KIELBASA AND KALE MAC AND CHEESE



Kielbasa and Kale Mac and Cheese image

Kielbasa and cheese is an incredibly comforting combination. And the torn kale in this recipe holds onto the cheese sauce so well it becomes almost tastier than the macaroni itself. We used sharp Cheddar for this recipe, but 1 pound of your favorite melting cheese will work as well. Just don't use a cheese aged longer than 12 months or your sauce might get grainy or separate.

1 pound elbow macaroni
2 tablespoons extra-virgin olive oil
1 pound Tuscan or curly kale or Swiss chard, stems removed, leaves torn
1/2 medium onion, chopped
1 garlic clove, finely grated
12 ounces kielbasa, cut into 1/2-inch-thick slices
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 pound sharp Cheddar cheese (not aged more than 12 months), shredded
Kosher salt
Pinch cayenne pepper

Steps:

  • Bring a large pot of water to a boil. Salt the water and add the macaroni. Cook, stirring occasionally, until al dente, about 9 minutes. Drain.
  • Meanwhile, heat 1 tablespoon oil in a large heavy pot over medium-high heat until very hot, about 1 minute. Add the kale and 1/4 cup water, cover and let cook until wilted and just tender, about 2 minutes. Uncover, toss the kale, and continue cooking until all of the water has evaporated, 4 to 5 minutes. Transfer the kale to a medium bowl and set aside.
  • Heat the remaining 1 tablespoon oil in same pot over medium-high heat. Add the onion and garlic and cook until the onion is tender and begins to brown, 4 to 5 minutes. Add the kielbasa and cook, tossing occasionally, until lightly browned, 2 to 3 minutes. Add the flour, stir to coat and cook for 1 minute. Stir in the milk and kale and bring to a boil; add the cheese a few handfuls at a time and stir to combine. Reduce the heat to low and cook, stirring frequently, until the cheese has completely melted, about 2 minutes.
  • Stir the macaroni into the cheese mixture until evenly coated; remove from the heat. The sauce will look very loose but will thicken off the heat.

1 bunch kale, stems removed and discarded
1 tablespoon olive oil
8 ounces kielbasa sausage, sliced thin
1 bunch green onions, sliced
3 cups chicken broth
1 (15.5 ounce) can white beans, drained and rinsed
½ teaspoon salt
1 pinch ground black pepper to taste
1 pinch grated Parmesan cheese, or to taste

Steps:

  • Roll kale leaves into tight tubes and cut crosswise into 1/4-inch strips.
  • Heat oil in a large, heavy saucepan over medium heat. Cook and stir kielbasa in hot oil until browned, about 5 minutes. Stir green onion with sausage; cook until onions soften, about 3 minutes. Add kale; cook and stir until kale wilts, about 3 minutes.
  • Pour chicken broth over kielbasa mixture; add beans and stir. Bring the mixture to a boil, reduce heat to low, and cook at a simmer until kale is completely tender, about 15 minutes. Season mixture with salt and pepper and top with Parmesan cheese.

I bought kale for the first time because my husband has to eat greens with one of his medications. I never had it before and knew I had to get creative. This was the result.

1 bunch kale
3 clove garlic
4 Tbsp olive oil, divided
1 small onion, chopped
2/3 c water
2 tsp paprika (smoked, if you have it)
salt & pepper to taste
1 can(s) white beans, rinsed
1 yam, diced
1 kielbasa ring

Steps:

  • 1. Wash kale, remove center stems and chop. Drain well. In a large, deep skillet, heat 2 tablespoons olive oil and saute onion until transparent, about 5 minutes. Add garlic and cook 1 minute more. Add kale, water and paprika. Lower heat, cover and cook until kale is wilted and tender, 15-20 minutes. Add beans and cook until beans are heated through.
  • 2. While the kale mixture is cooking, dice yam. Heat remaining olive oil and saute yams until carmelized and tender. I added a little water to the pan to speed up the cooking.
  • 3. in a skillet or under the broiler, cook kielbasa until nicely browned.
  • 4. Pile kale/bean mixture in center of platter. Top with carmelized yams. Slice kielbasa into 2" sections and arrange around kale.
  • 5. Serve with warm, crusty bread.

KIELBASA KALE STEW

A thick stew with a rich potato base, fresh kale, and slices of savory kielbasa. This is a meal all by itself.

6 large potatoes, peeled and cubed
¼ cup butter
10 cups water
1 teaspoon salt
1 teaspoon ground black pepper
2 ½ pounds kale - rinsed, dried and chopped
⅔ pound kielbasa sausage, sliced into 1/2 inch pieces

Steps:

  • Place the potatoes into a large stockpot, over medium high heat. Add butter and water, and bring to a boil. Cook potatoes until tender, about 20 minutes. Reserve the cooking liquid and mash potatoes in the pan until smooth. Return the potato water to the pot and stir in salt and pepper. Simmer for 20 minutes.
  • Stir in the fresh kale and sausage and simmer for another 30 minutes. Serve hot.

3 pounds russet (baking) potatoes (about 6)
1/2 stick (1/4 cup) unsalted butter
3/4 cup chicken broth
2 tablespoons cider vinegar
2 1/2 pounds kale, coarse stems discarded and the leaves washed well
1/2 pound MÜnster, grated coarse (about 2 cups)
1 pound smoked kielbasa, cut crosswise into 1/4-inch-thick pieces
2 large onions, halved lengthwise and sliced thing crosswise

Steps:

  • In a kettle combine the potatoes, peeled and quartered, with enough water to cover them by 2 inches, bring the water to a boil, and boil the potatoes for 15 minutes, or until they are tender. Transfer the potatoes with a slotted spoon to a colander, reserving the cooking liquid, and force them through a ricer into a bowl. Add the butter, 1/2 cup of the broth, the vinegar, and salt and pepper to taste and combine the mixture well. Bring the reserved cooking liquid to a boil, add the kale, and boil it for 20 minutes, or until it is crisp-tender. Drain the kale in the colander, refresh it under cold water, and press out the excess water. Stir the kale and 1 cup of the MÜnster into the potato mixture and spread the mixture in a buttered 13- by 9-inch baking dish.
  • In a large skillet brown the kielbasa over moderate heat and transfer it to a bowl with the slotted spoon. In the fat remaining in the skillet cook the onions over moderate heat, stirring, until they are golden and stir them into the kielbasa. Scatter the kielbasa mixture on top of the potato mixture, sprinkle it with the remaining MÜnster, and pour the remaining 1/4 cup broth on top. The casserole may be prepared up to this point 1 day in advance and kept covered and chilled. Bake the casserole in the middle of a preheated 400°F. oven for 20 minutes, or until it is heated through.

Based on a favorite soup. As a casserole, it is easier to transport or bring to lunch at the office. Casseroles are a comfort food for me, but most serve 8 or more. This recipe is for two, but can easily be multiplied for a crowd.

1 lb potato, peeled and quartered
1 tablespoon unsalted butter
1/2 cup chicken broth, divided
2 teaspoons cider vinegar
salt and pepper
1/2 lb kale, stems removed
1/2 cup swiss cheese, grated
1/3 lb smoked kielbasa, sliced
1 small onion, thinly sliced
1/4 cup swiss cheese, grated

Steps:

  • Arrange a rack in the middle of the oven and preheat to 450 degrees F.
  • In a dutch oven, combine the potatoes with enough water to cover them by 2 inches, bring the water to a boil, and boil the potatoes for 15 minutes, or until they are tender.
  • Transfer the potatoes with a slotted spoon to a colander, reserving the cooking liquid, and force them through a ricer into a bowl. (or mash until smooth with no chunks).
  • Add the butter, 1/4 cup of broth, the vinegar, and salt and pepper, to taste, and combine the mixture well.
  • Bring the reserved cooking liquid to a boil. Coursely chop the kale leaves, add to water, and boil it for 10 minutes, or until it is crisp-tender.
  • Drain the kale in the colander, refresh it under cold water, and press out the excess water.
  • Stir the kale and 1/2 cup of the Swiss into the potato mixture and spread the mixture in a buttered casserole dish.

3 1/2 cups chicken broth
1 (10 ounce) package collard greens (I like to use spinach) or 1 (10 ounce) package frozen chopped spinach (I like to use spinach)
8 ounces kielbasa or 8 ounces other fully cooked smoked sausage
1 (19 ounce) can cannellini (white kidney beans) or 1 (19 ounce) can other canned white beans
2/3 cup elbow macaroni

Steps:

  • Put broth and frozen kale (or spinach) into a heavy 4 quart pot over high heat.
  • Slice sausage into 1/4 inch thick rounds. Add to pot. When mixture boils, reduce heat, cover and simmer.
  • Meanwhile, rinse and drain beans; add to pot with macaroni.
  • Simmer 8 minutes or until macaroni is tender.
