This is a recipe my mother always made on special occasions--it was the only casserole dish my father would eat. My husband had never eaten asparagus until we married 25 years ago and now always requests this dish when asked what he would like on special occasions. It is so easy and so delicious!

4 eggs
3 (15 ounce) cans asparagus, drained
2 (10.75 ounce) cans condensed cream of mushroom soup
2 cups crushed buttery round crackers
4 ounces shredded Cheddar cheese

Steps:

  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel and slice.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • In the prepared dish layer 1 1/2 cans of asparagus, 1 can mushroom soup, 2 eggs and 1 cup of crushed crackers. Repeat layers with remaining ingredients.
  • Cover and bake in preheated oven for 25 minutes. Remove cover and top with grated cheese. Cover and bake an additional 5 minutes, or until cheese is melted.

2 pounds fresh asparagus, trimmed, cut into 1-inch pieces
1/4 cup butter, cubed
1/4 cup all-purpose flour
2 cups whole milk or half-and-half cream
1/2 teaspoon salt
1/4 teaspoon pepper
6 hard-boiled large eggs, sliced
1 cup shredded cheddar cheese
1 cup crushed potato chips

Steps:

  • In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender. Drain well; set aside. , In a large saucepan over medium heat, melt butter. Stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Add salt and pepper. , Preheat oven to 350°. In an ungreased 11x7-in. baking dish, layer half of the asparagus. Cover with half of the eggs, cheese and sauce. Repeat layers. Sprinkle with potato chips. , Bake, uncovered, until heated through, 30 minutes.

Layered is the new chopped! We stacked spring's best produce and finished it with a Parmesan-buttermilk dressing (which you can also use on any non-vertical salad). If peas are more your thing, swap them out for the asparagus. You could also add a layer of leftover potato salad, because... why not?

1/2 small red onion, thinly sliced
3 tablespoons white wine vinegar
Kosher salt
1 bunch asparagus, trimmed and cut into 1-inch pieces
1/2 cup buttermilk
1/2 cup grated Parmesan (about 2 ounces)
3 tablespoons mayonnaise
1 small clove garlic, finely grated
Freshly ground black pepper
8 cups baby arugula (about 5 ounces)
6 radishes, quartered
1 cup broccoli or alfalfa sprouts
2 cups freeze-dried snap peas or green beans
4 hard-boiled eggs, cut into wedges
1/2 cup roasted almonds, chopped

Steps:

  • Toss the onions with 2 tablespoons each vinegar and cold water and a large pinch of salt in a small bowl. Let sit for at least 30 minutes, tossing occasionally. (The onions will turn bright pink.) Strain.
  • Meanwhile, set up a steamer in a pot of simmering water. Add the asparagus, and steam until bright green and crisp-tender, 6 to 8 minutes. Remove, spread out on a baking sheet and let cool.
  • Whisk together the buttermilk, Parmesan, mayonnaise, garlic, the remaining 1 tablespoon vinegar, 1/2 teaspoon salt and a few grinds of pepper in a small bowl.
  • Using a straight-sided 3-quart tall glass bowl for 1 large salad or four 16-ounce wide-mouth glass jars with lids for 4 individual salads, make a first layer with half the arugula, then add the following in separate layers: the radishes, half the broccoli, the snap peas, the pickled red onion, the remaining arugula, the remaining broccoli, and the asparagus and egg. Sprinkle the top with the almonds. (The salad can be put together, covered and refrigerated for up to 2 hours before serving.)
  • If making 1 salad, just before serving, transfer it to a large bowl, toss with about half the dressing and season with salt and pepper. If making 4 salads, add dressing to each jar, season with salt and pepper, cover with the lid and shake to coat. Serve the remaining dressing on the side.

This recipe is from one of those school fundraiser cookbooks, so it is very simple. It uses canned asparagus, which can be slimy, so be aware. You can sub fresh cooked asparagus if you like. This is quick and uses ingredients I always have on hand. I served it with ham and mashed potatoes.

4 tablespoons butter
4 tablespoons all-purpose flour
salt and pepper to taste
1 (15 ounce) can asparagus, drained with liquid reserved
½ cup milk
½ teaspoon Worcestershire sauce
1 pinch cayenne pepper
4 ounces sharp Cheddar cheese, cubed
½ cup blanched almond halves
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a medium-sized casserole dish.
  • Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a heavy saucepan, melt the butter. Stir in the flour, salt, and pepper; blend thoroughly. Gradually stir in 3/4 cup of reserved asparagus liquid and the milk; cook (stirring constantly) until the sauce is thickened and smooth . If the mixture is too thick, more asparagus liquid or milk can be added until the mixture reaches the desired consistency. Stir in the Worcestershire sauce and cayenne pepper. Remove the pan from the heat.
  • Layer the asparagus, eggs, cheese, and almonds into the casserole. Repeat the layering until all of the ingredients are used. Spoon the sauce over the layers and sprinkle with crumbs.
  • Bake in the preheated 350 degree F (175 degrees C) oven for 20 minutes; or until bubbly and lightly browned.

This is something I've been wanting to make for a while. I just whipped it up last night for ze boyfriend and we were both happy with how it turned out. Measurements aren't listed perfectly, so you can also wing it. For best results, get all ingredients from Trader Joe's®.

1 teaspoon butter, or as needed
1 bunch fresh asparagus, trimmed and cut into thirds
¾ cup heavy whipping cream

1 (8 ounce) wedge Brie cheese, cut into small chunks
¼ cup bread crumbs

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook orecchietta pasta in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain and transfer pasta to a casserole dish.

1 lg bag(s) sharp cheddar cheese
saltine crackers
milk, whole
salt and pepper to taste
bread baking pan

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Layer crackers on bottom of Bread pan
  • 3. Layer of Asparagus on top of crackers
  • 4. Sprinkle layer of Cheese on top of Asparagus
  • 5. Do this two more time to fill the bread pan You can softly push down the layers as you go to make room. Add one more layer of crackers on top
  • 6. Slowly pour milk over the casserole up to the top of the last layer of crackers.
  • 7. Line cookie sheet pan with foil in case for boil over and place Casserole on sheet and put it in the oven on the middle rack.
  • 8. Cook for 55 min. until milk has cooked down and not runny or soupy . Should be gelled with the crackers. Add a little more cheese on top just before pulling out of oven. Let set and cool 5 or more mins. It will be too hot to eat right out of the oven.

2 (14 1/2 ounce) cans cut asparagus spears, reserving 2 tbs liquid
1 (16 ounce) container sour cream
1 cup grated very mild cheddar cheese (etc.) or 1 cup monterey jack cheese (etc.)
salt
pepper
1/4 teaspoon hot sauce
1/4 cup finely crumbled saltines or 1/4 cup hi-ho cracker

Steps:

  • Preheat oven 350 degrees.
  • Melt 2 tbs butter in microwave-proof bowl, then stir in flour till smooth.
  • Add 2 tbs liquid from canned asparagus to flour mixure; stir well.
  • Stir in sour cream, grated cheese, salt, pepper, and hot sauce.
  • Thoroughly drain one can asparagus and arrange in bottom of ungreased 9"x2" square casserole.

1 teaspoon salt
1/4 teaspoon black pepper
2 cups milk
1 (12 ounce) can asparagus spears or 1 (12 ounce) can asparagus spears
4 hard-boiled eggs, sliced
1/2 cup cracker crumb

Steps:

  • Preheat oven to 350*.
  • Melt butter over low heat.
  • Add flour, salt and pepper.
  • Stir until well blended.
  • Remove from heat.
  • Gradually stir in milk and return to heat.
  • (To enhance the flavor of this dish, drain asparagus into measuring cup and finish out the 2 cups with milk).
