SPICY GREEN BEANS

1 tablespoon extra-virgin olive oil
1 tablespoon salted butter
1 1/2 pounds green beans, trimmed
1 red bell pepper, finely chopped
1 teaspoon red pepper flakes
Kosher salt

Steps:

  • Add the oil and butter to a skillet over medium-high heat. When the butter is melted and hot, add the green beans and bell pepper and toss to coat. Add the red pepper flakes and some salt and toss again. Cook, stirring frequently, until the beans are crisp-tender, about 5 minutes.

I can't remember where I picked this recipe up. It was just scrawled on a scrap of paper. It may have come from our local Key West paper which often has tasty recipes. We eat a lot of green beans and this is one of our favorites.

Number Of Ingredients 7

3 cups fresh green beans
4 green onions
2 tablespoons szechuan sauce
1/2 teaspoon soy sauce
1/2 teaspoon minced garlic
1/4 teaspoon red pepper flakes
1/2 cup shortening, NOT butter or 1/2 cup oil

Steps:

  • Clean & dry green beans. Set aside.
  • Dice white portion of green onion very finely, mix with szechuan sauce, soy sauce, minced garlic and red pepper flakes.
  • Heat shortening in deep frying pan over medium high heat. When hot, add green beans & cook 6 - 7 minutes.
  • Set beans on a separate plate and pour excess grease out of the pan.
  • Return green beans to pan & add sauce.
  • Mix well & serve.

  • In a small bowl mix together soy sauce, rice vinegar, sugar, water, corn starch, salt, and pepper; set aside.
  • In a wok or large skillet, add oil; let heat over medium high heat for 30 seconds. Add garlic, green onions, and 1 tsp red pepper flakes. Stir fry quickly, for about 30 seconds. Add green beans and stir constantly until they are almost fully cooked, about 3 minutes (should turn deep green). Push green beans to the side, pour sauce into pan, stir to distribute sauce to bottom of pan. Cook for 30 seconds over medium high heat; allow to come to a boil (shouldn't take long), reduce heat to low, stir to coat green beans with sauce. Cook for 30 more seconds.
