CHOCOLATE-BANANA MUFFINS



Chocolate-Banana Muffins image

I love banana! And these make the ideal treat for supper for the school lunches. They freeze well so double the recipe and try and leave some for the freezer! Store in an airtight container once cooled.

1 ½ cups mashed banana
⅓ cup oil
⅓ cup milk, or as needed
1 medium egg, beaten
1 ½ teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons cocoa powder
½ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with 12 paper liners.
  • Combine mashed banana, oil, milk, egg, and vanilla extract in a medium bowl. Sift flour and cocoa powder into a large bowl. Add sugar, baking powder, and salt into the flour mixture; mix to combine. Add wet ingredients to dry ingredients, mixing until just combined. Batter should be wet enough to scoop into muffin liners; add a little extra milk if your mixture is too dry.
  • Stir chocolate chips into batter. Scoop batter into muffin liners.
  • Bake in the preheated oven until tops spring back when lightly pressed, 12 to 15 minutes.

One of my favourite muffins, sweeter than most breakfast muffins but still a long way from being cupcakes in disguise which too many muffins are. NOTE: I have adjusted the quantity of flour thantks to my reviewers.

Number Of Ingredients 11

2 cups mashed ripe bananas
2 large eggs
3/4 cup buttermilk
3 tablespoons vegetable oil
1 teaspoon vanilla
1 2/3 cups whole wheat flour
1/2 cup cocoa, sifted
3/4 cup dark brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Butter or put paper cups in muffin pan.
  • Mash bananas.
  • Whisk in eggs, buttermilk, vegetable oil and vanilla.
  • Mix the dry ingredients.
  • Be sure to sift the cocoa.
  • Mix wet and dry ingredients until just blended.
  • Spoon the batter into the muffin cups.
  • Bake for 20-25 minutes, until done.
  • If you like, lay a slice of banana over each muffin before baking.

Steps:

  • Stir together flour, sugar, baking powder, salt, and cocoa. Set aside. In large mixing bowl, combine bran cereal and milk. Let stand 5 minutes or until cereal softens. Add egg whites and oil. Beat well. Stir in bananas. Add flour mixture stirring only until combined. Portion batter evenly into twelve 2½ inch muffin-pan cups coated with cooking spray. Bake at 400℉ (200℃) about 25 minutes or until lightly browned. Serve warm.

These muffins are so moist and full of flavor! I have looked at dozens of recipes and most had too much sugar for my liking. There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

¼ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt

1 egg

1 teaspoon vanilla extract
2 large very ripe bananas, mashed
¾ mini semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.
  • Combine flour, cocoa, baking powder, baking soda, and salt together in a large bowl.
  • Whisk sugar, oil, egg, milk, and vanilla extract together in a separate bowl. Stir into flour mixture until just moistened. Fold in bananas and chocolate chips.
  • Divide batter among the muffin cups, filling each about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

Steps:

  • 1. Stir together flour, sugar, baking powder, salt and cocoa powder. Set aside.2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg whites and oil. Beat well. Stir in bananas. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.3. Bake at 400°F about 23 minutes or until lightly browned. Serve warm.

Thanks to Luv4food for posting her fabulous muffin recipe. My husband was recently diagnosed with diabetes so I made a few alterations to help lighten the sugar load. I did take her suggestion to add chocolate chips as the small amount is worth the yummy surprise when eaten.

2 medium ripe bananas
1 1/4 cups whole wheat flour
1/4 cup Splenda sugar substitute
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup all-bran cereal
1 cup skim milk
1/4 cup egg substitute
1/4 cup oil replacement (prune puree)
1/4 cup semi-sweet chocolate chips

Steps:

  • Preheat over to 400f and lightly grease muffin tin or line with paper.
  • Set aside.
  • Peel bananas and mash (or slice one).
  • Set aside.
  • Sift together flour, cocoa, baking powder, baking soda, and salt.
  • Set aside.
  • In a large mixing bowl, combine cereal and milk.
  • Let stand 2-3 minutes or until cereal is softenened.
  • Add egg, fat substitute, and mashed bananas.
  • Mix well.
  • Mix is sliced bananas (if one was sliced).
  • Add the flour mixture, stirring just until combined.
  • Portin into muffin tins evenly.

  • Let cool a few minutes and remove from pan. Sprinkle with powdered sugar after muffins are cooled.
