Got this in an email from King Arthur Flour and plan to make them for my Holiday tray. Described as tender, deep-chocolate cookies with a rich, sweet vanilla glaze. Bite-sized beauties perfect for a holiday cookie tray or hostess gift. Top with a chocolate pearl, bright red cherry, or chocolate sprinkles and each cookie is a jewel to the eyes and a gem for the tastebuds." Sounds good doesn't it!

Number Of Ingredients 9

12 tablespoons butter, softened
1/4 cup dutch process cocoa
1 cup confectioners' sugar
1/2 teaspoon salt
1 1/2 teaspoons vanilla extract
1 1/2 cups unbleached all-purpose flour
2 cups confectioners' sugar, sifted
1/4 cup heavy cream
1 tablespoon vanilla extract

Steps:

  • Place all cookie dough ingredients in bowl of your mixer.
  • Beat on medium speed until a soft, smooth dough is formed.
  • Remove from bowl, shape into a 3/4" thick disc.
  • Wrap well in plastic wrap and chill for 30 minutes, or as long as overnight.
  • Preheat oven to 350, line two baking sheets with parchment paper.
  • Shape dough into small balls, about the size of a large gumball (a teaspoon cookie scoop will help).
  • Bake for 7-10 minutes.
  • Watch cookies carefully to avoid scorching bottoms.
  • Remove cookies from oven and allow to cool slightly on pans while you prepare glaze.
  • For glaze, blend the sifted confectioners sugar with heavy cream and vanilla.
  • Glaze will be thick, almost icing consistency.
  • Using a teaspoon, portion glaze over barely warm cookies.
  • You can pipe the glaze from a piping bag or zip-top bag with a corner cut off as well.
  • Top with chocolate pearls, slivers of maraschino cherry, or chocolate sprinkles. Store any leftovers at room temperature for up to a week.

This is a nice option to candy while following a low carb diet. There are 2 carbs a piece. These don't keep well, so eat them up!

1 ounce unsweetened chocolate
1/3 cup peanut butter
2 tablespoons butter
1/3 cup ricotta cheese
12 packets Equal sugar substitute
1 teaspoon vanilla extract

Steps:

  • Melt the first 3 ingredients in microwave.
  • Stir well to combine.
  • Add the remaining ingredients, stir and drop by tablespoon on waxed paper.
  • You should have 12 drops.
  • Chill until firm- at least 1 hour.
  • Keep in refrigerator.

1/2 cup butter, softed
2/3 cup sugar
2 eggs
1 teaspoon vanilla
1 1/4 cups flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup chopped nuts
powdered sugar

Steps:

  • Cream butter and sugar till fluffy.
  • Add eggs and vanilla; beat well.
  • Stir together flour, cocoa, baking powder,salt, and cinnamon; stir into creamed mixture.
  • Blend in nuts.
  • Drop by teaspoons 2 inched apart on pre-heated waffle baker; Bake until done, about one minute.
  • Remove to cool.
  • Sift powdered sugar over cookies.
  • Oven method: Drop dough by teaspoons 2 inches apart on lightly greased cookie sheet.
  • Bake 350 degrees till done.
  • 10 to 12 minutes.

These were originally based off of a chocolate chip cookie recipe. The recipe was changed so much out of necessity, it became my own. These cookies are deeply dark and decadent. Parents and big brothers/sisters, this is a good way to bribe your kids/little siblings... >:) The flavor is rather unique, with brown sugar, vanilla, and cocoa powder. The recipe was altered because I had no white sugar or chocolate chips. Or nuts, come to think of it. Needless to say, the result was amaaaaazing. Enjoy!

Number Of Ingredients 10

1 1/2 cups butter (softened)
2 1/2 cups dark brown sugar
2 teaspoons vanilla extract
1 teaspoon licorice extract (or your favorite. peppermint works amazingly)
2 eggs
4 cups unbleached flour
1/2 cup cocoa powder (heaping)
2 teaspoons baking soda
1/2 teaspoon salt
1/4 cup granulated sugar (for dipping)

Steps:

  • Preheat oven to 375°F Cream butter and brown sugar until very light and fluffy. Then add vanilla and eggs, then mix well.
  • Add cocoa powder and carefully mix well.
  • Add flour all at once, then the baking soda and salt. Mix well. (Dough will be stiff!).
  • Drop by the tablespoonful onto a lightly greased cookie sheet. pat down slightly to form little patties.
  • Dip one side of the patties into granulated sugar and swoosh around a little. The little patties will be very covered in sugar. Arrange them with a little space between them-they will expand a bit.
  • Bake at 375 F for 12-14 minutes. (Every oven is different!) Let cool for a few minutes before transferring to a cooling rack or plate.
  • Resist the urge to eat a lot at a time! Enjoy!
