LAMB KOFTAS WITH YOGHURT DRESSING

- Yogurt Sauce: Combine the yogurt sauce ingredients and leave in fridge for at least 20 mninutes for the flavor to develop (overnight even better!).
- Koftas: Grate the onion into the bowl using a standard box grater. Add remaining Kofta ingredients and mix well with your hands.
- With damp hands, divide the meat into 8 equal pieces and push and shape the meat onto 8 skewers. Make them smooth (looks nicer, pictured!) or a bit nubbly (more surface area to brown!).

TURKISH KOFTA RECIPE
Kofta or "Kofte" is a popular meatball type of dish in Turkey and the middle east. We have many kofta recipes and kebabs in Turkish cuisine. I will make a kofta recipe, the way we make it at home, easily using a food processor in this episode. The great thing is you can freeze and cook whenever you want to have a ready meal

- Traditionally we make the kofte mixture by hand by grating the onions, chopping fresh herbs if used, and mixing the other ingredients in a bowl well. But you can easily do these steps in a food processor. If your food processor isn't so big you can only chop the onion and parsley and continue mixing in a bowl
- In a food processor add onion cut in four, parsley. If you are using stale bread soak it in water to soften then squeeze out excess water and add to the onion parsley mixture. Process until they have fine pieces, avoid over-processing, and don't make it like a puré.
- Add the ground meat, spices, and baking soda if using. Drop 3-4 drops of lemon juice over the baking soda and mix everything by pulsing until is it evenly incorporated.
- Dip your hand into the water from time to time and get smaller than mandarine size mixture and first shape into a ball and press it to make a disk. It comes together when cooks and becomes thicker so consider that while shaping.
- Heat the cast iron griddle or non-stick frying pan or grill. Brush it with vegetable oil. Add kofte pieces leaving space between them and cook on medium heat until both sides and inside are fully cooked.
- Meanwhile cut the tomatoes in big wedges and cook on the griddle or grill with green peppers.
- Serve the koftes with pilav and grilled veggies. You can also make coban salad, or cacik (yogurt-cucumber sauce) to serve.
KOFTE INYGOL

- The starter which was left in the fridge for a day.
- Knead all the starter ingredients with your hand. Put in a Ziploc bag and keep in the fridge for a day. The following day, mix all the Kofte ingredients and the starter in a food processor. Put in a container with a lid. Keep in the fridge for 2-4 hours.
- Divide into 21-22 pieces and give each a long shape*, as shown in the picture. Heat up the Teflon pan over medium heat. Fry them all equally without using oil. Serve Inegol Kofte with Ayran, Kidney Bean Salad, grilled tomato and Cubanelle peppers, sumac, crushed pepper and oregano.

Steps:
- Mix cooked rice, ground beef, onion, salt, pepper, and parsley.
- Knead for 5 minutes.
- Roll the mixture into small walnut size balls.
- Boil 2 to 2 1/2 cups of salted water with margarine.
- Drop meatballs into it.
- Cover and cook on medium heat for 20 to 30 minutes or until the meatballs are done.
- In a small bowl beat the 2 egg yolks, or one whole egg, with lemon juice. Slowly add 1/2 cup of the boiling meat stock.
- Add to saucepan.
- Cook for 2 to 3 more minutes.
- Turn off heat.
- Mix well and serve.

INDIAN KOFTAS WITH MINT YOGURT & FLATBREADS

- In a large bowl, mix the lamb mince with the curry paste, mango chutney, garlic and ginger. Season a little and roll into 20 oval balls. Heat a large, non-stick frying pan - you shouldn't need any oil, as lamb mince is quite fatty. Cook the koftas in batches for 2-3 mins - be careful as they are quite fragile.
- Heat oven to 200C/180C fan/ gas 6. Transfer the koftas to a baking tray and put in the oven for 10 mins, adding the flatbreads for the final 5 mins. Mix the yogurt with the mint sauce. Serve the koftas wrapped in a flatbread with some minty yogurt, tomato and lettuce.
