A wonderful combination of flavors that really compliment each other. Great for cook-outs. Never a morsel left. Clipped from a magazine years ago. Cook time is chill time, I recommend at least an hour just to have things good and cold to start.

1 (20 ounce) can pineapple chunks
1 cup mayonnaise
1/2 teaspoon dry mustard
2 cups ham, strips "or: chunks
1 cup celery, slices
2 cups strawberries, halves
2 large bananas, sliced

Steps:

  • Drain pineapple, reserving 2 Tbls.
  • syrup.
  • Combine mayo, mustard and reserved syrup; mix well.
  • Set aside and chill.
  • In large bowl, combine pineapple, ham, celery and strawberries; mix lightly.
  • Chill before serving.
  • Add bananas; toss lightly just before serving.
  • Serve in lettuce-lined bowl; top with dressing.
  • Recipe easily doubled.
  • However, if doubling, no need to double dressing, there is plenty so use sparingly even with a single batch.

1 (20 ounce) can pineapple chunks, drained thoroughly
1 (8 ounce) can mandarin oranges, drained thoroughly
1 (10.5 ounce) package miniature marshmallows
1 (24 ounce) container sour cream

Steps:

  • Mix fruit cocktail, pineapple, mandarin oranges, and marshmallows together in a large bowl; add sour cream and stir to coat fruit completely.
  • Refrigerate 4 hours to overnight.

6 to 8 cups torn salad greens
1 cup shredded cheddar cheese
1/2 cup mayonnaise

Steps:

  • Drain pineapple, reserving 1 tablespoon juice. In a large bowl, combine the greens, pineapple and cheese. In a small bowl, whisk the mayonnaise, sugar and reserved pineapple juice. Pour over salad; toss to coat.

This has been around for a while, a recreation of Kona Cafe at Disney's Polynesian Resort. The addition of smoked almonds thrill me. If Asian pears are not available, you can substitute fresh peaches, strawberries, or other berries. Chill your salad bowls. It makes for a much better salad.

3 unpeeled Asian pears, cored and thinly sliced
9 cups spring greens (1 pound bag) or 9 cups gourmet mixed salad greens (1 pound bag)
1 cup crumbled blue cheese
1/4 cup thinly sliced red onion
3/4 cup smoked almonds, chopped in large pieces
6 tablespoons fresh squeezed orange juice
2 tablespoons rice vinegar
1 teaspoon granulated sugar
1/2 cup canola oil or 1/2 cup mild-flavored vegetable oil
1/4 teaspoon coarse salt
1/8 teaspoon fresh ground black pepper

Steps:

  • In a large bowl, gently toss pears, salad mix, blue cheese, onion, and almonds. In a separate bowl, mix orange juice, rice vinegar and sugar. Whisk in canola oil, salt and pepper. Pour over salad and gently toss; serve immediately.

1 box Betty Crocker™ Suddenly Salad™ classic pasta salad mix
1/2 cup mayonnaise
1/2 cup pineapple tidbits (from 8-oz can, drained and juice reserved)
1 cup diced ham
1/2 cup crumbled cooked bacon (5 slices)
1 cup packed baby spinach
1/4 cup sliced green onions (about 4)
2 tablespoons seeded, chopped jalapeño chile (1/2 large)
1/2 cup cubed block mozzarella cheese (2 oz)

Steps:

  • Pour pasta (from Suddenly Salad box) into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally. Drain pasta. Rinse with cold water; drain well.
  • In large bowl, stir together Seasoning (from Suddenly Salad box), mayonnaise and 2 tablespoons of the reserved pineapple juice to make dressing. (Discard or save any remaining juice for another use.)
  • Add pasta, ham, bacon, spinach, pineapple, green onions, jalapeño chile and cheese to dressing mixture in bowl; toss to gently coat. Serve immediately, or cover and refrigerate until serving.
