I've been making this easy dessert for more than 20 years. I love it just as much now, as the first time I made it! Cool and so, so creamy!! Great for potlucks, picnics and even company! Goes really well with a spicy meal, chili or stew! (Old photo by me)

FOR CRUST:
1 1/2 cups graham cracker crumbs
1/3 cup sugar
1/2 cup butter, melted
FOR FILLING:
1 (3 oz.) pkg. lime jell-o
1 cup boiling water
12 oz. cream cheese, softened
1 cup sugar
1 tsp. vanilla
1 (16 oz.) tub cool whip, thawed
green food coloring, optional
maraschino cherries, optional
more cool whip, optional

Steps:

  • 1. Mix crust ingredients, save aside 2 tablespoons. Press rest on bottom of 13x9 greased glass dish or pan. Dissolve jell-o in boiling water, cool. In mixing bowl, beat cream cheese and sugar. Beat in vanilla, slowly beat in jell-o. Stir/fold in Cool Whip. Stir in 3-4 drops green food coloring. Spoon over crust, smooth top. Sprinkle with reserved crumbs. Chill til set, 3 hours or overnight. Serve topped with more Cool Whip and a maraschino cherry if desired.

"This make-ahead recipe was given to me by an aunt many years ago," writes Joyce Key. "Her recipe called for lemon gelatin, but we like this dessert with more of a bite to it, so we use lime instead. The light fluffy squares are especially great in summer," assures the Snellville, Georgia cook.

1-1/2 cups crushed graham crackers (about 24 squares)
1/3 cup sugar
1/2 cup butter, melted
FILLING:
1 package (3 ounces) lime gelatin
1 cup boiling water
11 ounces cream cheese, softened
1 cup sugar
1 teaspoon vanilla extract
1 carton (16 ounces) frozen whipped topping, thawed

Steps:

  • Combine the first three ingredients; set aside 2 tablespoons for topping. Press remaining crumbs onto the bottom of an ungreased 13-in. x 9-in. dish; set aside. In a small bowl, dissolve gelatin in boiling water; cool. , In a large bowl, beat cream cheese and sugar until smooth. Beat in vanilla. Slowly add gelatin until combined. Fold in whipped topping. Spoon over crust; sprinkle with reserved crumbs. Cover and refrigerate for 3 hours or until set.

1/2 cup butter, melted
1 (3 ounce) package lime Jell-O gelatin

1 1/2 cups pretzels, finely crushed
1/2 cup butter or 1/2 cup margarine, melted
1/4 cup sugar
1 (3 ounce) package lemon gelatin
1/2 cup water
1 lemon
8 ounces cream cheese, softened
8 ounces whipped topping
3 cups fresh fruit (such as blueberries, raspberries, or sliced strawberries, kiwis, peaches, or nectarines)

Steps:

  • Preheat oven to 350°F For crust, finely crush pretzels in resealable plastic food storage bag; place in small bowl. Add butter and sugar; mix well. Press crust mixture onto bottom of 9x13 inch baking dish. Bake 10 minutes. Remove from oven to cooling rack. Cool completely.
  • For filling, sprinkle gelatin over water in small bowl. Microwave on HIGH 1 minute or until gelatin is dissolved. Zest lemon to measure 1 teaspoon zest; set zest aside. Juice lemon to measure 2 tablespoons juice. Add lemon juice to dissolved gelatin.
  • In another bowl, combine lemon zest and cream cheese. Gradually whisk in gelatin mixture and whipped topping until smooth; spread evenly over crust. Refrigerate 30 minutes. Top with fresh fruit; slice and serve.

This has been one of my favorites for years. I made it for my inlaws when my husband and I were dating. It was such a hit, I knew I was "in" when his grandmother asked me if she could share some with her friends at Bingo.

22 graham cracker squares, crushed (or 11 rectangles)
1/2 cup sugar
1/2 cup melted butter
2 well beaten eggs
1/2 teaspoon vanilla
16 ounces cream cheese (softened)
1/2 cup sugar
2 1/2-3 cups blueberries (either fresh or frozen)
1/3 cup sugar
1/2 cup water
1 tablespoon cornstarch
1 -2 tablespoon lemon juice

Steps:

  • Preheat oven to 375 degrees.
  • Mix graham crackers, 1/2 C sugar and melted butter in a 9x13 pan.
  • Beat eggs, vanilla, cream cheese and 1/2 C sugar until creamy.
  • Pour onto crust and bake for 15 minutes.
  • Cool.
  • Heat blueberries, 1/3 C sugar, water, cornstarch and lemon juice in a small sauce pan until thick (will coat the back of spoon).
  • Pour over cheesecake mixture and chill.

NO-BAKE LEMON CHEESECAKE DESSERT

Make certain to only chill the Jello until it is thick but not set, it should take around an hour and 15 minutes, I made the mistake of over chilling the Jello the first time I made it, and the Jello did not mix in properly with the whipped cream, there were tiny pieces of gelatin floating around in the mixture, it was still delicious though! Feel free to use any crust recipe that you like I am thinking maybe a chocolate cookie crust for the lemon flavor. This recipe can also be made in a 10-inch springform pan. Prep time does not include chilling the Jello, and cooking time is 8 hours chilling time. If you want a firmer middle, and a stronger fruit flavor just use three packages of Jello instead of just two with the 2 cups boiling water. This is a refreshing light as a cloud dessert it makes a perfect ending to serve to guests after a dinner.

2 cups graham cracker crumbs
1/2 cup melted butter or 1/2 cup margarine

2 cups boiling water

2 cups sugar (can use more for a sweeter taste)
1 cup whipped cream (can use 2 cups for more creamy taste, or can use Cool Whip Frozen Whipped Topping, thawed)

Steps:

  • Set oven to 350 degrees F.
  • Prepare a 13 x 9-inch baking pan.
  • In a medium bowl mix together graham cracker crumbs, melted butter, sugar and press into bottom of prepared baking pan.
  • Bake for 7 minutes (no more than 7 minutes!) remove and cool completely.
  • For the cream cheese filling: dissolve the gelatin powder in the boiling water, and place in the refrigerator.
  • Let cool until thick but not set (about 1 hour and 15 minutes, it might take a little more or less time).
  • In a large bowl beat the softened cream cheese with the 2 cups sugar until fluffy and smooth (about 3-4 minutes).
  • To the whipped cream or Cool Whip, fold in the chilled lemon or orange gelatin; mix until well combined.
  • Then add in the cream cheese mixture; mix to combine.
  • Pour the filling into prepared crust.
  • Chill in the refrigerator for a minimum of 8 hours or more.
  • Cut into squares and serve with a dollop of whipped cream on top if desired.
