Dark, rich, and creamy souffle-like recipe. Serve warm with vanilla ice cream. This is a modified brownie recipe, reducing the flour and egg amounts, creaming the sugar, and adding heavy cream to create a cross between a chocolate souffle and a brownie.

8 ounces chopped dark chocolate
2 eggs
2 ½ cups white sugar
1 cup heavy whipping cream
½ cup butter, melted
1 ½ cups all-purpose flour
1 teaspoon salt
1 cup dark chocolate chips
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 20 muffin cups with cooking spray and dust with flour, or line with paper liners.
  • Melt chopped dark chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes.
  • Beat eggs in a large bowl with an electric mixer until light and fluffy; beat in sugar gradually on high speed. Add cream and beat until batter has doubled in volume. Beat in butter until well combined. Beat in flour and salt on low speed until well combined. Beat in melted chocolate on medium speed until well combined. Stir in chocolate chips and pecans. Pour batter into muffin cups.
  • Bake in preheated oven until tops spring back when lightly pressed, 20 to 25 minutes.

2 cups granulated sugar
2 teaspoons vanilla extract
2 eggs
1 cup whole milk
1/2 cup vegetable oil
1 3/4 cups flour
1 cup cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup hot coffee
Chocolate Truffle Ganache, recipe follows
Whipped Chocolate Buttercream, recipe follows
2/3 cup boiling heavy cream
2 cups milk chocolate chips
1 tablespoon chocolate liqueur
4 sticks unsalted butter, at room temperature
4 cups powdered sugar
2 teaspoons vanilla extract
1 cup cocoa powder
1/2 cup heavy whipping cream

Steps:

  • Preheat the convection oven to 325 degrees F. Line a cupcake pan with 24 cupcake liners.
  • In a mixing bowl, add the sugar, vanilla and eggs, and mix until combined. With the mixer on low speed, add the milk and oil, and mix until well combined.
  • In a separate bowl, add the flour, cocoa powder, baking powder, baking soda and salt, and mix together. Add the dry ingredients to the egg mixture and mix on medium speed until the batter is smooth, about 2 minutes. Turn off the mixer and add the hot coffee. Mix on low for 2 minutes more.
  • Fill the lines three-quarters full with batter and bake for 14 minutes. Once completely cooled, use a paring knife to cut out the center of the cupcake.
  • To assemble: Using a small ice cream scoop, fill the cupcakes with 1 scoop of the cooled Chocolate Truffle Ganache. Using a piping bag with a 1M tip, generously frost the cupcakes with Whipped Chocolate Buttercream, making sure to cover the filled area.
  • Add the boiling cream to the chips and stir together until chips are completely melted. Add liqueur, mix well and set aside to cool.
  • In an electric mixer, beat the butter on high for 2 minutes. Once the butter is whipped, add the powdered sugar 1 cup a time until well blended. Add the vanilla and mix well. Add the cocoa powder and blend on medium speed until well incorporated. With the mixer on low speed, slowly add the heavy cream. Once the heavy cream is incorporated, turn the mixer on high and whip for 3 to 4 minutes.

1/2 cup unsalted butter, softened
1 tablespoon white miso (available at most Japanese groceries)
3 eggs
3/4 cup powdered sugar
1/4 cup japanese bread flour
1/4 cup all-purpose flour
3 1/2 tablespoons cocoa powder (preferably Valrhona)
1 1/4 teaspoons baking powder
1/4 cup silken tofu
1/4 cup soymilk, unsweetened (preferably Vitasoy)

Steps:

  • Preheat oven to 325°F
  • Melt chocolate, butter, and miso in double boiler over low heat, stirring occasionally. When only small lumps remain, remove from heat and stir until completely smooth. Whip eggs until they reach "ribbon stage," then pour chocolate mixture into mixing bowl with the eggs, varying the mixing speed to incorporate chocolate.
  • Combine all dry ingredients in a bowl, mixing together with hands or a whisk. Fold the dry ingredients into the chocolate, mixing until fully incorporated. Add tofu and soy milk slowly, mixing until fully incorporated.
  • Scoop batter almost to the top of 24 wax-lined mini-panettone cups arranged on a baking sheet.
  • Bake for 20 minutes, rotating tray halfway through, until center springs back when touched. Dust with confectioners' sugar if desired.

7 ounces finely chopped bittersweet or semisweet chocolate
4 tablespoons unsalted butter, plus for preparing the molds
1 1/2 teaspoons pure vanilla extract
3 large egg yolks
3 tablespoons warm water
1/2 cup sugar, plus 2 tablespoons
8 large egg whites, room temperature
1/2 teaspoon fresh lemon juice
Confectioners' sugar for garnish

Steps:

  • Brush 6 (6-ounce) ramekins with soft butter, then coat with sugar. Put the prepared ramekins in the freezer. (This can be done a day ahead.)
  • Set an oven rack in lower third of the oven and preheat to 400 degrees F.
  • Put the chocolate and butter in a medium heatproof bowl. Bring a saucepan filled with an inch or so of water to a very slow simmer; set the bowl over, but not touching, the water. Stir the chocolate occasionally until melted and smooth. Remove from heat and stir in vanilla extract. Set aside.
  • Combine the egg yolks and warm water in the bowl of a standing mixer or large bowl and beat until frothy. Gradually add 2 tablespoons sugar, and continue beating until ribbons form, about 5 minutes. Very lightly fold the yolks into the chocolate mixture. (Rinse the bowl well, if using for beating the egg whites.)
  • Remove prepared ramekins from freezer. Put the egg whites in the bowl of a standing mixer, or large non-reactive bowl, add the lemon juice. Beat on medium until frothy; then gradually add the remaining 1/2 cup of sugar and increase speed to high. Beat until the whites hold a stiff but not dry peak.
  • Working quickly, fold about a third of the egg whites into the chocolate to lighten; then fold in remaining whites until blended. Gently ladle or spoon the souffle mixture into the ramekins, and place on a baking sheet. (Level off the surface with a straight edge, scraping any excess mixture back into the bowl.)
  • Immediately bake until the souffle rises about 1 1/2 inches from the ramekins, and the tops are touched with brown, about 18 to 20 minutes. Remove from oven, dust with confectioners' sugar and serve immediately.

Using a few staple ingredients, you can whip up a chocolate dessert that's guaranteed to impress at a dinner party yet easy enough for a casual supper.

1/4 cup sugar, plus more for baking dish
8 ounces semisweet chocolate, finely chopped, or semisweet chocolate chips (1 cup)
1 teaspoon pure vanilla extract
3 large egg yolks, lightly beaten, plus 4 large egg whites
1/4 teaspoon cream of tartar

Steps:

  • Preheat oven to 350 degrees. Lightly butter a 1 1/2-quart tall-sided baking dish. Coat with sugar, tapping out excess. Set dish on a rimmed baking sheet.
  • In a large heatproof bowl set over a pot of simmering water, combine chocolate, vanilla, and 1/4 cup water. Stir until chocolate is melted and mixture is smooth, about 10 minutes. Remove from heat and let cool to room temperature, 20 minutes.
  • Stir egg yolks into cooled chocolate mixture until well combined. Set souffle base aside.
  • In a large bowl, using an electric mixer, beat egg whites and cream of tartar on medium-high until soft peaks form, about 2 minutes. Gradually add sugar and beat until stiff, glossy peaks form, about 5 minutes (do not overbeat).
  • In two additions, fold egg-white mixture into souffle base: With a rubber spatula, gently cut down through center and lift up some base from bottom of bowl. Turning bowl, steadily continue to cut down and lift up base until just combined.
  • Transfer mixture to dish, taking care not to get batter on top edge of dish; smooth top. Bake souffle until puffed and set, 30 to 35 minutes. (Do not open oven during first 25 minutes of baking.) Serve immediately.

  • Arrange an oven rack in the center position and heat the oven to 425 degrees. Brush the bottoms and sides of 4 (6-ounce) ramekins with room-temperature butter, using straight, upward strokes along the sides and brushing all the way to the rim.
  • Fill a medium saucepan with about 1 inch of water and bring to a simmer over medium heat, then reduce the heat to maintain a simmer. In a medium heatproof bowl, whisk together 3 tablespoons/37 grams of the sugar and 2 of the egg yolks until combined, then whisk more vigorously until the mixture is pale, light and thick, about 1 minute.
  • Add the chopped chocolate to the bowl and whisk briefly to incorporate it, then set aside the bowl for a few minutes to allow the chocolate to melt.
  • In a large metal or glass bowl — avoid plastic, as it can hold on to fat residue — combine the egg whites and salt, and use a hand mixer to beat on medium-low speed until the whites are broken up and frothy, about 20 seconds.
  • Scrape about one-third of the beaten egg whites into the bowl with the chocolate mixture, and whisk quickly and briefly to combine. Using a large flexible spatula and broad, decisive strokes, fold in the remaining beaten egg whites in 2 additions, scraping the bottom and sides of the bowl and rotating the bowl as you work, until the mixture is almost entirely streak-free.
  • Gently scrape the batter into the prepared ramekins, dividing it evenly and using all of it. (The ramekins should be filled to the very top.) Tap the ramekins delicately on the work surface to help settle the batter, then, working one ramekin at a time, use a small offset spatula or a butter knife to smooth the surface and, working over the batter bowl, scrape off any excess batter so that it’s level and flush with the very top of the ramekin.
  • Lightly sprinkle the surfaces of the batter with a thin, even layer of sugar, then, working with one ramekin at a time, run a clean thumb around the inside of the rims to wipe away a ring of batter and expose the inner lip of the ramekins all the way around.
  • Place the ramekins on a sheet pan, spacing them evenly. Transfer the sheet pan to the oven, immediately reduce the oven temperature to 375 degrees and bake until the soufflés are risen, firm and springy to the touch across the surfaces, and have a slight wobble, 15 to 20 minutes.
