Steps:
- Mix water and sugar gradually, tasting and adjusting as necessary. Pour into a pot and bring to a boil over high heat.
- Remove from heat and add baking soda. Dunk teabags several times and cover. Allow to steep for 15 - 30 minutes (taste at 15 minutes).
- Remove tea bags (do not press!) and let cool to room temperature. Then transfer to a 2-quart glass or plastic pitcher.
- Refrigerate for several hours. Serve/garnish with lemon or orange slices. Enjoy! For swamp water, substitute 1 cup freshly-squeezed lemon juice for the same amount of water when adding sugar.

KICKIN' CAROLINA TEA
My own concoction with my new favorite vodka, Firefly Sweet Tea Vodka, made in South Carolina. I discovered it on my recent vacation in Charleston. Measurements are approximate; adjust to your taste. Be careful; this doesn't taste alcoholic! I use diet Sprite to keep the calories down; you could use regular.

Steps:
- Put ice cubes in glass and add the ingredients in the order listed.
- Just scoop the lemonade concentrate out of the can; cover the remaining concentrate or transfer to a freezer safe container and return to the freezer to use for your next one! I'm guessing how much I used--2 to 3 teaspoons.
- Adjust to your own tastes.

BANANA PECAN WHOLE WHEAT PANCAKES
Down in South Carolina, I ordered these fantastic Banana Pecan Buttermilk Pancakes. This isn't with buttermilk, but it's very easy and very yummy.

Steps:
- Beat egg until it's fluffy.
- Stir in milk and butter.
- Stir in flour, sugar, baking powder and salt.
- Melt butter in frying pan at high heat.
- Pour batter into frying pan, reduce heat to medium.
- Wait about 20 seconds, then lay slices of banana on pancake. Then sprinkle pecans into them. (should cook in a minute of two).
- Flip it over to cook the other side (this side cooks faster).
- Repeat until batter is finished.

KICKIN' CHILI
This is a fantastic chili recipe if you like a little kick and a little spice. It's great right off the stove top and even better the next day. My husband can't get enough of it!

Steps:
- In a large, heavy pan brown meat well.
- Add garlic, celery, and onions and sauté for 10 minutes.
- Add tomatoes, tomato sauce, spices, seasonings, chili peppers, sugar, and the beans.
- Bring to a boil, then reduce heat and simmer, uncovered for 1 1/2 hours.
- Stir often to prevent sticking.

- Cook to soft ball stage.
- Add pecans and liqueur.
- Beat until stiff (a min. or so).
- Drop quickly onto wax paper.
GREEN TEA VODKA
This is a recipe I saw and adapted . The tea bags eliminate the need to filter. You can add orange peel or peaches and let this infuse further. Do not let green tea bags sit longer then 24 hours or it will get too bitter.

- 1. Pour vodka into wide mouthed bottle. Add tea bags. Close and shake well. Let sit no more than 24 hours.
- 2. Remove tea bags. Add honey and shake well.
- 3. Ready to serve now, or add orange peel or other fruit and let steep 2 weeks to a month. Filter and serve.
