This is a recipe for the traditional Greek way of making onion fritters -- they are super tasty & easy to make.

Steps:
- In a bowl, mix well the onions, mint & flour. Add salt and pepper to your taste.
- Slowly mix in enough water to make a thick batter.
- Heat the oil in a deep frying pan. Drop teaspoons of batter into the oil. Fry until golden brown. (The oil should be the temperature you need to fry chips etc).
- Drain the fritters well on kitchen towel and serve hot.

Steps:
- Remove the skin, seeds and liquid from the tomatoes and finely chop them.
- Then place them in a colander and drain any remaining liquid.
- Put them in a bowl and add the onion, mint, salt and pepper and mix well.
- Now add the flour - the mixture above should be approx 800g in total, for which 300g flour is enough, but if it should be more than 800g, you can add a bit more flour. Make sure to mix well.
- Heat the oil in a frying pan and then add spoonfuls of the mixture to fry. When one side is done, turn over.
- Remove and place on paper towel to drain.
- Serve and enjoy!

These are wonderful. This is also a recipe of Rachael Ray's "30 Minute Meals - Top Drawer Dinner" and they are a real comfort food.

Steps:
- Fill a medium saute pan with 2-3 inches of vegetable oil and heat to medium-high heat.
- Arrange a paper towel lined plate on the counter to place the fritters on when they come out of the hot oil.
- In a bowl, make the batter by combining the all-in-one pancake mix with the water (the batter will be on the thick side).
- Add the chopped green onions and season with cayenne, salt & pepper.
- When the oil is ready for frying, drop by spoonfuls of the batter into the oil and fry on all sides until golden brown and puffy.
- This should take no more than 3-4 minutes.
- Remove and drain on the paper towel lined plate.
- Reseason with salt while they are still hot.
