My boyfriend made it for me after a really hard day. Ever since then it has become a comfort food. This recipe has been passed down through his family.

2 teaspoons butter
1 egg
salt and pepper
2 slices whole wheat bread
cheddar cheese
mayonnaise

Steps:

  • Place a small pan on a burner.
  • Add the butter and heat on medium high heat. (Make sure not to heat the pan on high, or else the egg will turn rubbery.).
  • After the butter has melted, crack the egg in the pan.
  • Let sit for about a minute.
  • Pop the yolk.
  • Sprinkle with salt and pepper.
  • When egg is set, flip over and cook other side.
  • Cook egg to your liking.
  • Meanwhile, spread mayonaise on bread and place cheese.
  • Place the cooked egg on top of the cheese, so it will melt.
  • Top with other slice of bread.
  • Enjoy!

This makes the best fried bologna sandwich, I think it's the buttered grilled buns that really add to the flavor! My DS loves this with a couple slices of dill pickles and chips. I like to sprinkle some garlic powder on top of the slices after spreading with butter, and before browning, but that is only optional.

2 slices bologna (1/2-inch thick)
2 large kaiser rolls
8 teaspoons softened butter (no substitutes, or to taste)
brown mustard
2 -4 slices swiss cheese
sweet onion, slices

Steps:

  • Slice each of the buns in half, then spread each side with about 2 teaspoons butter (can use more).
  • Spray the pan with non-stick cooking spray or melt 1-2 tablespoons butter in the skillet until melted.
  • Place the buns on the skillet buttered side down; leave untouched in the skillet for 1-2 minutes or until browned; remove to a plate and spread brown mustard on one or both sides of the buns (over the butter).
  • Fry the bologna slices in the same skillet with a slit cut in the middle to prevent it from curling while frying turning once after it had developed that slighty burnt crispy coating on one side.
  • Turn the slices over and place a slice (or two) of Swiss cheese on top, then continue to cook until the underneath part is browned and the cheese on top has melted; remove from skillet or griddle, then place the slices of cooked bologna onto each bun the top with onion slices then cover with the top part of bun.
  • Delicious!

6 eggs

Steps:

  • Heat the drippings in a wide flat-bottomed skillet until they spit and smoke. Break in the eggs. They will immediately bubble around the edges, making then crisp. Break their yolks with a fork and swirl them around, so that they are scattered fairly evenly through the whites. This will cook very quickly and the eggs should be tough. Either push them to one side of the pan or remove them, and fry bread in the drippings for each sandwich, two slices an egg. Fry on one side only. Sandwich egg between bread slices. Wrap them in waxed paper.

4 large eggs
4 slices cheddar cheese (I use Kraft singles for this they melt the best!)
8 slices white bread, toasted
salt and pepper
2 tablespoons mayonnaise
2 tablespoons ketchup

Steps:

  • In a skillet melt the butter over medium heat.
  • Crack the eggs and add to the pan and cook to desired doneness.
  • Just before the eggs are cooked place one slice of cheese over each egg.
  • After the cheese has melted place each egg on a toasted piece of bread then sprinkle with salt and black pepper.
  • Spread the mayo and ketchup on the remaining slices of bread and cover the eggs with the bread slices.
  • Serve warm.

2 tablespoons mayonnaise
1 teaspoon Mexican hot sauce
1 teaspoon smoked paprika
1 large ripe tomato
2 leaves romaine lettuce
4 slices whole grain, sourdough or artisan bread
1/2 tablespoon butter (or olive oil for dairy free)
2 eggs
Kosher salt
Fresh ground pepper

Steps:

  • In a small bowl, mix together mayonnaise, hot sauce, and smoked paprika. (Or substitute Special Sauce or Russian Dressing for Big Mac-style flavors.)
  • Slice the tomato into large slices and sprinkle with a little kosher salt. Tear the romaine leaves in half. Toast the bread.
  • In a large skillet, melt the butter over medium low heat. Add the eggs and sprinkle with a pinch of kosher salt and a few grinds black pepper. Cook for 2 to 3 minutes, until the whites are firm but the yolk is still runny (do not flip).

This is so good you won't be able to keep your spoon out of the bowl for a taste! ---it's great in a sandwich stuffed in a pita or scooped on a large lettuce leaf, I have served this many times for a luncheon get together and everyone loves it! --- the amounts listed are usually what I use for 8 eggs but the exact measurements do not really matter just use whatever you wish for the amount of eggs you make, I purchase the pimento-stuffed olives for this and I say the more you use the better! after slicing the olives make certain to hand-squeeze out as much of the moisture as possible --- plan ahead slightly the mixture needs to chill for a few hours before using.

These have been a favorite for years, when I serve these at my get togethers or make them for socials and large events they are always the first to go and everyone wants the recipe, I suggest to use large, extra large or even jumbo eggs for this, I like to make the yolk filling a day ahead and refrigerate this will blend the flavors --- for a nice presentation place each egg half in a colored paper muffin liner --- all ingredient amounts may be adjusted to taste --- see my recipe#259573

12 hard-boiled eggs (I always boil a few more eggs, eat the whites then add in the yolks to increase the filling mixture!)
1/2 cup mayonnaise (I like to use half salad dressing and mayonnaise)
2 tablespoons milk (or 2 tablespoons half-and-half cream)
1 teaspoon dried parsley flakes
1/2 teaspoon dried chives (or use 1 large very finely chopped green onion in place of dried chives)
1/2 teaspoon ground mustard powder

  • Cover tightly with plastic wrap.

1 French baguette (or use a long submarine bun)
1/3 cup soft butter
1 teaspoon garlic powder
1/4 teaspoon salt (or to taste)
black pepper (to taste)
1 (14 ounce) jar favorite pasta or 1 (14 ounce) jar spaghetti sauce
6 slices mozzarella cheese (or to taste)
1 lb ground beef
1/4 cup milk
1 egg, slightly beaten
1 tablespoon fresh minced garlic or 1 teaspoon garlic powder
1/4 cup grated parmesan cheese
1 egg, slightly beaten
2 teaspoons season salt
1/2-3/4 teaspoon black pepper
2 tablespoons finely chopped fresh parsley
1/3 cup breadcrumbs (more if needed)

Steps:

  • For the meatballs; in a large bowl mix all ingredients together using clean hands (adding in a small amount more breadcrumbs only if needed to hold the mixture together).
  • Shape into 15 meatballs then place on a baking sheet.
  • Bake at 350°F for about 25 minutes or until the meatballs are completely cooked through.
  • Meanwhile using a serrated knife slice the baguette in half lenghwise and remove some of the bread from the inside to make a "pocket" to hold the meatballs inches.
  • In a small bowl mix the soft butter with garlic powder and 1/4 teaspoon salt, spread over the inside slices of both breads, then sprinkle with black pepper to taste.
  • Place the bread inside the oven the last 4-5 minutes of the meatball baking time and bake until the bread is lightly toasted.
  • In a medium saucepan warm the pasta sauce over medium heat.
  • When the meatballs are cooked add them into the sauce and toss to coat.
  • Spoon the sauce and meatballs over one slice of toasted baguette bread, then top with mozzarella cheese slices.
  • Top with the other half of baguette slice.
  • Cut into servings.

I make this often especially using my summer's crop of eggplant, I would strongly suggest to use only olive oil for frying it really adds to the flavor, use dry breadcrumbs only for this, to save time bread all the eggplant slices ahead of frying and place on a baking sheet so you will have them ready to transfer to the skillet --- you may "sweat" the eggplant slices by sprinkling both sides lightly with salt and drain in a colander for 1 hour, rinse lightly under cold water then pat dry with paper towels.

Purchase the sliced sandwich bread for this, use white or whole wheat. If you prefer lots on the mayo mixture on your sandwich then increase the mayo to 3/4 cup and the Dijon to 1-1/2 tablespoons. You will LOVE these sandwiches!!!!

1/2 cup mayonnaise
1 tablespoon Dijon mustard
12 slices bread, well toasted (you will have 3 slices bread for each sandwich)
lettuce leaf
8 slices mild cheddar cheese, divided (or use American cheese slices)
1/2 lb cooked thinly-sliced deli ham, divided
8 slices tomatoes
salt and black pepper
1/2 lb deli thinly-sliced turkey, divided
8 slices cooked bacon (can use more)
16 long toothpicks (to secure the sandwich together)

Steps:

  • In a small bowl combine the mayo with mustard until blended.
  • Spread about 1-2 teaspoons on one side of each slice of the 12 toasted bread slices.
  • To assemble ONE sandwich; layer 1 slice of toast mayo-side up on a cutting board, then place a lettuce leaf on top of the bread, then one slice of cheese, then ham, then 2 slices tomatoes, sprinkle salt and lots black pepper over the tomatoes, then 1 slice toast (mayo-side down).
  • Spread mayo mixture onto the top of the bread.
  • For the top portion of the sandwich; continue to assemble the sandwich with a cheese slice on top of the bread, then turkey slices, then 2 slices bacon, then 1 lettuce leaf and then 1 slice of toast (mayo-side down) you should have 3 slices of bread for each sandwich (this is for 1 sandwich, continue making the remaining three sandwiches in the same manner).
  • Cut EACH sandwich into 4 triangles, then secure with long toothpicks.

I like breakfast food. But I HATE cooking before breakfast. This egg sandwich is easy enough for a half-asleep cook on his/her first cup of coffee to make and tasty enough to be worth cooking before breakfast. Note -- Because this is so simple the choice of bread will make a big difference. I suggest a good rye, an Italian, an artisan or homemade white, an artisan or homemade wheat, or other preferred, flavorful variety rather then ordinary, sandwich white. Kids love this. Diabetics love this if you use low-carb bread.

2 eggs
1/4-1/2 teaspoon butter
fresh ground pepper
herb-seasoned salt
1 1/2 slices American cheese
2 slices bread
1/2-1 teaspoon butter or 1/2-1 teaspoon mayonnaise
2 slices bacon, cooked (optional)
1 -2 sausage links (optional) or 1 -2 sausage pattie, cooked (optional)
pickle, slices (optional)

Steps:

  • Melt 1/2 tsp butter in small, heavy skillet over medium-low heat.
  • Break 2 eggs into skillet one atop the other so that they form one mass of egg. Use a pancake turner to break yolks so that they run over the surface of the whites.
  • Season with a dash black pepper and a dash herb-seasoned salt to taste.
  • While eggs cook, spread butter or mayonnaise lightly on one slice of bread.
  • Cook about 2/3 done then flip with pancake turner. Scrunch into a bread-shaped mass. Top with cheese.
  • When eggs are cooked and cheese is melting make your sandwich. Add sausage or bacon and pickles if desired.
  • If cooking for more than one, make one sandwich at a time unless you can use multiple, small skillets. It looses something if the eggs are cooked in a big mass then separated -- the first eggs get overdone and some people get too much white while others get too much yolk.
  • Note: I like them done so that the whites are fully cooked and the yolk is almost but not quite hard. Cook to your preferred doneness.
  • Note: Don't overdo the butter. Use just enough to keep the eggs from sticking to the pan and just enough to carry the flavor on the bread.
  • Note: My herb-seasoned salt is one of those fancy sea salt grinders. Use any such product that suits your taste or mix salt with some of your favorite herbs (finely crushed) in an empty salt shaker.
  • Note: Cooked sausage links can be split lengthwise or cooked sausage patties can be crumbled to spread them more evenly on the sandwich.
