STEAK AND SHRIMP SPECIAL

4 (8-ounce) New York strip sirloin steaks
Steak seasoning
8 ounces clarified butter
12 raw shrimp, skewered (3 on each skewer)
16 ounces raw French fries
Salt
4 lemon wedges, for garnish

Steps:

  • Preheat a grill to high. Alternatively, preheat a broiler to high. Season the steaks liberally with the steak seasoning on both sides. Cook the steaks over high heat to order: about 2 minutes on each side for rare, 2 1/2 minutes on each side for medium-rare, 3 1/2 minutes on each side for medium, and 4 1/2 minutes on each side for medium well. Halfway through the cooking time on each side, turn each steak 45 degrees to make grill marks.
  • Add half the clarified butter to a large skillet and heat over high heat. Add the shrimp skewers and cook the shrimp on both sides until they are opaque throughout, about 1 to 2 minutes per side.
  • Fill a deep fryer with oil and heat it to 350 degrees F. Alternatively, heat oil in a large, heavy Dutch oven to 350 degrees F; do not fill pan more than halfway full with oil. Drop the fries into the fryer and cook until they are golden brown, about 5 minutes. Remove to a paper towel lined plate to drain and season the fries with salt.
  • To serve, place 1 steak on a plate, top the steak with skewered shrimp, and add some French fries. Garnish with a lemon wedge and serve with a small dish of clarified butter on the side. Serve immediately.

4 ounces cream cheese
1/4 cup sugar
1/3 cup brown sugar
3 tablespoons butter, melted
1/2 cup walnuts
1 (17-ounce) pizza dough ball
2 cups fruit topping of your choice, optional (sliced strawberries or chopped pineapple)

Steps:

  • Preheat an oven with a pizza stone to 550 degrees F, if possible. If your oven does not go up to 550 degrees F, preheat it to the highest temperature possible.
  • In a bowl, mix cream cheese and sugar together well combined. In a second bowl mix together brown sugar, melted butter, and walnuts.
  • Roll pizza dough onto a 12-inch pizza screen. Spread an even layer of the cream cheese mixture on top of the dough. Distribute a layer of fruit topping evenly over the cream cheese, if desired. Sprinkle the brown sugar mixture on top of the pizza and bake in oven for 12 minutes. Cut into wedges and serve.

2 to 3 ounces drained sauerkraut
1/4 teaspoon caraway seeds
6 ounces hot corned beef
Butter
1 loaf Italian bread, cut lengthwise
4 slices imported Swiss cheese
Russian dressing
1 sour pickle, cut into wedges, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Place the sauerkraut and the caraway seeds in a small saucepan over medium-high heat and cook until heated through. Slice hot corned beef. Butter and grill, on both sides, 2 slices bread. Place meat in mound and cover with sauerkraut and cheese. Place into preheated oven and cook until cheese is melted. Spread Russian dressing on bread and cover to make a sandwich. Cut in half and serve garnished with pickle wedges.

Steps:

  • Combine the water, beets, onion, and salt in a large stockpot and bring them to a boil. Cook for 1/2 hour on low heat. Stir in the sugar and lemon juice. Cook 10 minutes more. Refrigerate the mixture to chill, about 30 minutes. Serve the borscht topped with a dollop of sour cream.
