1/2 cup olive oil
1/4 cup freshly squeezed lemon juice
2 tablespoons curry powder
2 tablespoons honey
1 tablespoon sambal chile paste
1 tablespoon chopped garlic
1 tablespoon Dijon mustard
1 sprig fresh rosemary
12 to 16 (2-inch-thick) lamb loin (T-bone) chops
Coarse salt and freshly ground black pepper
1 medium carrot, very thinly sliced crosswise
1 medium red onion, thinly sliced
Rice-wine vinegar
2 bunches watercress
1 tablespoon extra-virgin olive oil
Coarse salt
6 to 8 medium Yukon Gold potatoes, quartered
4 cups heavy cream
2 cups white wine, such as Chablis or Sauvignon Blanc
Heated homemade or store-bought low-sodium chicken stock, if necessary
1 cup grated Fontina or Gruyere cheese
1/2 cup grated Parmesan cheese

Steps:

  • Make the lamb: In a medium bowl, whisk together olive oil, lemon juice, curry powder, honey, chile paste, garlic, mustard, and rosemary. Place lamb in a baking dish; pour olive oil mixture over lamb. Turn to coat. Cover and transfer to refrigerator; let marinate overnight.
  • Make the salad: Place carrot and onion in a medium bowl; add enough vinegar to cover; cover and transfer to refrigerator. Let marinate overnight.
  • Make the potatoes: Place potatoes in a medium saucepan. Add heavy cream and wine. Bring to a boil over medium-high heat and cook until potatoes are easily pierced with the tip of a sharp knife, about 20 minutes. Drain, reserving liquid, and set aside.
  • Preheat oven to 350 degrees.
  • Preheat a grill pan over medium-high heat. Remove lamb from marinade, wiping off excess; season with salt and pepper. Place lamb chops on grill, fat side down and cook, turning on all sides, about 2 minutes per side. Transfer lamb to a baking sheet and transfer to oven; bake until medium-rare, about 6 minutes.
  • Drain carrot and onion and transfer to a medium bowl. Add watercress and drizzle with olive oil. Season with salt and toss to combine.
  • Pass potatoes through a food mill into a medium saucepan and some of the reserved cooking liquid and place over medium-high heat. Add both cheese and cook, stirring, until cheese is melted and potatoes are warmed through. If potato mixture seems too thick, thin out with a little chicken stock.
  • To serve, divide potatoes evenly among 6 to 8 plates; top each plate salad and 2 lamb chops; serve.

4 cloves garlic, roughly chopped
4 tablespoon sambal oelek, garlic chili sauce
2 tablespoons olive oil
4 (1-inch thick) lamb T-bones
Kosher salt
Freshly ground black pepper

Steps:

  • In a small bowl combine garlic, chili sauce, and oil, and mix together. Rub the chops with the chili rub, and allow to marinate for 1 hour in the refrigerator.
  • Preheat a grill to high heat.
  • Remove the chops from the refrigerator 10 minutes before grilling. Season the chops well with salt and pepper, and grill to desired doneness on a preheated grill.

LAMB WITH WARM POTATO & OLIVE SALAD

This restaurant-standard dish is simple to make but worthy of any dinner party. Cooking the lamb this way stops it drying out and gives it a subtle flavour

100g Greek yogurt
2 tbsp olive oil
400g lamb loin
2 tsp rapeseed oil
350g baby new potatoes
2 tbsp olive oil
40g pitted Kalamata olives , halved
50g Greek yogurt
2 tsp cider vinegar
peppery salad leaves , such as watercress and rocket, to serve

Steps:

  • Cook the potatoes in a pan of boiling, lightly salted water for 10-12 mins, then drain and transfer to a baking sheet to cool.
  • Now prepare the lamb. Mix the yogurt with the olive oil and some sea salt to taste. Rub the lamb loin with the yogurt mixture - make sure to cover all sides. Chill in the fridge for 1 hr.
  • Heat oven to 200C/180C fan/gas 6. Heat an ovenproof sauté pan and add the rapeseed oil. Sear the lamb on all sides until dark golden brown, then cook in the oven for 7-10 mins or until medium-rare. Remove and leave to rest for 5 mins.
  • To finish the potato salad, cut the cooled potatoes into thick slices. Heat the olive oil in a frying pan over a medium heat, add the potato slices and fry for 10 mins or until golden brown. Transfer the potatoes to a bowl, mix with the olives, yogurt and vinegar, and add salt to taste. Serve warm with the sliced lamb loin and the leaves.

18 garlic clove
1 (750-ml) bottle dry red wine
2 cups freshly squeezed lemon juice
3 tablespoons dried Greek oregano
3 tablespoons dried rosemary
Coarse salt and freshly ground pepper
1 8-pound leg of lamb, bone in and trimmed of fat
1/4 cup plus 3 tablespoons extra-virgin olive oil
6 pounds Idaho potatoes, peeled and cut into sixths lengthwise
8 large globe artichokes, stems, leaves, and chokes removed

Steps:

  • Finely chop 8 garlic cloves. In a large shallow pan, combine wine, 1 cup lemon juice, chopped garlic, 2 tablespoons oregano, and 2 tablespoons rosemary; season with salt and pepper. Add lamb, turning to coat. Cover, and marinate in refrigerator overnight.
  • Preheat oven to 350 degrees. In a mortar and pestle, crush 6 garlic cloves and remaining oregano and rosemary. Remove lamb from marinade, and pierce it with a paring knife in 10 to 12 places. Rub garlic mixture over lamb, pushing the mixture into the incisions. Transfer to a large roasting pan, and pour 3 tablespoons olive oil over lamb, rubbing to coat.
  • Place potatoes around lamb in roasting pan. Crush remaining 4 garlic cloves, and toss with potatoes. Drizzle remaining 1/4 cup olive oil and remaining cup lemon juice over potatoes. Season with salt and pepper. Transfer to oven, and roast for 1 hour. Add artichokes to roasting pan, and roast 45 minutes more, basting occasionally with lemon juice. Remove from oven, and let rest for 10 minutes before carving.

ROAST LEG OF LAMB WITH GARLIC & WATERCRESS BUTTER

Season a leg of lamb with our watercress and garlic butter for a new take on spring lamb. Parmesan breadcrumbs also add a lovely crunch and depth of flavour

2kg bone-in leg of lamb
100g watercress
3 large garlic cloves , crushed
4 anchovy fillets in oil, drained and finely chopped
70g unsalted butter , softened
3 rosemary sprigs
100g sourdough bread , torn
½ tbsp olive oil
30g finely grated parmesan

Steps:

  • Remove the lamb from the fridge 1 hr before cooking. Heat the oven to 200C/180C fan/gas 4. Use the tip of a knife to make 20-25 small slits in the lamb, then set aside in a roasting tin. Blitz the watercress, garlic and anchovies in a food processor until smooth, then add the butter and pulse to combine.
  • Season the lamb, then spread over half of the butter mixture, pushing into the slits as well. Break the rosemary sprigs into pieces and tuck into the slits. Season, cover with foil and cook for 1 hr 20 mins for medium (a thermometer should read 55C), or 1 hr 40 mins, if you prefer the meat well done. Uncover the lamb halfway through cooking and spread over the remaining butter, then put back in the oven uncovered for the remaining time.
  • Meanwhile, blitz the sourdough in a food processor to make coarse crumbs. Toss with the oil and parmesan and spread out flat on a baking sheet. Put in the oven underneath the lamb for the last 20 mins of cooking, or until lightly golden and crunchy. Leave the lamb to rest, covered, for 30 mins, then slice and sprinkle over the crumbs.

No ordinary roast, this boneless leg of lamb is fit for both Easter and Passover feasts. The lamb meat is studded with slivers of garlic, marinated overnight in lemon and marjoram, and then roasted with russet potatoes, an uncomplicated technique that infuses the potatoes with the bright flavors of the marinade.

1 boneless leg of lamb (about 4 pounds; not tied), trimmed of excess fat
4 garlic cloves (2 thinly sliced, 2 crushed)
Juice of 2 lemons (about 1/2 cup)
3 tablespoons coarsely chopped fresh marjoram, plus sprigs for garnish
5 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
2 russet potatoes (about 2 1/2 pounds)

Steps:

  • Place lamb in a large, shallow, nonreactive dish. Using a paring knife, make 1/2-inch-deep slits all over lamb, spacing 2 inches apart; insert 1 garlic slice into each slit. Pour lemon juice over top. Add marjoram, crushed garlic, and 3 tablespoons oil to dish. Turn lamb to coat.
  • Place 3 long pieces of kitchen twine parallel to one another on a cutting board, about 3 inches apart. Fold lamb, and place on top of twine. Tie each piece around lamb to secure. Return to dish. Cover, and refrigerate at least 12 hours (up to 1 day), turning once.
  • Remove lamb from marinade; reserve marinade. Season lamb with salt and pepper; transfer to a roasting pan. Let stand at room temperature 45 minutes.
  • Preheat oven to 425 degrees. Peel potatoes; quarter lengthwise, and halve crosswise. Arrange potatoes around lamb; season with salt and drizzle with remaining 2 tablespoons oil. Toss to coat.
  • Pour marinade over lamb and potatoes. Roast 20 minutes. Reduce oven to 400 degrees, and roast until an instant-read thermometer registers 130 degrees for medium-rare, 40 to 45 minutes. Remove from oven. Tent with foil; let rest 10 minutes. Serve garnished with marjoram.
