Burgers that taste like hamburgers, but without meat! You can replace the Cheddar cheese with Monterey Jack or any other cheese you like. If you prefer, you may use a 1.4 ounce packet of brown broth in place of the soy sauce.

2 teaspoons olive oil
1 small onion, grated
2 cloves crushed garlic
2 carrots, shredded
1 small summer squash, shredded
1 small zucchini, shredded
1 ½ cups rolled oats
¼ cup shredded Cheddar cheese
1 egg, beaten
1 tablespoon soy sauce
1 ½ cups all-purpose flour

Steps:

  • Heat the olive oil in a skillet over low heat, and cook the onion and garlic for about 5 minutes, until tender. Mix in the carrots, squash, and zucchini. Continue to cook and stir for 2 minutes. Remove pan from heat, and mix in oats, cheese, and egg. Stir in soy sauce, transfer the mixture to a bowl, and refrigerate 1 hour.
  • Preheat the grill for high heat.
  • Place the flour on a large plate. Form the vegetable mixture into eight 3 inch round patties. Drop each patty into the flour, lightly coating both sides.
  • Oil the grill grate, and grill patties 5 minutes on each side, or until heated through and nicely browned.

This recipe is great for helping your children get some of the 5 a day veg required-to add to the fun,you can be brave and let them help making them,this does seem to encourage them to eat some,and is a great holiday rainy day fun time to introduce children to cooking, These "burgers freeze well (I use a well washed empty ice cream tub) and can be re-cooked from frozen.

1 kg potato, peeled
200 g of grated cheddar cheese
800 g frozen mixed vegetables (or fresh if you prefer)
1 Spanish onion
250 g golden breadcrumbs
salt and pepper

Steps:

  • Boil and mash the potatoes,allow to cool whilst you just bring the vegetables to the boil,(the crunch makes them tasty)then drain the veg and sat aside to cool a little.
  • Mix the cheese and onion into the potato,and add the veg.
  • At this point,you can ask the children to help by dividing the mixture into 2 or three bowls,and mix all the ingredients together thoroughly with your HANDS (kids LOVE THIS)!
  • Now-for the mixture into thin burger shapes,empty the breadcrumbs into a bowl and coat each side of each burger (it should make 10 good size burgers- 2 per person) with the breadcrumbs.
  • Lay in a non stick baking tray or on a sheet of baking paper in the grill pan.
  • Drizzle over a little oil to help brown and crisp if desired (it does help-but only a small amount is required).
  • Bake in a preheated oven on gas mark 6 for 20 minutes a side.
  • Enjoy!

Simply best veggie burgers for kids you'll ever eat!

Number Of Ingredients 9

1 Can Black beans (Drained and rinsed )
1 Egg
2 Slices of Wholemeal bread (Breadcrumbed )
1 tsp Onion granules
1 tbsp Sweet paprika
3-4 tbsp Water
2 tbsp Olive oil
3-4 Burger buns (Sliced and toasted )
4 Slices Cheddar cheese

Steps:

  • In a food processor, add the breadcrumbs, egg, onion granules, paprika, 2 tablespoons of water and half the black beans
  • Process the mixture until well combined. The mixture will be quite sticky, and if it's not, add another 1-2 tbsp water and process again
  • Add the rest of the black beans and briefly combine. You should still have a few black beans whole and slightly chopped
  • Scrape the mixture into a bowl with a spatula and put into a bowl, to one side
  • On the stove top in a frying pan, heat the olive oil to a medium heat
  • Using oiled spoons (oil the back of the spoons so the mixture doesn't stick to them) put the mixture into burger rounds in the frying pan and neaten the edges. Make sure the pan isn't too hot
  • Leave the burgers to cook on one side without moving them for 5-6 minutes and then flip them over
  • Cook fully on both sides, and then add to the burger buns, top with the cheese and add your toppings
  • Serve!
