GRAPEFRUIT SPRITZERS

Ingredients

1/3 cup sugar
1 750-ml bottle dry white wine
1 cup ruby red grapefruit juice
1/4 cup Campari
3 cups seltzer
Raspberries and sliced grapefruit, for garnish

Steps:

Make the simple syrup: Bring the sugar and 1/3 cup water to a simmer in a small saucepan, stirring to dissolve the sugar. Remove from the heat and let cool completely, about 20 minutes.
Combine the white wine, grapefruit juice, Campari and simple syrup in a pitcher and refrigerate until ready to serve. Pour into ice-filled glasses and top with the seltzer. Garnish with raspberries and grapefruit.

This drink is part kir, part white wine spritzer and totally refreshing.

Ice cubes
Creme de cassis
Dry white wine, such as Sauvignon Blanc or Chenin Blanc
Lemon-lime soda

Steps:

For each drink, fill a tall tapered glass 3/4 full with ice. Pour in about 1 ounce creme de cassis and about 2 ounces of wine, then fill the glass with lemon-lime soda. Stir to blend, then drink.

Pour Cassis into a chilled wine glass and top with wine. Garnish with a lemon twist, if desired.
