This is a great twist to the chicken nugget that we all know! It has no grains and has a hidden veggie

Number Of Ingredients 11

2 ½ cup Cooked Chicken (finely chopped (canned chicken or rotisserie chicken))
2 large Eggs (or 3 medium)
½ tsp Salt
½ tsp Garlic Powder
½ tsp Dried Minced Onion
¼ tsp Pepper
¼ tsp Smoked Paprika
½ cup Parmesan Cheese (shredded)
¼ cup Spinach (finely chopped)
2 tbs Celery (finely chopped)
3 tbs Coconut Oil

Steps:

  • Combine cooked chicken, eggs, salt, garlic powder, minced onion, pepper, smoked paprika, parmesan, spinach and celery in a large mixing bowl.
  • Firmly pack and form equal sized patties, about 10. They may be delicate but when heated the cheese will meld the patties together.
  • Heat oil in a pan, and shallow fry the patties until golden on all sides. (about 2-3 minutes). Let cool and enjoy.
  • Tips: Freeze up to 2 months. Fridge up to 4 days. If using canned chicken make sure to pat dry as much as possible. Reheat by stovetop or microwave for 60 seconds.

1 can(s) 10 ounce can chicken, drained well
2 eggs
1/4 c celery, chopped fine
4 green onions, chopped fine
2 oz cheddar cheese, shredded
salt and pepper, to taste
pinch old bay seasoning, optional

Steps:

  • 1. Preheat oven to 350.
  • 2. Mix all of the ingredients and spoon into 6 well-greased muffin top pans.
  • 3. With your fingers, spread and pat the chicken mixture to fill the cups evenly.
  • 4. Bake at 350º for 15-20 minutes until set and lightly browned around the edges.

  • To start with, if you are using the whole chicken breasts, chop the chicken up into very small pieces.
  • Put the chopped or ground chicken into a large mixing bowl. Now mix in everything else except the coconut oil. Make sure that it is well combined, especially the eggs since that's what holds everything together.
  • Heat the coconut oil in a large frying pan over medium low heat. You need to cook theses patties at medium low because you have to make sure the inside cooks before the outside burns.
  • Once the pan has heated, scoop out some of the chicken mixture and put it in the pan. Flatten it out a little so it's in a patty shape. You can use a couple of spoons to scoop or and ice cream scoop.
