KITTENCAL'S TZATZIKI (GREEK CUCUMBER AND YOGURT SALAD)
This is worth making it is so delicious! Greek yogurt is richer and thicker then regular yogurt and is the best used for this recipe, if you cannot find Greek yogurt just use 4 cups regular full-fat plain yogurt and drain it in the fridge through a triple thickness of cheesecloth for 8 hours or overnight, if you are using Greek yogurt you will not have to strain it, once you try Greek yogurt you will never go back to regular yogurt again! Plan ahead this needs to chill for a minimum of 2 hours, you won't be able to keep your spoon out of the bowl LOL! Make certain to drain the cucumber very well for this. Serve this anyway or with anything you want to, it is great on pita. Prep time is only if you are using the Greek yogurt if you are straining the yogurt prep time will be more.

Steps:
- Put the finely chopped cucumbers in a sieve and press out as much excess liquid as possible.
- In a large bowl mix the minced garlic with the salt into a paste.
- Add in the Greek yogurt (or strained yogurt) with garlic/salt paste, add to the drained cucumbers, mint, olive oil, more salt and pepper to taste.
- Cover and chill for a minimum of 2 hours before serving (you won't be able to keep you spoon out of the bowl lol!).

KITTENCAL'S CREAMY CUCUMBER SALAD
Two medium regular cucumbers may be used in place of one large English cucumber, I prefer the taste and texture of English and has less water in it ---plan ahead there is a 75 minute draining time for the cucumber slices to remove excess moisture, this is a crucial step to prevent a watery salad, the onion is only optional, I like to add it in, this is a great recipe for garden fresh cucumbers :)

Steps:
- Place the cucumber slices into a glass bowl, sprinkle with vinegar and kosher salt; toss using hands.
- Allow to sit for about 45 minutes.
- Pour out any liquid from the bowl and drain in a colander; allow to sit for another 30 minutes to allow any excess drainage.
- In a bowl mix together the mayonnaise with sour cream, sugar, fresh dill and black pepper.
- Place the cucumbers in a bowl; pour the dressing over and toss to coat.
- Mix in red onion slices (if using).
- Cover and refrigerate until serving.

- Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
- Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
- Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
- To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.
KITTENCAL'S CREAMY GREEK-STYLE PASTA SALAD
If you are a lover of Greek salad and Greek food then you are certain to enjoy this --- once you make this a few times you will most likely need to play around with the dressing ingredient to suit taste, I have listed 1/3 cup mayonnaise to be added to the dressing you may need to adjust the mayonnaise amount to desired creaminess after the salad is mixed --- plan ahead this salad needs to chill for at least 4 hours before serving

Steps:
- Cool the pasta in boiling water until al dente; drain then rinse well under cold water.
- Place the pasta in a large bowl.
- Add in cucumber, tomatoes, bell pepper, onion, olives and cubed feta cheese; toss to combine.
- For the dressing; in a processor place the garlic clove and process until minced.
- Add in all the remaining ingredients except the mayonnaise;process until well blended (about 20-30 seconds) then add in the mayonnaise and process until combined.
- Pour over the salad ingredients in the bowl; toss to combine (if you prefer a creamier salad then add in more mayonnaise to taste).

This dressing must chill for 6 or more hours before serving don't even think about serving it right away as the flavors intensify with chilling time, even better if made a day ahead, I have left the Parmesan as optional you may add in or omit, you may adjust all amounts to taste.
