RICE KRISPIES ICE CREAM SANDWICHES
A favorite for children and grown ups alike. A combination of corn syrup, peanut butter, and Rice Krispies with your choice of ice cream or yogurt sandwiched in between.Place a piece of plastic wrap on top of the cereal mixture and then press down with your hands if you wish to keep your hands clean. I keep a plastic quilt ruler with my baking supplies for measuring squares and pastry. From a magazine clipping. No baking required!

Steps:
- In a medium bowl, stir together corn syrup and peanut butter.
- Add cereal and stir until well coated.
- Press mixture firmly and evenly into a buttered 9"x13" pan.
- Place in freezer until firm, about 15 minutes.
- Cut cereal mixture in half crosswise.
- Spread one half with softened ice cream or frozen yogurt.
- Top with second half of Rice Krispie mixture to make one very large sandwich.
- Freeze until firm, about 2 hours.
- Cut large sandwich into 2" portions (using ruler again).
- Wrap individually in foil paper or freezer wrap and store in freezer until needed.

Steps:
- Microwave butter in large microwaveable bowl on HIGH 45 sec. or until melted.
- Add marshmallows; toss to coat. Microwave 1-1/2 min. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec. Add cereal and sprinkles; mix well.
- Press onto bottom of 13x9-inch freezerproof pan sprayed with cooking spray. Freeze 15 min.
- Remove cereal mixture from pan; cut crosswise in half. Cut ice cream into 1/2-inch-thick slices; use to fill cereal mixture layers to make large ice cream sandwich. Wrap in parchment. Freeze 2 hours. Cut into 12 smaller ice cream sandwiches before serving.

- Line 2 9-by-13-inch baking pans with foil, leaving 2-inch overhangs on 2 sides of each pan. Mist with cooking spray. In a large pan, melt butter over low heat. Add marshmallows; stir until melted. Remove from heat, and stir in Rice Krispies. Working quickly, mist your hands with cooking spray, divide mixture in half and press into baking dishes. Let cool completely.
- Let ice cream soften slightly. Working quickly, spoon ice cream on top of Rice Krispies layer in 1 baking pan, spreading evenly to edges. Remove Rice Krispies layer from other baking pan, using foil overhangs as handles. Peel off foil and place layer on top of ice cream, gently pressing down. Return to freezer until hardened, about 1 hour.
- Line a baking sheet with parchment; set in freezer. Using foil handles, lift ice cream treat from pan, peel off foil and place on a cutting board. Cut into 18 sandwiches; place on baking sheet in freezer. Remove a sandwich from freezer, press edges of sandwich into sprinkles, then return to freezer. Repeat with remaining sandwiches. Freeze until ice cream hardens, at least 30 minutes. (For longer storage, wrap sandwiches in plastic wrap after they are firm.)
