This homemade salsa recipe is absolutely irresistible! It's loaded with delicious, vibrant flavor and it comes together in less than 5 minutes.

Number Of Ingredients 8

4 small jalapeño peppers* ((leave the seeds in for an extra kick))
1/2 onion, chopped
3 garlic cloves
1/4-1/2 cup fresh cilantro
6 tomatoes of varying sizes, chopped
1 1/2 to 2 teaspoons ground cumin
1 teaspoon sea salt + more to taste
2 tablespoons lemon or lime juice ((about 1/2 lemon, juiced))

Steps:

  • Add all ingredients to the bowl of a food processor. I like to add in the jalapeños, onion and garlic first and then the cilantro and tomatoes, so the tomatoes do not get too liquid-y. Pulse about 10 or so times and until all ingredients are combined and diced, but be sure to stop before the salsa becomes too watery. However, you can pulse longer if you do like your salsa with more liquid.
  • Taste the salsa and add more ingredients as desired. I would advise stirring in the extra ingredients, not pulsing in the food processor. The salsa will become too watery, quickly.
  • Transfer to a bowl and enjoy!
  • I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to intensify. Salsa will keep for about 1 week in an airtight container or jar in the fridge; however, it's never lasted that long in this household.

This recipe is a favorite of all my friends. Whenever they come over, they want to leave with a jar. Therefore, when I make it I can 14 GALLONS each time. I figure, if I'm gonna spend all day making it, I might as well only do it once a year! I like to serve this salsa with tortillas or use it in cooking. It's great in scrambled eggs and chili.

1 (28 ounce) can whole tomatoes, chopped and liquid reserved
1 (6 ounce) can tomato paste
½ onion, chopped
1 green bell pepper, chopped
6 cloves garlic, minced
¾ cup finely chopped jalapeno peppers
2 tablespoons white sugar
1 teaspoon chili powder
1 cup red wine vinegar
1 tablespoon salt
1 tablespoon ground cumin

Steps:

  • Combine the tomatoes, tomato paste, onion, green pepper, garlic, jalapenos, sugar, chili powder, vinegar, salt, and cumin in a large saucepan. Bring mixture to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the salsa is thickened and is noticeably darker in color, at least two hours. Cool and store it in the refrigerator for up to two weeks or in the freezer for three months.

TAY'S HOT AND SPICY SALSA

2 fresh jalapenos
1 bunch fresh cilantro leaves
1 clove garlic
1 banana pepper
1 lime, juice
1 teaspoon House Seasoning, recipe follows
1 can diced tomatoes
Tortilla chips, for serving
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • Put everything but the tomatoes in a food processor. Chop until diced. Add the tomatoes. Serve with chips.
  • Mix ingredients together and store in an airtight container for up to 6 months.

EDDIE'S MILD TO HOT SALSA

I know a lot of people like salsa, some like it HOT and some like not so hot. This recipe is for mild but you can add a cayenne pepper to each jar. I like to make 10 hot and 10 mild, but you must remember to mark the hot jars.

24 lb tomatoes
1- 12 oz can tomato paste
1/2 bunch cilantro, fresh
16 jalapeno peppers
2 medium heads garlic minced
6 large green bell peppers
6 large onions chopped
9 Tbsp salt
1 c distilled white vinegar
1 c brown sugar
1/2 c water
NOW THE HOT PART:
10 medium cayenne pepper ( if wanted)

Steps:

  • 1. Core and peel the tomatoes. Remove seeds and pulp. Put seeds and pulp through a food mill, chop the outside of the tomatoes.
  • 2. In a large pot over low heat, boil the milled liquid and tomato paste for 1 hour or until the liquid is reduced by 1/3.
  • 3. In a blender or food processor, puree cilantro, jalapenos, garlic,and1/2 cup of the tomato liquid from the large pot. Slowly stir this mixture into the pot.
  • 4. Bring the contents of the pot to a boil while mixing in the green peppers, onions, chopped tomatoes, salt , vinegar, and brown sugar. in a small bowl dissolve the cornstarch.
  • 5. Add the cornstarch mixture to the pot, stirring continually boil the mixture until all vegetables are soft, about 30 minutes allow the mixture to cool
  • 6. Put mixture into 20 stearel pint jar's leaving 1/4 head space. Add the 10 cayenne peppers to 10 jars put on lids and rings.
  • 7. Process in a boiling water bath for 15 minutes.

KIM'S FLAMING HOT SALSA

This salsa has a very refreshing taste, but it is extremely hot. My hubby loves it. You can decrease or increase the heat by adding different peppers. This is a great salsa recipe. I will never by store bought again.

5 lbs tomatoes (seeded and chopped)
5 jalapeno peppers, chopped (not seeded)
5 serrano peppers, chopped (not seeded)
1 red onion, chopped
1 bunch cilantro (stems removed)
1 garlic clove
1 teaspoon garlic salt
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon oregano
2 tablespoons vinegar
1 lemon, juice of
1 lime, juice of (if the lime doesn't give much juice use 2 limes)

Steps:

  • Process tomatoes, garlic clove, cilantro, and peppers in a food processor to desired consistency.
  • Put in a large bowl add spices, lemon, lime, and vinegar.
  • Let salsa sit for 30 minutes for the flavors to marry.
  • Put salsa in canning jars and place in refrigerator. It makes about 6 pints. Store in refrigerator for approximately a month.
  • ** Caution: Wear gloves while chopping peppers**.

1 (14 1/2 ounce) can whole tomatoes (1/2 of the can pureed and 1/2 of the can chopped)
1 (10 ounce) can Rotel Tomatoes
1 (4 ounce) can green chilies, diced
3/4 cup jalapeno pepper, diced (I only use 1/4 cup)
1 small white onion, diced
1 carrot, peeled and diced
salt, to taste
pepper, to taste
garlic
2 tablespoons lime juice
1 (8 ounce) can tomato sauce, to cool if needed

Steps:

  • Mix and refrigerate.
  • After 30 minutes it is ready for chips.

This is a fresh, authentic salsa. When my friend Carol brought me a container of this salsa, I promptly threw away every other salsa recipe I had. Everytime I bring it somewhere it disappears completely. Make it the night before and it keeps for weeks in the frig. The heat is present, but not overwhelming and fades quickly.

two-28 oz cans whole peeled tomatoes
3/4 bunch cilantro, fresh
2 clove garlic
1/2 large sweet onion
5 serrano chile peppers
2-3 tsp salt - depending on taste
2 tsp vinegar
2 c water

Steps:

  • 1. Bring 2C water to boil in microwave. Place serrano peppers in hot water for 30 seconds. Discard water. Cut away the stems of the peppers and discard.
  • 2. Drain whole peeled tomatoes. Pull Cilantro leaves off their stems and use only the leaves.
  • 3. Place all ingredients in the food processor. Mix together until liquified.
  • 4. Transfer to storage container and refrigerate overnight. The next day it's ready to eat.
  • 5. Heat can be controlled by removing seeds and membranes from peppers. Serranos can vary in heat, so I sometimes add 1 jalepeno pepper for good measure.

MY HOMEMADE (HOT) SALSA



My Homemade (Hot) Salsa image

This salsa is similar to one at the local restaurant we used to frequent when we lived in Georgia. I went home and experimented to try to come up with one that tasted like the restaurant's and this is what I came up with. If you like your salsa even hotter you can adjust the hot seasonings to your taste. I always get lots of compliments when I serve this. Don't let all the ingredients scare you off...it's really easy to make. No accurate time on prep and actually the longer you let it simmer the better it is. I don't know how many exact servings you get but it does make alot. (The flavor will be more intense if you use the fresh herbs but its just as tasty with the dried)

2 (28 ounce) cans peeled ready-cut tomatoes
1 large onion, diced in fairly large pieces
1 large green pepper, diced in faily large pieces
2 tablespoons canned jalapeno slices, minced
2 -4 tablespoons jalapeno juice, from jar
1 tablespoon sugar
1/2-1 teaspoon salt (or to taste)
1/2-1 teaspoon black pepper (or to taste)
2 -3 tablespoons vegetable oil
2 -3 tablespoons lime juice
1 -2 teaspoon chili powder
1 teaspoon chopped fresh parsley or 1 teaspoon dried parsley flakes
1/2 teaspoon ground cumin
1/2 teaspoon ground oregano
1 -2 teaspoon fresh minced cilantro or 1 -2 teaspoon dried cilantro
1/4 teaspoon ground cayenne pepper
1/2-1 teaspoon garlic powder or 2 cloves fresh garlic, minced

Steps:

  • In a large pot mix together all of the ingredients and bring to a boil.
  • Reduce heat to low and simmer, uncovered, 2-3 hrs, stirring occasionally.
  • Remove from heat and let cool in pan.
  • Pour into non-metal container with a lid and chill completely before serving.
  • Keeps about 2 weeks in the refridgerator.
