Kidney Friendly Oatmeal Cookie Recipes
CINNAMON SUGAR COOKIES/DIALYSIS & KIDNEY FRIENDLY
A light and just sweet enough little cookie for when you are craving something just a little different. This is dialysis friendly and can be made with no sugar (use ingredients in parenthesis) therefore becoming diabetic friendly also. This new dialysis cooking has been a challenge but I am finding many wonderful things online...

Steps:
- 1. Put all the cookie ingredients in a large bowl and mix together well.
- 2. Mix the 3 tablespoons sugar and cinnamon together in a small bowl.
- 3. Roll cookie dough into 1 inch balls and roll in the cinnamon and sugar mix.
- 4. Put cookies on an ungreased cookie sheet about 2 inches apart and bake in a preheated 400 degree oven for about 8 to 10 minutes or until lightly browned.

Steps:
- In a small bowl, cream peanut butter and brown sugar until fluffy. Beat in egg. Add oats and baking soda to creamed mixture; mix well., Drop by tablespoonfuls 2 in. apart onto greased baking sheets; flatten slightly. Bake at 350° for 6-8 minutes. Remove to wire racks to cool. Store in an airtight container.
