LAURA'S QUICK SLOW COOKER TURKEY CHILI
This is an easy chili recipe that you can throw in the slow cooker and forget about all day. Great topped with Cheddar cheese, crushed corn chips, and a dollop of sour cream.

Steps:
- Heat the oil in a skillet over medium heat. Place turkey in the skillet, and cook until evenly brown; drain.
- Coat the inside of a slow cooker with cooking spray, and mix in turkey, tomato soup, kidney beans, black beans and onion. Season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt.
- Cover, and cook 8 hours on Low or 4 hours on High.

LAURA'S QUICK SLOW COOKER TURKEY CHILI

I cut back some on the spice to suit my own taste, but you can add more chili powder, or use chopped tomatoes with chili.

Steps:
- Heat the oil in a skillet over medium heat. Place turkey in the skillet, and cook until evenly brown. Coat the inside of a slow cooker with cooking spray, and scoop turkey in, leaving about 1 tbsp of fat in the skillet. Brown onion in the skillet, 6-8 minutes, then add to slow cooker.
- Mix in water, tomato soup, tomatoes, kidney beans, black beans and corn. Season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt.
- Cover, and cook 8 hours on Low or 4 hours on High.
LAURA'S VERSION OF WHITE CHILI
This recipe is a combination of many other white chili recipes and the result of many trials. One of the things I really like about it is how versatile it is...add or take out whatever you and your family desire. I make a HUGE batch of it, then freeze in quart size freezer bags for a quick dinner during winter.

- Add all ingredients to stock pot, except for the lime juice and cilantro-- stir those in just before serving.
- Cook on medium high heat until heated through.
- When I am making a big batch for the freezer, I usually quadruple the recipe.
- Great to serve buffet style, with bowls of the extra chopped jalapenos, shredded cheese and tortilla chips for everyone to create their own bowl of chili.
- Prep time does not include cooking the chicken breasts.

LAURA MOON'S CHILI
This one appeared in Neil Gaiman's novel, "American Gods." When Shadow Moon gets out of prison he eats his first meal as a free man at a bar that claims to have the best chili in the state. After a couple mouthfuls he decides that the chili is good, but definitely not the best in the state. He then begins to reminisce about his wife's far superior chili. No recipe was given directly by Gaiman, but many of the the ingredients were mentioned. I took what Neil wrote and expanded upon it to create this recipe. Hope you enjoy!

Steps:
- Heat oil in a large saucepan over medium heat. Cook onions, garlic, lean meat in oil for 10 minutes, or until the meat is well browned and the onions are tender.
- Mix in the diced tomatoes with juice, dark beer, wine, tomato paste and beef broth.
- Season with chili powder, cumin, dill, cayenne pepper, coriander and salt.
- Stir in carrots, 2 cans of the beans and hot chile peppers.
- Reduce heat to low, and simmer for 2 hours.
- Stir in the 2 remaining cans of beans, and simmer for another 30 minutes.
- Top with sour cream and cheese if desired!

- In a large pot over medium high heat, cook together ground beef and the sausage, add the chopped bell pepper, onion, jalapeno and garlic season with salt and pepper, cook for about 7 to 8 minutes or until the veggies cook down and start to develop some color.
- Add the wine, chili powder, cumin, brown sugar, tomato paste, and oregano and give it a nice stir. Cook for about 1 minute, add the chopped tomatoes, kidney beans, and beef stock and bring to a boil. Reduce the heat to medium low and cook for a couple hours.
