Number Of Ingredients 10

3 quarts water
4 bone-in chicken breast halves (about 3 pounds)
1-1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon poultry seasoning
1 teaspoon chicken bouillon granules
3 medium carrots, chopped
2 celery ribs, chopped
1 small onion, chopped
1/2 cup uncooked long grain rice

Steps:

  • In a Dutch oven, place water, chicken, salt, pepper and poultry seasoning. Bring to a boil. Reduce heat; cover and simmer until chicken is tender, 25-30 minutes., With a slotted spoon, remove chicken from broth. When cool enough to handle, remove meat from bones; discard skin and bones. Cut chicken into bite-size pieces. Skim fat from broth; add chicken and remaining ingredients. Bring to a boil. Reduce heat; cover and simmer until vegetables and rice are tender, 25-30 minutes.

My hubby used to eat this soup when he was there and it was a hit. Now I sometimes substitute or add fresh mushrooms. Either is great. Photos are of the soup with the chicken and mushrooms and then the second photo is the same soup with rice. Young children may find this too spicy. For those that cannot have milk, this fits the menu. I have used minced white onion and dried cilantro in place of spring onions.

2 garlic cloves, crushed
2 tablespoons peanut oil
6 green spring onions, sliced very thin
1 teaspoon fennel seed
1/4 teaspoon cayenne pepper
1/2 teaspoon cinnamon
3 tablespoons peanuts, chopped fine (optional)
3 1/2 cups coconut milk
1 cup cooked rice
1 -2 cup diced cooked chicken
2 cups sliced mushrooms (optional)

Steps:

  • In large pot, add oil, garlic spring onions, fennel seeds, cayenne pepper, cinnamon and peanuts. Saute until a little brown and toasted.
  • Add coconut milk and rice. Cover. cook 15 minutes on low.
  • Note: You may add mushrooms instead of rice.
  • in this step.
  • Stir a few times during cooking.
  • Add cooked chicken.

A Vietnamese friend taught me how to make this dish that originates from Laos and Cambodia. If you can't find galangal, substitute fresh ginger and squirt of lime juice. Pre-ground chicken, turkey or pork may be used instead of the chicken thigh meat. Serve with sticky rice or in lettuce cups.

1/4 cup uncooked long grain white rice
2 lbs boneless skinless chicken thighs, cut into chunks
2 tablespoons peanut oil
4 garlic cloves, minced
2 tablespoons minced galangal
2 small red chili peppers, seeded and finely chopped
4 green onions, finely chopped
1/4 cup fish sauce
1 tablespoon shrimp paste
1 tablespoon white sugar
3 tablespoons chopped of fresh mint
2 tablespoons chopped fresh basil
1/4 cup lime juice

Steps:

  • Preheat an oven to 350ºF (175ºC). Spread the rice onto a baking sheet.
  • Bake the rice in the preheated oven until golden, about 15 minutes. Remove and allow to cool. Once cooled, grind into a fine powder with a spice grinder. Meanwhile, grind the chicken thigh meat in a food processor until finely ground; set aside.
  • Heat the peanut oil in a wok or large skillet over medium heat. Stir in the garlic, galangal, chile peppers, and green onions; cook and stir until the garlic softens, about 3 minutes. Add the ground chicken thigh meat, and cook, stirring constantly to break up lumps, until the meat is no longer pink, about 5 minutes. Season with fish sauce, shrimp paste, and sugar. Reduce heat to medium-low, and simmer until the excess liquid has evaporated, about 5 minutes more. Stir in the ground rice, mint, basil, and lime juice to serve.

1 clove garlic, minced
2 teaspoons minced fresh serrano or other small hot green chile, including seeds

1 tablespoon vinegar
1 tablespoon fish sauce
2 teaspoons white sugar
2 cups chicken broth
2 (13.5 ounce) cans coconut milk

Steps:

  • Heat the cooking oil in a large pot over medium-high heat. Cook and stir the ginger, garlic, serrano pepper, and chicken in the hot oil about 5 minutes. 1/2 teaspoon thyme
1/2 teaspoon dill weed
1 bay leaf
2 carrots, sliced

Steps:

  • Combine the broth, thyme, dill, bay leaf, carrots, celery and onion in a pot.

3 cups water
1 teaspoon salt
3 cups chicken stock
1 chicken breast, thinly sliced
1 stalk lemongrass, crushed & chopped
1 green chili pepper, sliced thinly
1 tablespoon of crushed garlic
1/3 cup finely chopped coriander

Steps:

  • Boil the water in a saucepan and add the salt and chicken stock.
  • Once boiling add the chicken breast meat and reduce the heat to a simmer.
  • Simmer for about 5 minutes then remove the chicken from the stock and set aside.
  • In a frying pan add a dash of oil and when boiling add the garlic, chili and lemon grass.
  • Once brown remove from the heat and cool before crushing in a mortar until a fine paste.
  • Add the paste to the saucepan with the broth and remove the saucepan from the heat.
  • Shred the chicken into thin strips and return to the soup.
  • Stir in the chopped coriander, mint, lime juice and fish sauce.
  • Serve with a bowl of sticky rice.

This particular ping gai (Laotian for 'grilled chicken') recipe seems to have originated from the Queen Mother Cafe in Toronto, so some North-Americanization may have occurred. But rest assured, this is at least twice as good as your average grilled chicken, North American or otherwise. Generous amounts of freshly ground pepper and chopped cilantro are the main players in the marinade, while a sweet, garlicky dipping sauce is the perfect accompaniment.

1 tablespoon whole black peppercorns, or more to taste
1 large bunch fresh cilantro stems and leaves
3 tablespoons oyster sauce
2 tablespoons soy sauce
2 tablespoons fish sauce
2 tablespoons vegetable oil
2 pinches cayenne pepper
10 boneless, skinless chicken thighs
⅔ cup seasoned rice vinegar
1 lime, juiced
4 cloves garlic, crushed
1 tablespoon sambal oelek (chile paste)
1 tablespoon fish sauce
¼ cup freshly chopped cilantro
2 tablespoons honey, or more to taste

Steps:

  • Grind peppercorns coarsely using a mortar and pestle, electric grinder, or spice mill.
  • Chop cilantro finely and transfer to a mixing bowl. Stir in the freshly ground pepper, oyster sauce, soy sauce, fish sauce, oil, and cayenne. Add chicken thighs and toss by hand until completely coated. Cover with plastic wrap and marinate in the fridge for 4 to 12 hours.
  • Combine rice vinegar, lime juice, garlic, sambal, fish sauce, cilantro, and honey to make the dipping sauce. Refrigerate until ready to use.
  • Preheat grill for medium- to medium-high heat and lightly oil the grate.
  • Place chicken thighs on the grill, discarding any excess marinade. Cover and grill until thighs spring back to the touch, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 155 degrees F (68 degrees C). Slice and serve with the dipping sauce.
