KIELBASA WITH BAKED APPLES
This is one of my recipes from New Years Day 2006. It was easy to make and the flavor was amazing. I should have made more.

Steps:
- Slice your Kielbasa into bite size pieces. I prefer Beef Kielbasa, but other flavors will also work. Be sure it is cold when you slice it so the juices do not run.
- Lightly coat a 9x14 glass baking dish with unflavored cooking spray.
- Pour one can of your apple pie filling into your baking dish. Spread it around evenly without crushing the apples.
- Arrange your Kielbasa pieces in your dish, then pour your remaining can of apple pie filling over them.
- Cover your baking dish with tinfoil. Insert into your oven and bake at 350 degrees for about 20 minutes.
- After 20 minutes, turn your Kielbasa slices over, arrange your Maraschino cherries among the apples in your baking dish, re-cover with your tinfoil and continue baking another 20 minutes.
- Remove from your oven and serve your Kielbasa in your baking dish. Your guests will bombard you with compliments as they gobble up every single piece of juicy Kilebasa. They'll eat all the apples and cherries too.

ROASTED KIELBASA WITH APPLES AND CABBAGE
Steps:
- Preheat oven to 400 degrees. Toss together cabbage, onions, oil, 3 tablespoons vinegar, and caraway seeds on a rimmed baking sheet; generously season with salt and pepper. Spread into a single layer and roast 25 minutes.
- Gently turn vegetables. Add apples, cut side down, and kielbasa to baking sheet, keeping everything in a single layer. Roast until cabbage is crisp-tender and apples are tender and slightly collapsed, 20 to 25 minutes. Sprinkle with remaining 2 tablespoons vinegar. Slice kielbasa and divide equally among 4 plates with vegetables and apples. Serve with mustard.
KIELBASA WITH APPLE CARAWAY SAUERKRAUT
Steps:
- Preheat oven to 425 degrees. In a large oven-proof skillet over medium heat, saute kielbasa until browned, about 4 minutes on each side. Remove kielbasa to a plate and keep warm. In the same pan, saute the onion and the apple for 1 minute. Drain and rinse the sauerkraut and add it to the apples and onion in the skillet. Add the chicken stock and caraway seeds to the pan and stir. Return the kielbasa to the skillet and cover. Put covered skillet in hot oven and cook for 15 to 20 minutes.
BAKED SAUSAGES WITH APPLES SHEET PAN DINNER

- Preheat the oven to 400 F degrees.
- In a large bowl combine the apple cubes, fingerling potatoes, baby carrots, onion, sage and rosemary. Drizzle the honey and olive oil over, season generously with salt and pepper then toss really well so that everything.
- Arrange the veggies and apples in a large shallow roasting pan. Arrange the sausages in and around the vegetables.
- Bake for 30 minutes or until golden and cooked through.

ONE-POT KIELBASA WITH CABBAGE, APPLES, AND CARAWAY
An easy to make tasty weekday meal. Serve with Grainy Mustard for spreading on sausages and cabbage, and cider vinegar for drizzling atop. Note: Use crisp, tart apples, such as Granny Smith. Braeburn, or Jonathan. You can use any cooked or uncooked sausage--including chicken, turkey, or Polish sausage-for the Kielbasa. For the green cabbage, substitute red cabbage, kale, and even halved brussel sprouts. If you don't like caraway substitute coriander seeds.

Steps:
- In a 4 or 5 quart Dutch oven cook the sausage in hot oil for 5 to 7 minutes or until lightly browned.
- Add the cabbage, apple cider, red onion, caraway seeds, salt and pepper.
- Bring to boiling; reduce heat, cover and simmer for 15 minutes.
- Add the apples and cook, uncovered, 5 to 10 minutes more or until the cabbage is tender and the cooking juices are slightly reduced.
- Serve with grainy mustard for spreading on susages and cabbage, and cider vinegar for drizzling atop.

- Remove skin from the kielbasa and slice into bite-sized pieces.
- Heat oil in a large frying pan over medium heat. Add kielbasa, bell pepper, onion, and garlic. Fry until veggies have softened, 5 to 7 minutes. Season with salt and pepper.

KIELBASA KABOBS WITH APPLE
Steps:
- In a large saucepan, combine sugar and cornstarch. Stir in the cranberry juice, vinegar and soy sauce. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , On metal or soaked wooden skewers, alternately thread the sausage, apples and peppers. Grill, uncovered, over indirect heat for 8 minutes or until heated through, turning and brushing with glaze occasionally.

KIELBASA WITH GOLDEN ONIONS AND APPLE
Steps:
- Lightly score each piece of sausage in several places with a sharp paring knife. Heat 1 tablespoon oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then brown half of sausage, turning occasionally, until golden, about 4 minutes. Transfer to a bowl and cover to keep warm. Pour off fat from skillet and wipe skillet clean. Add remaining tablespoon oil to skillet and brown remaining sausage in same manner, transferring to bowl as cooked.
- Wipe skillet clean again, then cook onions with salt and pepper in butter over moderate heat, stirring occasionally, until golden brown, 15 to 20 minutes. KIELBASA AND APPLE PASTA BAKE
This is especially good to make when apples are in season and at the peak of their flavor, and it features a favorite food pairing: sweet-tart apples with cheddar cheese.

- Preheat oven to 350 degrees F. Coat a 2-quart baking dish or casserole with nonstick cooking spray; set aside.
- Cook pasta according to package directions in a large saucepan. Drain and return to saucepan; set aside.
- Meanwhile, in a medium saucepan whisk together milk and flour. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more. Remove from heat. Stir 1/2 cup of cheese, salt and hot pepper sauce into the milk mixture until smooth.
- In the large saucepan toss together the cooked pasta, apples, kielbasa and cheese sauce. Transfer to prepared baking dish; cover with foil.
- Bake in preheated oven for 20 minutes. Uncover and carefully stir pasta mixture. Sprinkle with remaining 1/2 cup cheese and the green onion. Bake 10-15 minuted more or until cheese is melted and sauce is bubbly. Remove from oven and let stand for 10 minutes before serving.
