CARIBBEAN PASTA WITH SHRIMP



Caribbean Pasta with Shrimp image

A sweet, tangy, spicy shrimp dish. You can prepare the sauces ahead of time and refrigerate.

4 cloves garlic, minced
¼ cup minced shallots
1 tablespoon minced fresh ginger root
3 tablespoons olive oil
1 green bell pepper, seeded and chopped
1 ½ cups tomato - peeled, seeded and chopped
2 teaspoons curry powder
½ teaspoon whole allspice berries
½ cup chicken stock
¼ cup brandy-based orange liqueur (such as Grand Marnier®)
2 tablespoons soy sauce
1 tablespoon brown sugar
2 teaspoons cornstarch
2 tablespoons chile paste
8 ounces rotini pasta
1 ½ pounds medium shrimp - peeled and deveined
½ cup fresh cilantro, chopped

Steps:

  • In a small bowl, combine garlic, shallots, ginger and oil. In another small bowl, combine green pepper, tomato, curry powder, allspice, chicken stock, Grand Marnier, soy sauce, brown sugar, cornstarch, and chile paste. Cover and refrigerate both until ready to use.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat a large saute pan over high. When hot, add garlic-oil mixture. Saute until garlic begins to sizzle but has not browned. Stir the tomato mixture, then pour into the saute pan. Bring to a rapid boil and cook until it begins to thicken, about 3 minutes.
  • Stir in the shrimp, and toss until they become pink, about 2 minutes. Immediately add the pasta. Stir and toss until well combined and pasta is heated through. Taste and adjust seasonings, especially salt.
  • Transfer to a heated platter and sprinkle on the cilantro. Serve at once.

Shrimp in linguini pasta with a yummy white cream sauce that has a wonderfully perfect hint of lemon. It adds just the perfect dimension to the flavors of the dish! Serves our family of 5 and has lots of leftovers.

1 (16 ounce) package linguine pasta
2 tablespoons olive oil
2 cloves garlic, chopped
1 cup chicken broth
2 large lemon, zested and juiced
2 pounds uncooked medium shrimp, peeled and deveined
1 cup grated Parmesan cheese
½ cup cream
4 tablespoons chopped fresh cilantro
salt to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes. Drain and set aside.
  • While the pasta is cooking, heat oil in a large skillet over medium-high heat. Add garlic and saute until soft, about 1 minutes. Add chicken broth and lemon juice; bring to a boil.
  • Add shrimp and cook only until it turns pink; do not fully cook at this point. Remove shrimp from the sauce and set aside; cover to keep warm.
  • Reduce the skillet temperature to medium. Add Parmesan cheese, cream, and lemon zest to the sauce; bring to a simmer. Cook to thicken the sauce, about 2 minutes. Season with salt.
  • Add shrimp to the sauce just before it has fully thickened and cook until bright pink on the outside and the meat is opaque, 1 to 2 minutes; don't overcook.
  • Combine shrimp sauce, pasta, and cilantro; toss and serve.

1 tablespoon light brown sugar
1 teaspoon ground allspice
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 tablespoon vegetable oil
1 tablespoon molasses
2 tablespoons fresh lime juice
1 3/4 lbs shelled uncooked jumbo shrimp
1 lime, cut into wedges,for garnish

Steps:

  • Heat broiler.
  • Coat large broiler-pan rack with nonstick vegetable-oil cooking spray.
  • Mix brown sugar, allspice, black pepper, onion powder, thyme, salt and cayenne in bowl.
  • Whisk in oil, molasses and lime juice until smooth.
  • Add shrimp; toss to coat.
  • Cover and refrigerate for 10 minutes, stirring after 5 minutes.
  • Arrange shrimp in single layer on broiler-pan rack.
  • Broil about 4 inches from heat for 2 minutes.
  • Turn shrimp over.
  • Broil 1-2 minutes or until shrimp are cooked through.
  • Serve shrimp immediately with white rice if desired.
  • Garnish with lime wedges.
  • Pour drippings from broiler pan over shrimp, if desired.

1/2 cup red bell pepper, diced
1/2 cup green pepper, diced
1/2 cup onion, diced
2 tablespoons jalapenos, sliced
1 cup whipping cream
1/2 cup white wine
1/2 cup tomatoes
1 lb chorizo sausage, cooked
2 tablespoons cooking oil
1/4 cup goat cheese
1/2 cup spinach
1 lb gluten free pasta, cooked
1 lb shrimp, cooked
1 lb chicken breast, cooked and diced

Steps:

  • 1. In large pan, bring water to a boil and add 4 ounces of Orechiette Pasta.
  • 2. Cut vegetables (small diced red, green, and jalapenos peppers, and onions) (medium diced tomatoes and Chorizo sausage).
  • 3. In hot sauté pan, add oil, onions, peppers (red, green and jalapenos) and cook until tender.
  • 4. Add Chorizo sausage and any other add-ons you would like to have.
  • 5. Deglaze with white wine.
  • 6. Add heavy cream and add pasta, tomatoes, and spinach.
  • 7. Sprinkle goat cheese on each serving.

  • Generously season the shrimp with salt and pepper. Toss to coat. Add flour one tablespoon at a time, tossing to coat, until the shrimp is evenly coated with flour and no longer sticky.
  • Heat one tablespoon olive oil in a 12-inch skillet over medium-high heat. When the oil is very hot and just starts to smoke, add the shrimp in an even layer. (You may have to do two batches.) Cook for 1-2 minutes per side, until crust is golden and shrimp are pink. Remove the shrimp to a plate and set aside.
  • In the same skillet, add the broth, cream, salsa, and linguine. You can break the linguine into smaller pieces if your skillet isn’t large enough, but I left mine whole. Bring to a boil, then cover, reduce heat, and simmer for 15 minutes.
  • Meanwhile, diced the avocado and chop the fresh cilantro. When the pasta is tender, stir the sauce to combine, then plate the pasta. Top with shrimp, avocado, and cilantro. Serve and enjoy! :)
