- Cook pasta according to package directions; drain. , Meanwhile, in a large nonstick skillet, saute carrots in oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in tomatoes, broccoli, squash, green pepper and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, until vegetables are tender, 8-10 minutes., Stir in pasta; sprinkle with cheese.

EMERIL'S LATE NIGHT PASTA
I got this recipe from Emeril's TV show. It's easy and delicious. You can always add/adjust to whatever you have on hand or like.

Steps:
- 1. Bring a large heavy pot of salted water to a boil. Add the spaghetti and cook, stirring to separate the strands until the pasta is al dente - 7 to 8 minutes for dry pasta. Drain in a colander - reserving 1/4 cup of the pasta cooking water. Return the pasta to the pot.
- 2. Meanwhile, in a large skillet, heat the oil over medium heat. Add the bacon and cook until crisp. Add the garlic, shallots, pepper and salt and cook, stirring until fragrant and the garlic is soft but not brown - about 1 1/2 minutes.
- 3. Remove the pan from the heat and add the egg and reserved pasta cooking water - stirring quickly until the mixture thickens, but the egg does not scramble. Pour over spaghetti in pot and toss until evenly coated.
- 4. Divide the spaghetti among plates or large shallow bowls, sprinkle cheese to taste over the top of each serving and serve immediately. Makes 4 servings.

Steps:
- Bring a large pot of salted water to a boil; add pasta and cook for 8 minutes.
- Meanwhile, place bacon in a large skillet over medium heat. Cook, stirring occasionally, until crisp, 3 to 4 minutes. Add onion and 1/2 teaspoon black pepper; cook, stirring until onion softens, 2 to 3 minutes.
- While onion is cooking, heat 1 tablespoon butter in a small skillet. Carefully crack eggs into skillet and cook until whites are just set. Remove from heat and keep warm.
- Add garlic to skillet with bacon and onion and stir to combine. Add 1/4 cup pasta cooking liquid to skillet; drain pasta and add to skillet. Add remaining 3 tablespoons butter and reduce heat to low. Add cheese and toss until melted and sauce is well combined.
- Divide pasta evenly between two serving bowls; top with fried egg and season with pepper. Serve immediately.
LATE NIGHT PASTA AND VEGGIES
My boyfriend got off of work late one night and was pretty hungry by the time he got home. I had all these ingredients around the house and it really came together nicely. You can add or omit almost any veggie!!

Steps:
- Start pasta boiling (if it gets done before your veggies just try to keep it warm).
- Heat olive oil on medium heat.
- Cut veggies into bite size pieces.
- Put veggies into pan with oil and let heat for a couple minutes.
- Add pepper, more if desired.
- Add chicken broth and continue heating.
- Stir occasionally.
- (Add more olive oil or broth if you don't think there is enough liquid).
- Add garlic shortly before removing from heat (just so it doesn't burn).
- After draining pasta LEAVE IN STRAINER!
- Put the strainer over a bowl or container and pour veggie mix over pasta.
- Mix pasta and veggies while in strainer and then dump into container.
- Serve with garlic bread or a light dusting of cheese, would go well with grilled chicken as well.

- Cook the pasta and drain, reserving and setting aside 1/2 cup of the pasta water. While the pasta is cooking, heat the olive oil on medium-low heat in a large skillet. Start sauteing the bell peppers, about 90 seconds, then add the mushrooms, and continue cooking about 2 minutes more.
- Add the squash and cook an additional 3-4 minutes, removing the vegetables from the heat before the squash becomes soft. Sprinkle the vegetables with 1 teaspoon salt and 1/2 teaspoon pepper as they are cooking.
- Pour the cream into the empty skillet and sprinkle with the Italian spices, and additional salt and pepper. Add the pasta and stir to coat. Heat on the stove until the sauce has thickened slightly and coats the pasta. Return the vegetables to the pan and stir to combine.
- (If pasta is too dry, simply add a bit of the reserved pasta water until it reaches the desired consistency.) Taste the pasta and adjust salt and pepper to taste. Plate the pasta individually and then grate Parmesan on top, if desired. Enjoy!
