LAURA'S MEATLOAF
This is one of the first meals I made when I started out cooking for my husband. I was lucky to come across this recipe for meatloaf in a church cookbook because it is one of our favorites even today. I have tried other meatloafs but none of them taste like this one...

Steps:
- Combine eggs, oatmeal, milk, worcestershire sauce, salt, garlic powder, pepper, mustard, onion. Mix with hamburger. Pat into loaf pan. Bake @350 for one hour. Combine ketchup, brown sugar and mustard. Spread over meatloaf. Bake 20-25 minutes longer.

LAURA'S SPICY GRILLED MEATLOAF
Meatloaf isn't just for winter anymore. Using your outdoor grill you can have meatloaf in the heat of the summer. And speaking of heat, this meatloaf's got it -- watch out for those chipotle peppers!

Steps:
- Combine first 7 ingredients and 1 teaspoon chipotle peppers in adobo sauce or 1/2 teaspoon dried chipotle seasoning. Shape into a loaf. Wrap in aluminum foil and chill 1 hour or overnight.
- Poke fork-size holes on both sides of foil. Grill meatloaf in foil package, covered with grill lid, over medium-high heat 10 to 15 minutes on each side or until a meat thermometer inserted into thickest portion registers 155 degrees F.
- Stir together ketchup and remaining chipotle peppers or chipotle seasoning. Spoon sauce evenly over meatloaf and cover with aluminum foil for 5 minutes to heat through. Serve immediately.

- In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into two loaves. Place a sheet of heavy-duty foil in center of grill. Place meat loaves on foil (do not seal foil)., Prepare grill for indirect heat; grill meat, covered, over indirect medium heat for 50 minutes or until meat is no longer pink and a thermometer reads 160°. Brush tops with additional ketchup if desired. Let stand for 10 minutes before slicing.

CLASSIC SPICY MEATLOAF
This is my family's favorite meatloaf recipe. Onion may be substituted for green onions (scallions).

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
- Mix ground beef, sausage, vegetable mixture, bread crumbs, parsley, and eggs in a large bowl; form into a loaf and place in a rectangular baking pan with 2-inch high sides. Cover loaf with remaining 1/3 cup ketchup.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- In a sauté pan over medium heat, cook the onion and garlic in the olive oil for about 6 to 8 minutes or until soft and translucent, allow to cool completely.
- In a small bowl, put the slices of bread and pour the milk over them, let them sit for a few minutes or until the bread soaks up all the milk.
- In a large bowl, combine the beef, the milk soaked bread, cooked onion and garlic, parsley, parmiggiano, worchesteshire sauce, eggs, salt and pepper. Mix until everything is well combined but don’t over mix and compact the mixture too much otherwise your meatloaf will be tough.
