This easy green bean casserole has always been one of my favorite dishes. You can make it before any guests arrive and refrigerate it until it's ready to bake. -Anna Baker, Blaine, Washington

2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 cup whole milk
2 teaspoons soy sauce
1/8 teaspoon pepper
2 packages (16 ounces each) frozen green beans, cooked and drained
1 can (6 ounces) french-fried onions, divided

Steps:

  • In a bowl, combine soup, milk, soy sauce and pepper. Gently stir in beans. Spoon half of the mixture into a 13x9-in. baking dish. Sprinkle with half of the onions. Spoon remaining bean mixture over the top. Sprinkle with remaining onions., Bake at 350° until heated through and onions are brown and crispy, 30-35 minutes.

2 can(s) cut green beans
1 can(s) progresso ready-to-eat cream of mushroom soup
1 can(s) french fried onions (small can will do, but you can add more if you like)
1 pinch sea salt
1 pinch ground black pepper
INSTEAD OF CANNED CUT GREEN BEANS YOU CAN TRY
1 lb fresh green beans - cleaned, tipped, and lightly steamed beforehand
2 can(s) different cut green beans - mix it up - don't forget to drain and rinse!

Steps:

  • 1. Heat Oven to 350F
  • 2. In a medium bowl, mix the green beans of your choosing (see options) with the ready-to-eat soup.
  • 3. Fold into the mix 3/4 can of fried onions
  • 4. Add mix to casserole dish
  • 5. Here you have a choice - you can either top with onions now, or wait until 10 minutes remain to add the onions. While adding now is easiest, adding with 10 minutes remaining provides the crispiest results!
  • 6. Bake for 25-30 minutes.

1 pound haricot verts or green beans, trimmed
4 ounces shiitake mushrooms, stems removed, julienned
1 1/2 tablespoons olive oil
1 tablespoon capers
Kosher salt
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup whole milk, warmed
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
4 ounces goat cheese, crumbled
Kosher salt
1/2 cup crispy fried onions

Steps:

  • Preheat the oven or a toaster oven to 400 degrees F.
  • For the green beans: Place the green beans on a sheet pan. Add the mushrooms, olive oil and capers, sprinkle with 1/4 teaspoon salt and toss to coat. Roast the green beans until tender and the skins blister, 8 to 10 minutes depending on the thickness of the green beans.
  • For the goat cheese sauce: Meanwhile, add the butter to a small saute pan over medium heat and cook until it starts to bubble and brown. Add the flour and stir to cook the flour, 1 to 3 minutes. Slowly whisk in the milk. Continue to cook until the mixture simmers and thickens, about 10 minutes. Add the garlic powder and pepper. Remove from the heat and add 3 ounces of the goat cheese. Taste and season with salt.
  • For the garnish: When the green beans are tender, pour the goat cheese sauce on the bottom of a platter. Top with the roasted green beans and sprinkle with the remaining goat cheese and crispy fried onions. Serve immediately.

These are an old soul food heirloom favorite in the garden and what I remember eating frequently as a child. I grew the pole variety this summer and they are super prolific/productive. They taste like nothing you buy in a store - super meaty, tender, long-lasting flavor. And now they are a favorite in my own family. The beans will cook in this semi-salty broth, and won't be as salty as is the broth.

4 cups trimmed heirloom green beans (such as Kentucky Wonder Beans)
1 slice bacon
1 clove garlic, minced
1 teaspoon olive oil, or as needed
½ teaspoon sea salt

Steps:

  • Pour about 1 inch of water into a saucepan; add green beans, bacon, garlic, olive oil, sea salt, and pepper. Bring the water to a boil, reduce heat to medium, and place a cover on the saucepan. Cook beans until tender, 7 to 10 minutes.

1 large onion, chopped
2 -4 lbs roma green beans
salt and pepper, to taste
1/4 lb ham hocks or 1/4 lb bacon
1 -2 cup chicken broth

Steps:

  • Wash the beans, remove the tips, and break all beans in half. Set aside.
  • Melt butter in large saucepan or dutch oven. Add onion and saute until transluscent.
  • Add the broken beans, salt and pepper to taste and saute. When the beans begin to soften, add the ham or bacon, and continue to saute for 1-2 minutes.
  • Pour in the chicken broth, reduce heat, cover, and simmer for 15-20 minutes, until beans are soft.

50g butter
2 tbsp olive oil
250g chestnut or button mushrooms, sliced
500g green beans, trimmed
50g flour
500ml milk
100g crispy onions

Steps:

  • Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
  • Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
  • Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.
