HAWAIIAN PORK N' GREENS



Hawaiian Pork n' Greens image

Number Of Ingredients 14

1 tablespoon kosher salt, plus more for seasoning
1 teaspoon sugar
1 teaspoon ground dried oregano
1 teaspoon black pepper, plus more for seasoning
1 teaspoon white pepper
1/2 teaspoon cayenne pepper
2 (1-pound) pork tenderloins
3 tablespoons olive oil, divided
1 red onion, roughly chopped
1/2 pineapple (or 3 cups cubed pineapple), cut into 1/2 inch cubes
2 garlic cloves, minced
1/2 teaspoon red chili flakes
10 ounces spinach, washed and cut crosswise into 3 inch pieces
1/4 cup chicken broth

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, mix together 1 tablespoon of salt, sugar, oregano, 1 teaspoon of black pepper, white pepper, and cayenne. Rub the mixture over tenderloins to coat.
  • In a straight-sided oven-proof skillet large enough to fit the entire length of the loins, heat 2 tablespoons of the oil over medium heat. When hot, add the pork loins and sear on all sides until just golden, about 2 to 3 minutes each side. (Depending on the size of the skillet, you may need to sear in batches.) Transfer to the oven and bake until the internal temperature reaches 145 degrees F on an instant-read thermometer, about 20 to 25 minutes. Remove the skillet from the oven and transfer the roasts to a cutting board. Loosely cover with aluminum foil and let rest 10 minutes.
  • Heat the skillet over medium heat, add the remaining oil, the onions, pineapple and garlic. Saute until the pineapple caramelizes slightly. Add the red pepper flakes and saute a few minutes more. Stir in the spinach and season with salt and pepper, to taste. Add broth, cover and cook the spinach until it wilts. Slice the pork and arrange on a serving platter. Serve with the greens and pineapples.

2 tablespoons butter
2 tablespoons vegetable oil
1 cup chopped onion
1 ham hock
2 cloves garlic, chopped
2 bunches collard greens, stems discarded, leaves washed twice, cut into ribbons
4 cups chicken stock
2 cups water
1 tablespoon apple cider vinegar
Kosher salt and freshly ground black pepper

Steps:

  • In a stock pot on medium heat, melt the butter and then add the oil, onions, and ham hock. Stir and cook until the onions are translucent and tender. Add the garlic and cook a bit more, and then add the greens and saute until they become bright green. Add the stock, water, and vinegar, and then raise the heat to a boil, lower to a simmer, and cook for at least 1 1/2 hours. When ready, the ham hock meat will be easy to remove from the bone. Do so and make sure each serving gets a chunk of ham hock. Season with salt and pepper, to taste, remembering the ham hock and broth will add salt content. Add a little extra vinegar at the end, if desired.

I got this recipe from the TV show The Chew, it is from their healthy contributor Daphne Oz. I'd never tried raw kale, but was impressed with the simplicity of this one. Wow, is it wonderful...the secret is massaging the kale to break down it's fiber. Then, oh boy, an easy and nutritious salad is ready to go.

1 large bunch black kale, torn into bite size pieces
1/4 cup olive oil
1 -2 lemon
1/3 cup currants or 1/3 cup other dried fruit
1/3 cup pine nuts, toasted
1/4 cup pecorino cheese, grated
1 teaspoon red chili pepper flakes
salt and pepper

Steps:

  • Tear kale pieces off the main fibrous center stem. Add the kale to a large mixing bowl, season with salt, pepper and drizzle with olive oil. Massage with your hands making sure to coat the kale with oil and begin to break down the cell structure.
  • Grate the zest and squeeze the juice of the lemons over the massaged kale. Add the currants, toasted pine nuts, pecorino and toss to combine. Serve with a pinch of red chili flakes, if desired.
