ONE-PAN SWEET POTATO BREAKFAST HASH RECIPE BY TASTY



One-pan Sweet Potato Breakfast Hash Recipe by Tasty image

Here's what you need: sweet potato, olive oil, red onion, garlic, bell peppers, jalapeño, green onions, fresh rosemary, eggs

1 sweet potato
1 tablespoon olive oil
½ red onion
1 clove garlic
2 bell peppers
1 jalapeño, optional
2 green onions
1 tablespoon fresh rosemary
4 eggs

Steps:

  • Dice the sweet potato
  • Heat the olive oil in a large skillet over medium-high heat. Add the diced sweet potato, cover, and cook, stirring occasionally, for about 10 minutes, or until it begins to soften.
  • While the sweet potato cooks, dice the red onion and mince the garlic. Add to the skillet.
  • Dice and seed the bell peppers and add to the skillet.
  • Dice the jalapeño, if using, and add.
  • Chop the green onion and rosemary, if using fresh, and add to skillet. Cover and cook for about 5 minutes, or until the sweet potato is tender.
  • Create 4 wells in the vegetable mixture, not too close to the edges of the skillet, but far enough apart that they aren't touching. Crack 1 egg into each well. Cover and cook for 3-5 minutes more, or the eggs are cooked to your liking.
  • Breakfast is served!

Number Of Ingredients 8

1/4 cup vegetable oil
1 red onion, thinly sliced (about 2 cups)
1 red bell pepper, diced (about 2 cups)
2 pounds sweet potatoes, quartered and cut into 1/4-inch slices
1 teaspoon ground cumin
2 teaspoons salt
1/2 teaspoon red pepper flakes
1/2 cup green onions, chopped

Steps:

  • Pour the oil into a large skillet and place over high heat. Add the onion and bell pepper and saute, stirring, 2 to 3 minutes. Add the potatoes, cumin, salt and red pepper flakes, lower the heat to medium-high and cook, stirring occasionally, for 25 to 30 minutes, or until the potatoes are fork tender and some are browned. The potatoes will begin to stick as they cook. Just continue to turn with a spatula. Stir in half of the green onions, top with the remainder, and serve immediately.

2 large sweet potatoes, peeled and cubed into 1-inch cubes
6 tablespoons olive oil, divided
1/2 red onion, chopped
1 red bell pepper, chopped
1/4 cup green onions
2 cloves garlic, chopped
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • Add the potatoes to a large saucepan of salted boiling water and simmer until tender. Drain and dry completely with paper towels.
  • Meanwhile, heat 2 tablespoons oil in a large skillet over medium-high heat. Add the red onions, bell peppers, green onions, and garlic, and saute until tender and lightly golden, 5 to 6 minutes. Season with salt and pepper and remove to a bowl.
  • Add the remaining 4 tablespoons oil to the skillet, and then add the drained and dried sweet potatoes. Cook in a single layer, stirring occasionally, on medium heat until they are tender, about 6 minutes. Increase the heat to high and cook, without stirring, until the potatoes are golden and crisp, about 2 more minutes. Sprinkle with the smoked paprika and gently stir in the onion mixture and parsley.

1 tablespoon olive oil
1 small white onion, diced

1 teaspoon brown sugar, or to taste

Steps:

  • Place sweet potato in a microwave-safe bowl; add water and salt. Microwave until partially softened, 2 to 3 minutes; drain.
  • Heat olive oil in skillet over medium heat; cook and stir onion in the hot oil until slightly softened, 3 to 4 minutes. Stir sweet potato, ham, cinnamon, cayenne pepper, and salt into onion; cover skillet with a lid. Cook sweet potato mixture, stirring occasionally, until sweet potatoes are cooked through, about 10 minutes; sprinkle with brown sugar. Cook and stir until brown sugar is dissolved, 1 to 2 more minutes.

2 teaspoons kosher salt

1 teaspoon garlic powder

This recipe happened because I was hungry and broke. I had made pan-roasted chicken breast with oven-roasted sweet potatoes and asparagus for dinner the night before, and had about 1 potato and 5 or 6 stalks of asparagus left over. The potato was already cut into chunks but I cut it into even smaller chunks for the hash. I also had some leftover corn from another night, and some fresh mushrooms. This turned out SO YUMMY I will definitely make it again, maybe even tweaking it some more. I should have taken a picture, it was so pretty...

Number Of Ingredients 12

1 medium sweet potato, oven-roasted with olive oil, salt, pepper, cut into small chunks
5 or 6 - stalks asparagus, oven-roasted with olive oil, salt, pepper, cut into 1-inch pieces
1/2 small onion, chopped
2 - crimini mushrooms, cut in 1/2, then sliced
2 tablespoon(s) sweet corn kernels
1 tablespoon(s) butter or light butter/margarine (optional)
1/2 teaspoon(s) chili powder
1/4 teaspoon(s) ground cumin
1/4 teaspoon(s) garlic powder
- salt & pepper to taste
1 - egg, over medium (or however you like yours cooked)
- non-stick cooking spray

Steps:

  • In a large skillet (sprayed with non-stick cooking spray) over medium-high heat, saute the onions and mushrooms until the onions are translucent and the mushrooms are softened and starting to brown.
  • Add the sweet potato chunks and continue to cook until everything starts to get brown & crusty (brown food tastes good!). Add the asparagus and corn, and all the spices/seasonings. Toss to coat everything and cook a few more minutes to heat everything through.
  • Add 1 T. butter or margarine if desired, and stir to combine (this is strictly for the flavor). Turn heat down to Low just to keep warm while you cook your egg.
  • To serve, place the hash on the plate, top with your egg, and get to chewin'!
  • Wondering what else you could add to this? How about some red or yellow bell peppers, green onions, black beans, sage (fresh would be awesome), parmesan cheese, cheddar cheese, sausage...you could even make this hash with butternut squash! OMG, I'm gonna try it! :-D
