-high heat. Cook until almost crisp; add onions, and cook 5 minutes. Stir in water and potatoes, and season with salt and pepper. Bring to a boil, and cook uncovered for 15 minutes, or until potatoes are fork tender.
  • Pour in half-and-half, and add butter. Drain clams, reserving clam liquid; stir clams and 1/2 of the clam liquid into the soup. Cook for about 5 minutes, or until heated through. Do not allow to boil.

3 tablespoons butter
4 (1 inch) cubes salt pork
3 ribs celery, diced
1 Spanish onion, diced
1 clove garlic, minced
5 potatoes, peeled and cut into 3/4 inch cubes
5 cups clam juice
1 teaspoon dried tarragon
1 teaspoon celery salt
2 bay leaves
1 ½ pounds fresh clams, shelled and chopped
5 dashes Worcestershire sauce
2 cups heavy cream
¼ teaspoon chopped fresh dill
salt and ground black pepper to taste
10 sprigs fresh parsley, for garnish

Steps:

  • Melt butter in a stockpot over medium-high heat; cook and stir salt pork, celery, onion, and garlic in melted butter until softened, about 7 minutes. Add potatoes, clam juice, tarragon, celery salt, and bay leaves to the stockpot. Bring the mixture to a boil, reduce heat to medium, and place a cover on the pot. Cook at a simmer until potatoes are tender, about 35 minutes.
  • Stir clams into the soup and simmer uncovered for 5 minutes. Add Worcestershire sauce, heavy cream, dill, salt, and pepper; stir and cook another 7 minutes. Remove the pot from heat. Remove and discard bay leaves. Garnish with parsley to serve.

2 (6 1/2 ounce) cans minced clams
2 cups heavy cream

Steps:

  • In a 3 quart saucepan, brown bacon over medium heat (do not drain drippings).
  • Add potato and onion and saute for about 7 minutes.
  • Drain the minced clams and reserve the liquid.
  • Add clam juice and reserved clam liquid to mixture in saucepan.
  • Cover and simmer 15 minutes or until potato is tender.
  • Stir in cream and clams and bring to a slow simmer.
  • DO NOT BOIL.
  • Serve with crackers.

1 1/2 cups milk
2 tablespoons lemon juice

  • In large saucepan cook and stir bacon and onion until bacon is crisp and onion is tender.
  • Stir in soup and milk.

30 littleneck clams (about 3 pounds), scrubbed
4 slices thick-cut bacon, chopped
2 tablespoons unsalted butter
3 stalks celery, finely chopped
1 medium onion, finely chopped
2 teaspoons chopped fresh thyme
1/3 cup all-purpose flour
1 large russet potato, peeled and cut into 1/2-inch cubes
2 cups half-and-half
Kosher salt and freshly ground pepper
Chopped fresh chives, for topping (optional)

Steps:

  • Rinse the clams several times under cold running water. Transfer to a large pot and add 3 cups water. Bring to a simmer over medium-high heat, then cover and cook until the clams open, about 6 minutes. Strain through a fine-mesh sieve into a large bowl; reserve the broth. Transfer the clams to a bowl and cover with plastic wrap so they don't dry out.
  • Cook the bacon in a large pot over medium heat until crisp, about 10 minutes; remove with a slotted spoon and drain on paper towels. Melt the butter in the same pot over medium heat. Add the celery, onion and thyme and cook, stirring occasionally, until soft, about 10 minutes. Add the flour and cook, stirring, 1 minute. Stir in the reserved clam broth, 1 1/2 cups water and the potato. Bring to a simmer and cook until the potato is tender and the soup thickens slightly, about 15 minutes.
  • Meanwhile, remove the clams from their shells and roughly chop.
  • Reduce the heat under the soup to medium low. Whisk in the half-and-half and warm through (do not boil). Remove from the heat. Stir in the chopped clams; season with salt and pepper. Ladle the soup into bowls and top with the reserved bacon and chives.

1 cup minced onion
1 cup diced celery
2 cups cubed potatoes
1 cup diced carrots
¾ cup butter
¾ cup all-purpose flour
1 quart half-and-half cream
2 tablespoons red wine vinegar
1 ½ teaspoons salt
ground black pepper to taste

Steps:

  • Drain juice from clams into a large skillet over the onions, celery, potatoes and carrots. Add water to cover, and cook over medium heat until tender.
  • Meanwhile, in a large, heavy saucepan, melt the butter over medium heat. Whisk in flour until smooth. Whisk in cream and stir constantly until thick and smooth. Stir in vegetables and clam juice. Heat through, but do not boil.
  • Stir in clams just before serving. If they cook too much they get tough. When clams are heated through, stir in vinegar, and season with salt and pepper.

4 (5 ounce) cans chopped clams
5 lbs potatoes
1 lb bacon, chopped
1 medium onion, chopped
1 gallon whole milk
1 lb real butter
fresh parsley, chopped
paprika
cornstarch

Steps:

  • Drain juice from canned clams into large stock pot.
  • Peel potatoes and cut into bite-sized chunks.
  • Cook potatoes in clam juice (adding a little water to cover, if necessary).
  • Fry bacon just until done. Add to potatoes and clam juice.
  • Add clams, chopped onion, milk and chopped parsley.
  • Thicken with corstarch mixed with water. When thickened, add the real butter, paprika and more parsley for color and taste.
  • Cook until butter is blended.

1 dozen chowder clam (or 10oz. can of whole baby clams, drained and rinsed)
6 cups fish stock
1 ounce lean salt pork, coarsely chopped (or low-salt bacon)
2 large onions, coarsely chopped
1 lb potato, peeled and diced
2 cups 1% low-fat milk
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons chopped parsley

Steps:

  • Prepare fresh clams by steaming in 1/4 cup fish stock until shells open, about 5 minutes. Remove with slotted spoon and cool. When cool enough, remove clams from shells and coarsely chop. If using canned clams, coarsely chop. Cook salt pork in a 4 quart saucepan over moderate heat about 3 minutes, until crisp and fat is rendered. With a slotted spoon, remove pork and discard. If using bacon, reserve for garnish. Add the onions to the pan with 1/4 cup of stock. Saute 5 minutes or until soft but not brown. Stir in potatoes and remaining fish stock and bring to a boil. Simmer, patially covered, stirring occasionally, about 10 minutes or until potatoes are tender. Remove from heat and puree about 2 cups of vegetables in a blender until smooth. Add the puree to the soup and return to the heat. Add the milk and clams and simmer 5 minutes to blend flavors. Season with salt and pepper and stir in parsley. Garnish with bacon.

1 teaspoon ground thyme
1/2 teaspoon celery salt

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. , Meanwhile, in a Dutch oven, saute onions in butter until tender. Add flour; stir until smooth. Gradually stir in milk. 4 slices bacon, diced
2 tablespoons butter
2 medium onions, diced
2 garlic cloves, minced
2 stalks celery & leaves, minced
2 teaspoons dried thyme

2 lbs red potatoes, diced to 1/2 inch
3 (6 ounce) cans minced clams
32 ounces clam juice (bottles or cans)
1 1/2 cups heavy cream
white pepper (to taste)
2 tablespoons dried parsley (or fresh is nice)

Steps:

  • Heat 4 to 6 quartsized soup pot, over low heat.
  • Add diced bacon, rendering fat, cook til crisp, with slotted spoon, remove bacon and set aside.
  • Add butter to the bacon drippings in the soup pot, then add diced onions, garlic, celery, thyme and bay leaves. Saute, stirring occasionally with wooden spoon, until onions are softened, not brown, about 10 minutes.
  • Drain the canned clams, saving the liquid into the soup pot. Set the clams aside with the crisp bacon.
  • Add the diced potatoes and bottled clam juice to the soup pot. Total broth should just barely cover the potatoes, if it does not, add a little water. Cover and cook vigoriously about 10 minutes.
  • Mash cooked potatoes with a spoon against side of pot to thicken chowder.
  • Cook 1 to 2 minutes more,uncovered, to release the starch from the potatoes, which causes the chowder to thicken nicely.
  • Remove from heat. Add clams, bacon, and cream.
  • Season and add Parsley. Serve immediately.

1 1/2 lbs potatoes, peeled and diced
2 cups light cream
oyster crackers (optional)

Steps:

  • Bring water to boil in large covered saucepot.
  • Add the clams and garlic Cook 6-10 min over med-high heat, or until the clams have just opened.
  • Drain clams, reserving the broth.
  • Strain the broth through coffee filters/cheesecloth to remove grit.
  • Remove the clams from their shells, chop finely.
  • In a large heavy saucepot, cook the salt pork over low heat until the fat is rendered and becomes liquid.
  • Using a slotted spoon, remove the"cracklings" and reserve them.
  • Add the onions to the fat; cook over med-high heat for 5-7 minutes, til softened but not browned.
  • Add in flour; cook for 3 minutes, stirring constantly.
  • Add the reserved clam broth, the 4-1/2 c.
  • of clam broth and the fish stock; whisk to remove lumps.
  • Bring the liquid to a boil; add potatoes, Reduce heat, simmer for about 15 minutes or until the potatoes are cooked through.
  • Stir in the clams, salt pork and the light cream.
  • Heat chowder to desired temperature.
  • Serve with oyster crackers.
