GRILLED CHICKEN WITH HERBS
Boneless chicken breasts marinated in herbs, garlic, oil and vinegar and broiled or grilled to perfection. This recipe is from The WEBB Cooks, articles and recipes by Robyn Webb, courtesy of the American Diabetes Association. Preparation time: 10 minutes.

Steps:
- In a blender combine the parsley, rosemary, thyme, sage, garlic, oil, vinegar and salt and pepper to taste. Blend together. Place chicken in a nonporous glass dish or bowl and pour blended marinade over the chicken. Cover dish and refrigerate to marinate for at least 2 hours or up to 48 hours.
- Preheat grill to medium high heat OR set oven to broil.
- Remove chicken from dish (disposing of leftover marinade) and grill or broil for about 6 to 7 minutes per side, or until chicken is cooked through and no longer pink inside.

L'ALOSE MARINEE AUX HERBES (GRILLED MARINATED SHAD WITH HERBS)

Steps:
- Put fillet on platter and sprinkle with salt and pepper. Add oil and turn fish to coat it.
- Add lemon juice, bay leaf and thyme and spread around. Cover and let stand one hour.
- Preheat broiler to high.
- Remove shad from platter and arrange it skin side down on baking dish. Pour marinade into small saucepan and keep warm. Sprinkle fish with paprika, and brush top to coat evenly. Place under broiler about 4 inches from the source of heat, and broil about 5 minutes. Cut fish in half lengthwise.
- Transfer fish to two hot serving dishes. Spoon a little of marinade over each serving. Serve with lemon wedges.

HERB-MARINATED GRILLED SWORDFISH
This is one of my and my husband's favorite recipes. The swordfish is so flavorful and colorful it will brighten your whole day!

- Whisk olive oil, lemon juice, soy sauce, parsley, garlic, dill, and pepper together in a large glass or ceramic bowl. Add swordfish and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 4 hours; the longer you marinate the fish, the stronger the flavor will be.
- When ready to cook, preheat an outdoor grill for medium heat and lightly oil the grate.
- Remove swordfish from the marinade and shake off excess. Discard the remaining marinade.
- Cook swordfish on the preheated grill until fish is tender and flakes easily with a fork, about 4 minutes per side. Swordfish cooks very quickly and your grill will flare up with this marinade!

I prefer this marinade for chicken cooked on the grill, but I'm sure it would work for roasted chicken as well.

- Pour into ziploc baggie, add chicken pieces, marinate about 4 hours.
