LAZY MAN'S BREAD (NO-KNEAD BREAD)



Lazy Man's Bread (No-Knead Bread) image

This easy but extra rich No-Knead Sandwich Bread can save you on lazy days! Made with a combination of whole wheat and all-purpose flour, the dough is ready in less than 5 minutes and there's no need to knead. If you're craving something hearty and homemade but have no time to waste, this recipe is for you.

1 1/2 cup warm milk
4 tbsp melted butter
2 eggs
1 1/2 tsp instant yeast
2 tbsp brown sugar
2 cups (250 g) all-purpose flour
2 cups (240g) whole wheat flour
1 tsp salt

Steps:

  • Melt the butter and warm up the milk. Microwaving each for 30 seconds is enough.
  • In a medium bowl, mix butter, milk and eggs.
  • In a large bowl, combine the dry ingredients. Mix the wet mixture until dough is form and no dry spots remain. It's a very wet dough, so use a spoon or spatula. Don't try to mix it using your hands.
  • Let it rest for 1 hour, covered with a damp kitchen towel.
  • Place into baking pan. You can use a large loaf pan, or two medium. Grease the loaf pan first with butter or cooking spray.
  • Let it rest for 30 minutes on the loaf pan while you preheat your oven to 375°F.
  • Bake bread for 40 to 45 minutes, or until the top is nicely golden.
  • Wait 10 minutes to serve. No need to wait for more than 10 minutes for this bread. Have it still warm, with lots of butter or whatever your heart desires!

1/4 c shortening
2 c self rsing flour (or bisquick)
1 1/2 c milk
OPTIONS:
pinch garlic powder (savory to serve with chili or spaghetti)
pinch cinnamon (to serve as a breakfast bread or use left over stale bread to make french tost )

Steps:

  • 1. Pre-heat oven to 350 degrees (twenty minutes)
  • 2. Spray 8 inch cast iron skillet with non stick spray (if your skillet is well seasoned, you do not have to do this step) place one tablespoon of shortening from the 1/4 cup into the skillet
  • 3. When oven has preheated for 15 minutes, place cast iron skillet into oven to heat while you make the batter.
  • 4. In a medium bowl, combine shortening, flour and milk. Mix well. (May add one of the optional ingredients at this time) Pour immediately into hot cast iron skillet. Return to oven to bake.
  • 5. Bake approximately 15 minutes until the top is golden brown. For high altitudes: Add approximately 5 to 8 more minutes to the baking time

  • Ingredients. 2 cups (200 g) all-purpose flour. ½ cup (96 g) sugar. 1 ½ teaspoons (6 g) baking powder. ½ teaspoon (2 g) baking soda. 1 teaspoon (5 g) salt.
  • Preheat Oven and Prepare Loaf Pan. Preheat the oven to 350 degrees F (177 C). Spray a 9x5 loaf pan with nonstick cooking spray.
  • Whisk Dry Ingredients. Whisk together the flour, sugar, baking powder, baking soda, and salt in a medium mixing bowl.
  • Combine Wet Ingredients. In a separate bowl (or measuring cup) whisk melted butter with the buttermilk and the egg.
  • Add Wet to Dry. Pour the liquid ingredients over the dry ingredients. Gently fold all the ingredients until all the flour has been incorporated and a shaggy, wet batter is formed.
  • Add Batter to Prepared Pan. Add the batter into the prepared pan and smooth the top.
  • Bake. Bake for 45-50 minutes. Let the loaf cool in the pan for 10 minutes before removing and slicing.
  • Enjoy! Enjoy warm with whatever toppings you'd like. I love mine with butter and honey.
