This is truly the lasagne for the lazy man/woman. Which is why it would be a great recipe to start your teenager on!(Ohhhh! Cut! Just kidding teens. We know you are not ALL lazy.) I am so lazy, I do not even have a recipe for this, which is why you wont see many measurements. You could make this from almost all leftovers and bits of this and that. - pasta such as penne or egg noodles
- spaghetti sauce, homemade or jarred
- (optional) a half jar of alredo sauce
- hamburger or ground turkey/chicken or sausage (of leftovers)
- mozarella cheese, grated
1 pint(s) cottage cheese
- parmesan cheese

Steps:

  • Now remember, you are making 'lazy lasagne' so dont work too hard at this. Use leftovers where possible. Heat up your sauce and mix in the meat, either leftover bits or cook up some. True lazy-ists will cook the meat up in the microwave and then drain it and break it up. (I use stoneware baker and chop with mix n chopper). Then mix with the sauce. Maybe microwave another minute together. But you dont have to, if its too much effort. We need to focus on lazy here.
  • Cook up your pasta of choice until just done. Get out a baking pan, like a Pyrex glass 9 x 13 or a stoneware or La Creuset baking pan. (Unless you are broiling, then dont use stoneware.) Grate your cheeses. (Or better still, get someone else to grate them for you!)
  • Lets make it even easier and mix the noodles and the meat sauce together. Ahhh! Lets layer them in. Pasta/meat/sauce-the 3 cheeses-a drizzle of alfedo sauce-pasta/meat/sauce again and so it goes. Just try to end with mozzarella cheese on top.
  • Now you can bake this until warm. It wont take long, because it is already pretty much warm. Or you can put it under the broiler for a few minutes. (But dont walk away, like I did, and let it get too brown). Or microwave it and then broil it for a nice brown topping. Whatever is the laziest way for you! Serve up, maybe with a bag of ready to go-no effort salad. (I am feeling so lazy now, I wont even go back and spell check this!)

8 ounces uncooked lasagna noodles, broken into 2-inch pieces
1 cup part-skim ricotta cheese
1 cup shredded part-skim mozzarella cheese, divided
1/3 cup grated Parmesan cheese
1 jar (24 ounces) pasta sauce with meat

Steps:

  • Preheat oven to 400°. Cook lasagna noodles according to package directions. Meanwhile, in a large bowl, mix ricotta cheese, 1/2 cup mozzarella cheese and Parmesan cheese. Drain noodles well; stir into cheese mixture., Spread 1 cup pasta sauce into a greased 11x7-in. baking dish. Layer with half of the noodle mixture and 1 cup sauce; layer with the remaining noodle mixture and sauce. Sprinkle with remaining cheese., Cover with greased foil; bake until heated through, 10-15 minutes.

EASY LAZY LASAGNA

Fast, easy and delicious! You can make this recipe with different kinds of noodles and vegetables and also you can add more or less hot peppers (or Tabasco!) if you enjoy spicy food!

3 cups rotini pasta or 3 cups other large pasta
12 ounces lean ground beef
1/2 cup chopped onion
1 cup grated carrot
1 (24 ounce) jar prepared pasta sauce
1/2 teaspoon italian seasoning (oregano or basil)
1/2 teaspoon hot pepper flakes (optional)
1 (17 ounce) container light ricotta cheese
1 egg
1 cup grated part-skim mozzarella cheese
1/4 cup grated parmesan cheese

Steps:

  • In a large pot of boiling water, cook pasta until tender but firm; drain.
  • In a large skillet, cook beef over medium-high heat until browned. Add onions and carrots; cook for 3 to 4 minutes. Stir in pasta sauce and Italian seasoning (oregano or basil). Remove from heat and set aside.
  • In a bowl, combine ricotta cheese, egg and 1/2 cup of the mozzarella cheese. Set aside.
  • To Assemble: Spread half of the meat mixture on bottom of greased 13x9-inch baking dish. Top with all of the pasta. Spread all of the cheese mixture over pasta. Top with remaining meat mixture. Sprinkle with remaining mozzarella cheese and Parmesan cheese.
  • Bake in preheated oven, uncovered for 35 to 45 minutes or until bubbling.
  • Let stand for 10 minutes before serving.

EASY LAZY LASAGNA

1 cup wide egg noodles
½ pound ground beef
4 ounces bulk Italian sausage
1 ½ cups marinara sauce
½ cup cottage cheese
⅓ cup grated Parmesan cheese, divided
¼ teaspoon onion powder
¼ teaspoon garlic salt
¼ teaspoon Italian seasoning
½ cup grated mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Pour marinara sauce into the meat. Stir in drained egg noodles, 2 tablespoons Parmesan cheese, onion powder, garlic salt, and Italian seasoning; mix until incorporated. Pour mixture into an 8-inch square casserole dish and top with mozzarella cheese and remaining Parmesan.
  • Bake in the preheated oven until cheese is golden brown, about 25 minutes.

8-ounces provolone, sliced
1/2 cup grated Parmesan cheese (about 2 ounces)
1 pound lean ground beef
1/2 cup minced onion, optional
1 garlic clove, minced, optional
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper, to taste
12 ounces frozen (not thawed) cheese ravioli
1 (14-ounce jar) spaghetti sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • Brown the beef with the optional onion, optional garlic, herbs, and salt and pepper in a large, ovenproof skillet (I use one that's made of castiron). When the meat is thoroughly cooked -- it will take 8 to 10 minutes -- drain off any fat and take everything out of the pan. Now put the still-frozen ravioli into the pan, breaking them up if they are clumped. Spread the ground beef mixture evenly over the ravioli, and ladle the spaghetti sauce evenly over the ground beef mixture. Over medium heat, without stirring, cook until the ravioli is heated through and beginning to brown on the bottom -- about 10 minutes.
  • Take the skillet off the heat, lay the provolone slices over the ground beef mixture, and sprinkle the whole thing with the Parmesan. Bake for 10 minutes, or until the cheese is melted. Serve hot.

LAZY NO-BAKE LASAGNA

1 tablespoon olive oil
1 pound mild Italian sausage, casings removed
2 cups Classic Marinara Sauce, recipe follows
12 ounces mafaldine corte or farfalle pasta
8 ounces mini mozzarella balls
3/4 cup ricotta
1/4 cup grated Parmesan
Torn basil leaves, for topping
1/3 cup olive oil
6 cloves garlic, minced
Three 26-ounce cartons chopped tomatoes
1 teaspoon Italian seasoning
1 large basil sprig
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter

Steps:

  • Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
  • Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.

Steps:

  • In a large bowl, combine the first seven ingredients; set aside. In another bowl, combine the spaghetti sauce and beef; mix well. , Spoon a fourth of the meat sauce into a greased 13x9-in. baking dish. Top with three noodles and half of the cheese mixture; repeat layers once. Top with a fourth of the meat sauce, remaining noodles and remaining meat sauce. Pour water around edges. Sprinkle with Parmesan cheese. , Cover and bake at 375° for 45 minutes. Uncover and bake 15 minutes longer or until noodles are tender. Let stand 10 minutes before cutting.
