MARINATED RIB EYES
Excellent marinade for beef. I have used this with beef kabobs and my DH's favorite Ribeyes. The meat is so flavorful and tender and the reserved sauce is excellent on the side.

Steps:
- In a large zip-lock bag, combine the first 9 ingredients.
- Remove 1/3 cup marinade and refrigerate.
- Pierce steaks several times on both sides with a fork.
- Place in the zip-lock bag and turn to coat.
- Cover and refrigerate overnight.
- Remove steaks, discarding marinade.
- Grill, uncovered, over medium-hot heat for 4-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees; medium, 160; well done, 170).
- Warm reserved marinade and serve with steaks.
KENTUCKY RIB EYES

- Combine and whisk well together; bourbon, soy, mustard, onions, sugar, salt, Worcestershire, pepper and garlic. Place steaks in a shallow dish and pour marinade over. Cover with plastic wrap and refrigerate overnight. Preheat grill. Season steaks on one side with salt and pepper. Place seasoned side down on grill. Before flipping season top of steaks. Cook to desired temperature.Remove from grill to a serving platter and top each steak with one tablespoon Bourbon Butter.
- For Bourbon Butter: Allow butter to come to room temperature. Combine all ingredients in a food processor. and mix well. On a flat surface, form butter mixture into a log about 2 inches in diameter.Roll in parchment paper and freeze. Chips can be sliced as needed.
PIG EYES
My mother used to make this for us kids when we were growing up. Now I make it when I need a switch up from the ordinary breakfast. I've heard people call these "egg-in-the-holes", but I prefer pig eyes! All you need is some bread, eggs, and some other odds and ends that you probably have in your kitchen. The best part is dipping the crispy center cut-out in the yolk (cook a little longer if you don't like runny yolk). Definately a family favorite!

Steps:
- Heat frying pan on medium-high, and coat pan with about half of the butter.
- Spread each slice of bread with butter on one side and place in pan, buttered side up.
- Cut a hole in the middle of each slice of bread using a small sized glass about 2 inches in diameter (wiggle and press down to cut hole). Remove cut-outs and place in pan. If they don't fit, then save to cook afterwards.
- Crack one egg into each slice of bread, and sprinkle with cheese, garlic powder, salt and pepper. Cook about one minute, or until egg white is almost cooked through.
- Flip each slice over and cook until desired doneness. Served with fried egg-hole cut outs to dip into yolk.
GARLIC MUSHROOM RIB EYES
It's easy to dress up rib eyes wit mushrooms and garlic for a special steak dinner. This recipe gives a stovetop method, but you can grill the steaks if you prefer.

- Sprinkle steaks with pepper and salt. In a large skillet, melt 1 tablespoon butter. Cook the steaks for 2 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145*; medium, 160*; well done, 170*) Remove and keep warm.
- In the same skillet, cook the garlic in 1 tablespoon butter for 2 minutes. Remove garlic and set aside. Add mushrooms and remaining butter to skillet; saute for 5 minutes. Stir in broth. Bring to a boil; cook and stir over high heat until liquid is absorbed. Add reserved garlic. Serve over steaks.

- Combine first 5 ingredients; rub onto all sides of steaks.
- Pour oil into a large nonstick skillet; place over medium heat until hot. Add steaks, and cook 10 to 14 minutes or to desired degree of doneness, turning once. Sprinkle with lemon juice; top with cheese and olives.
- Note: I will probably grill the steak. I will brush each steak with olive oil and then rub both sides with the rub. Grill to your liking, then sprinkle with lemon juice, feta cheese and olives.

This is such a flavorful marinade for rib eyes. The recipe calls for marinating the steaks for 15 minutes at room temperature, but I marinated all afternoon in the refrigerator and they were wonderful!

RIB-EYE GRILL
This recipe is from Southern Living , December 2002. I found it to be the perfect rub for my steaks. I let the steaks stand at room temperature in the marinade for an hour prior to grilling to help the meat cook evenly. I hope you find this as delicious as I did. Enjoy.

- Preheat oven to 200 degrees farenheit.
- Unwrap Hugs and place them on a cookie sheet.
- Line it with waxed or parchment paper for best results.
- Place a pretzel around the hug.
- Don't worry if it doesn't drop to the base of the hug.
- Bake for approximately three and a half minutes.
- Immediately place an M&M in the center of the Hug and press down slightly to flatten.
- Cool.
- I also place them in refrigerator to speed the set up process.
