Pressure Cooker Dak Bokkeumtang (Korean Spicy Chicken Stew) image

Classic Korean chicken dish that's adapted for the pressure cooker! You'll love how quick this juicy, flavorful dish is.

Number Of Ingredients 17

2.5 pounds bone-in chicken parts (cut into small pieces (excess fat removed))
6 ounces potatoes (cut in big chunks (or mini potatoes))
1/2 medium onion (cut in big chunks)
2 small carrots (cut in big chunks (or baby carrots))
2 scallions or a few stalks of garlic chives
3 tablespoons gochugaru
3 tablespoons sugar
2 tablespoons gochujang
1/2 tablespoon doenjang
2 tablespoons rice wine
4 tablespoons oyster sauce or soy sauce
1 tablespoon minced garlic
1 teaspoon grated ginger
black pepper to taste
1/4 cup water or chicken broth
1 tablespoon sesame oil
1 teaspoon sesame seeds

Steps:

  • Combine the sauce ingredients except sesame oil and seeds, and mix well.
  • Rinse the chicken pieces, drain, and pat dry with paper towels.
  • Press the "Saute" button on the Instant Pot. When the pot is hot, add 1 tablespoon of canola or vegetable oil. Sear the pieces in two batches.
  • Place all the chicken pieces in the pot, and add the potatoes, onion, and carrots. Pour the sauce over, and mix well to evenly coat the chicken and vegetables.
  • Close the lid tightly, and seal the vent. Press the "poultry" function, and using the "+" or "-" button, adjust the time to 10 minutes. When finished, the Instant Pot will automatically turn to the "Keep Warm" mode. Turn the pressure valve to "venting" to quickly release the pressure. Open the lid.
  • Stir in the scallion (or garlic chives) and the sesame oil and sesame seeds. If you want, remove the meat and vegetables from the pressure cooker, turn the Instant Pot Saute function back on, and reduce the sauce to the desired level with the lid open.

  • Combine Asian pear, onion, jalapeno peppers, red pepper flakes, 2 tablespoons soy sauce, 1 tablespoon honey, 1 tablespoon sugar, sesame oil, garlic, and mustard in a blender; puree into a smooth sauce.
  • Heat olive oil in a large skillet over medium heat. Add chicken; cook until browned, about 5 minutes. Increase heat to medium-high; pour in sauce. Cook until flavors combine, 3 to 4 minutes. Garnish with green onion and sesame seeds.

This recipe comes to me via one of my students and his mother. Since I was shown in person, my notes were poor so I used a recipe from a Korean church bulletin along with their instructions. This is really easy and yummy. Enjoy!

1 lb lean ground beef
1 boneless skinless chicken breast, pounded lightly cut in narrow strips
4 -5 cups sodium-free chicken broth, warmed (homemade is best)
1 lb Baby Spinach
1/2 lb button mushroom, sliced
1/4 lb snow pea pods
fresh peeled gingerroot, minced (about the size of a child's thumb)
2 garlic cloves, minced
1 egg, beaten
4 tablespoons vegetable oil, divided
3 tablespoons sesame seeds, divided
4 tablespoons soy sauce, divided
12 whole walnuts, broken in large pieces
3 tablespoons cornstarch
2 hard-boiled eggs, sliced
2 green onions, chopped, white tops only
5 -6 cups steamed white rice

Steps:

  • Place the following in bowl or freeze bag: ginger root,1 clove garlic, 1 tbsp oil, 2 tbsp soy, and 1 tbsp sesame seeds. Add chicken and marinate two to four hrs in cool spot.
  • Combine beef, egg, 1 clove garlic, 2 tbsp each of soy, oil, and sesame seed.
  • Form into walnut sized balls with a piece of walnut meat in the middle. Roll balls in cornstarch and then in the egg.
  • Brown lightly in 1 tbsp oil, remove from pan and set aside.
  • Heat pan to medium high, add 1/2 tbsp oil and saute snow peas 2-3 minutes; add mushrooms and continue with saute until mushrooms release their liquid. Remove from pan and set aside.
  • Add chicken and saute. Discard marinate.
  • Blanch spinach in boiling water until just limp. Drain.
  • Arrange meat and vegetables in Dutch oven or chafing dish.
  • Add broth carefully and simmer to keep warm. Top with egg and green onion.
  • Place rice in individual bowls. Serve mixture over over rice. End this meal with eating broth with or without rice.

1/4 cup slivered smoked cooked ham
2 tablespoons sesame oil or 2 tablespoons vegetable oil
3/4 lb ground beef

3 tablespoons ground sesame seeds

1/4 cup cornstarch
2 eggs, beaten
3/4 lb boneless pork

1/2 lb filet of beef

6 dried Chinese mushrooms
1 lb onion
10 bamboo shoots
2 bunches watercress

Steps:

  • Egg Mixture: Beat together the eggs and water; mix in the ham. Heat a little of the oil in a 7 inch skillet and pour in enough of the egg mixture to thinly coat the bottom. Cook until delicately browned on both sides, then turn out, roll up, and cut into thin strips. Set them aside. Continue make the remaining egg mixture.
  • Meat Balls: Mix together the meat, soy sauce, garlic, green onions, sesame seeds, pepper, and 2 tablespoons of the oil. Shape into 1/2 inch balls; roll in the cornstarch, then dip in the eggs. Heat the remaining oil in a skillet and fry the meat balls until brown, shaking the pan frequently. Drain and reserve.
  • Pork Strips:Have the pork cut very thin, and pound it even thinner. Cut the pork into matchlike strips. Mix together the cornstarch, salt, and pepper; toss the meat in the mixture, then dip in the egg. Heat the oil in a skillet, and cook the pork in it until browned and cooked through, about 5 minutes. Drain and reserve.
  • Beef: Have the meat cut into paper thin slices, then into matchlike strips. Mix the remaining ingredients together, and marinate the meat in the mixture for 30 minutes.
  • Vegetables:Wash the mushrooms, cover with water, and let soak 10 minutes. Drain and cut into slivers. Peel and thinly slice the onions. Cut the bamboo shoots into strips. Wash and remove the stems of the watercress. Cut the carrots into strips. Blanch the walnuts. Bring the broth to a boil.
  • TO ASSEMBLE: Heat the selected utensil. Spread the marinated beef on the bottom of the dish, greasing it lightly. Make layers of the various ingredients (except the beef broth). When the ingredients begin to sizzle, quickly add the beef broth, and cook for 10 minutes from the time the broth is added. Supply each person with chopsticks or a long fork. Each person helps himself. Serves 6-8.

4 scoops vanilla ice cream (1 Pint)
4 bananas, peeled, cut lengthwise and into thirds
1/4 cup butter or 1/4 cup margarine
1/4 cup raw sugar
1/2 cup fresh orange juice
2 tablespoons fresh lime juice
2 tablespoons Kahlua
1/4 cup light rum

Steps:

  • Put scoops of Ice cream in four dishes and keep in the freezer until serving.
  • Just before serving melt butter (margarine) in a 10 inch skillet over medium heat Stir in the sugar.
  • Add Orange juice & Lime juice.
  • Cook stirring frequently until the sauce has thickened 6-8 minutes.
  • Add Kahlua.
  • Add bananas to the sauce, cook turning the bananas gently, heat just through and turn in the sauce so they are all coated evenly.
  • Heat the rum in a small saucepan over low heat for about 1 minute or until just warm (Do not allow to bubble).
  • Pour rum over the hot banana mixture, immediately ignite (use a long match).
  • Stir with long handle spoon until flame subside.
  • Place bananas around the ice cream and spoon sauce over all.
  • Serve immediately.

1 ounce dried shiitake mushrooms
1/2 -inch piece peeled fresh ginger, sliced
2 teaspoons soy sauce
1 medium head Napa cabbage, halved lengthwise and cut across into 1-inch strips
3 tablespoons kosher salt
1 teaspoon grated fresh ginger
3 cloves garlic, peeled and minced
4 scallions, minced
2 tablespoons seeded and minced hot red chilies
2 tablespoons fish sauce
2 tablespoons water
1 teaspoon soy sauce
1 scallion, minced
2 small jalapenos, seeded and minced
1 tablespoon cider vinegar
1 1/2 teaspoons toasted sesame oil
1/4 teaspoon kosher salt
1 1/2 teaspoons toasted sesame seeds
3 medium cucumbers, peeled, halved lengthwise, seeded and thinly sliced crosswise
4 cups cooked white rice
1/4 cup chopped chives
8 scallions, sliced on the diagonal into 1/4-inch-thick pieces
2 cups grated daikon or regular radish
1/2 pound beef eye round, sliced for carpaccio by your butcher

Steps:

  • To make the soup, place the broth, mushrooms and ginger in a large pot and simmer for 30 minutes. Strain. Stir in soy.
  • At least 1 day ahead, toss the cabbage with the salt in a large bowl and let stand at room temperature for 3 hours. Rinse and firmly press out the liquid. Combine the ginger, garlic, 4 minced scallions, red chilies, fish sauce, water and soy and toss with the cabbage until well coated. Place in a tightly sealed container and refrigerate up to 5 days.
  • For the cucumber salad, combine 1 scallion, jalapenos, vinegar, sesame oil, 1/4 teaspoon of salt and sesame seeds in a bowl, add the cucumbers and toss well. Set aside.
  • Toss the rice with the chives. Place the kimchi, the cucumber salad, the rice, the scallions and the radish in separate bowls. Arrange the carpaccio on a plate. Ladle the soup into bowls. Serve, passing the condiments separately.

2 tablespoons Worcestershire sauce
2 teaspoons beef bouillon granules

2 bay leaves
1 onion, sliced

Steps:

  • Add all ingredients, except the carrots and potatoes.
  • Bring to a boil in the skillet, cover and simmer on low (200 degrees) for 2 to 2 1/2 hours. Check after 1 hour and add more liquid if needed.
  • Add carrots and potatoes, continue simmering for 30 minutes more.
  • Remove meat and vegetables. Discard garlic cloves and bay leaves.
  • Thicken liquid with cornstarch and cold water to make gravy.
