This is a Key Lime Pie Cake, filled with key lime pie filling, frosted with Marshmallow Frosting, and coated in graham cracker crumbs!

6 tablespoons unsalted butter softened (3 oz, 85 grams)
2 tablespoons vegetable oil (29 ml)
3/4 cup granulated sugar (5.29 oz, 150 grams)
2 large eggs room temperature
2 teaspoons vanilla extract
2 tablespoons lime zest
1 3/4 cup all-purpose flour (7.8 oz, 221 grams)
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup milk (118 ml)
1/4 cup lime juice (59 ml)
2-14 oz can of condensed milk
2 tablespoons unsalted butter
1-2 tablespoons key lime zest
3 egg whites
3/4 cup granulated sugar (150 grams, 5.29 oz.)
1/4 teaspoon cream of tartar
1/8 teaspoon fine sea salt
1 teaspoon vanilla extract
Graham cracker crumbs
Key lime slices

Steps:

  • Cake
  • Grease and flour 4 6" cake pans, or 2 8" cake pans.
  • Pre-heat oven to 350F.
  • Sift flour, baking powder, baking soda, and salt together. Set aside.
  • Cream butter and oil in the bowl of a stand mixer for 2 minutes, on medium speed. Gradually add sugar and cream for 3 minutes until mixture is fluffy and lighter in color.
  • Add eggs to the mixture, one at a time, mixing on medium speed. Scrape bowl and add vanilla. Mix on medium-low speed until incorporated.
  • Add lime zest and stir to combine.
  • Add milk to the bowl. Mix on low for 30 seconds. Add half of sifted flour mixture. Mix on low for 30-45 seconds until almost entirely incorporated.
  • Add lime juice and mix on low for 30 seconds. Add remaining flour and mix on low until incorporated.
  • Divide batter evenly between your cake pans.
  • Bake on pre-heated oven for about 20-25 minutes. Smaller cake pans will take less time to bake.
  • Remove cake from the oven when a toothpick comes out clean once inserted in the cake.
  • Let cake cool in the pan for 5 minutes and flip it over in a wire rack to let it cool completely before proceeding with frosting and filling.

1 (16.5 ounce) white cake mix
Ingredients to complete cake mix eggs, water, oil
2 tablespoons finely grated lime zest
TOPPING
8 ounce cream cheese, softened
1 can sweetned condensed milk
3/4 cup fresh lime juice
2 tablespoons finely grated lime zest
1 teaspoon vanilla
WHIPPED CREAM
2 cups heavy cream
1/3 cup powdered sugar
1 tablespoon vanilla

Steps:

  • Preheat oven to 350 degrees. Line jelly roll pan with parchment paper or silicone baking mat and set aside. Make white cake mix according to package directions. Stir in lime zest. Pour into prepared pan and smooth evenly. Bake 12-15 minutes or until cake is completely cooked and lightly golden. Set aside to cool. TOPPING Mix cream cheese with hand mixer to loosen. Pour in sweetened condensed milk and stir until smooth. Add in lime zest, lime juice and vanilla until smooth and filling has thickened. Pour over cooled cake and spread evenly. Refrigerate 1-2 hours covered in plastic wrap to set. WHIPPED CREAM Stir cream, powdered sugar and vanilla all together in a bowl until whipped into big pillowy peaks. Spread whipped cream over lime filling. Top with lime zest and serve.

My mother-in-law loves key lime pie. I wanted to make something different for her so I combined a key lime pie with a poke cake and this is what I came up with. She loved it. So we named it after her.

1 (15.25 ounce) package white cake mix (such as Duncan Hines®)
1 cup water
3 large eggs eggs
⅓ cup vegetable oil
1 (3 ounce) package lime-flavored gelatin mix (such as Jell-O®)
1 cup boiling water
¼ cup Key lime juice, or more to taste
1 (14 ounce) can sweetened condensed milk
¾ cup heavy whipping cream
½ cup Key lime juice
2 drops green food coloring

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Combine cake mix, water, eggs, and oil in a large bowl; beat with an electric mixer on low speed until moistened. Increase speed to medium and beat for 2 minutes. Pour batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 24 to 29 minutes.
  • Dissolve gelatin mix in boiling water. Add Key lime juice and mix well. Use a fork to poke holes all over the baked cake. Spoon gelatin-key lime mixture all over the cake. Refrigerate until completely cool.
  • Make topping by mixing sweetened condensed milk, heavy cream, Key lime juice, and food coloring with an electric mixer until well combined. Cover cake with topping. Keep refrigerated until ready to serve.
