Vegetable oil
4 pounds pork shoulder (butt) roast, cut in two pieces
1/2 cup water
1 tablespoon hickory liquid smoke
2 teaspoons coarse kosher salt, or Hawaiian salt

Steps:

  • Select Browning and add oil to the cooking pot. When hot, brown pork roast on both sides, about 3 minutes per side. Brown each half of the roast separately. Remove to a platter when browned. Turn pressure cooker off and add water and liquid smoke to the cooking pot. Add browned roasts and any accumulated juices to the pot. Sprinkle the salt over the top of the pork roasts. Select High Pressure and set timer for 90 minutes. When beep sounds, use a natural pressure release to release pressure (approximately 20 minutes). When valve drops carefully remove lid. Remove the meat from the pressure cooker and shred with two forks (discard excess fat as you shredded). Add some of the juices from the pressure cooker to moisten the meat. Based on using a 6 quart Cuisinart electric pressure cooker. Using a manual cooker, your times may be different.

Adapted from Nom Nom Paleo. This is my go-to recipe for delicious pulled pork in only 90 minutes at pressure. For a 2-person household, I coordinate with my step-daughter so we can both enjoy this economical but delicious protein. One Boston Butt yields a lot of pulled pork! Note that cooking time is the amount of time cooked at high pressure (as is common for pressure cooker recipes); the pressure cooker can take 10-25 minutes to reach high pressure, and from 15-25 minutes to naturally release pressure.

3 slices bacon
10 garlic cloves, peeled
1 1/2 tablespoons pink himalayan coarse salt or 1 1/2 tablespoons kosher salt
1 cup water (use 1 1/2 cups water if using an 8-qt pressure cooker)
1 cabbage, cored, cut in 8 wedges

Steps:

  • Place bacon slices flat on the bottom of the pressure cooker pot. Press "Saute" button. Brown bacon and flip to brown the other side. When browned on both sides, turn off pressure cooker.
  • Cut the roast into 3 equal pieces. With a sharp knife, makes slits in the roast and place the garlic there.
  • Use 3/4 teaspoon of medium-coarse salt for every 1 pound of meat; if using fine salt, use half as much. Sprinkle salt evenly over the pork.
  • Place the salted pork on top of the bacon - it needs to sit in one layer.
  • Pour in water.
  • Secure lid.
  • Press "Manual" or "Pressure Cook" button (if using Instant Pot). Immediately press the + button until you have set the time for 90 minutes under high pressure. (If using a stovetop pressure cooker, cook on high heat until high pressure is reached, then lower heat to maintain high pressure for 75 minutes.).
  • The electric pressure cooker will switch to a "Keep Warm" setting about 10 minutes after pressure cooking has stopped. It can sustain "Keep Warm" for 10 hours, if necessary.
  • Allow pressure to reduce naturally. If you are impatient, allow it to reduce pressure for at least 15 minutes before manually releasing remaining pressure.
  • Remove the pork and place in a large bowl. Place the cabbage wedges into the cooking liquid.
  • Secure the lid. Pressure cook the cabbage for 2 minutes at high pressure. After pressure cooking has finished, allow it to reduce pressure naturally for 5 minutes, then quickly manually release any remaining steam.
  • Meanwhile, shred the pork, and apportion into bowls. Place a wedge of cooked cabbage on top of each portion.
  • Refrigerated leftovers will keep for 4 days; frozen will keep several months.

1/2 gallon whole milk
4 teaspoons yogurt starter (I used Yoplait)
1 cup water

Steps:

  • Place 1 cup of water in the Instant Pot. Place wire grate in pot.
  • Set 4 pint-sized jars of milk in pot, uncovered.
  • Push the steam button and decrease the time from the factory set 10 minutes to 1 minute by pressing the - (minus) button.
  • Let run through this cycle. It will take about 15 minutes. As soon as it beeps, unplug it or it will keep warming the milk. Allow to cool about 15 minutes or until the lid will open. Don't vent it or your milk will boil over.
  • Open the lid and allow to cool to a pleasant "bathtub" temperature. Skim off any film that might have developed.
  • Add about a teaspoon of starter per jar. Use plain if you can, but I've been able to get away with using vanilla. After this initial run, you can use your plain yogurt you just made as a starter for the next batch.
  • Replace the jars in the Instant Pot (keep the cup of water in the bottom from before).
  • Press the "Yogurt" button. Allow to run for 8 hours. Cap the yogurt and place in the refrigerator. Keeps for several weeks.
  • If your yogurt is too runny, add a heaping teaspoon of powdered milk to your warm milk at the same time you add your starter.

Tried and True, just a hint of heat. I have adapted my dry rub from from Ribs, Chops, Steaks, & Wings by Ray Lampe, and my electric pressure cooking directions from Gracie Cooks! blog. We found the original rub recipe to have way too much salt, and we reduced the cayenne pepper so toddlers wouldn't be overwhelmed. I like to keep the ribs out of the bottom liquid as much as possible, and I top it with a fresh BBQ sauce (or Heinz's Kansas City BBQ sauce was even easier and quite yummy) for finishing off the ribs either in the oven or on the grill. The pressure-cooked unglazed ribs can be frozen - we tend to make as many slabs as our P.C. can hold. Afterwards, strain the liquid, defat, and use as a marinade for a rump roast. Removing the membrane that covers the inner part of the ribs and removing excess fat accounted for most of my prep time. In the Instant Pot, it only took 15 minutes to reach pressure, and 20 for the pressure to come down naturally. (The posted "Cooking Time" is the amount of time at High Pressure (11 psi). I think it is most convenient to cook the ribs ahead and just worry about "finishing" them when you are ready to eat.

1/4 cup paprika
2 tablespoons finely ground black pepper

1 tablespoon onion powder
1 tablespoon ground cumin

1 teaspoon dry mustard
1 teaspoon ground coriander or 1/2 teaspoon dried cilantro
1/4 teaspoon cayenne pepper

4 lbs baby back ribs (2 full racks)
12 ounces Coca-Cola
1/4-1/2 cup barbecue sauce (I like Heinz Kansas City BBQ sauce)

Steps:

  • RUB:.
  • Combine all Rub ingredients in a medium bowl.
  • RIBS:.
  • Using a full cooking sheet, prepare ribs by removing membrane that covers the inside part of the ribs. Also trim off excess fat, if any. (Check YouTube for instructive videos.).
  • Generously coat both sides of both racks of ribs.
  • In 6-quart or larger electric pressure cooker, place roasting rack in inner pot. Pour in Coca Cola. Place each rack of ribs vertically, with meaty side out, and meatier edge on top. (A 6-quart P.C. should accommodate 3 racks, and an 8-quart P.C. should handle 4 racks.).
  • Feel free to sprinkle rest of rub on ribs.
  • Put inner pot into Pressure Cooker base.
  • Secure lid.
  • INSTANT POT: Select MEAT/STEW setting, and increase time to 30 minutes. When cooking has completed, press Off, and unplug. Allow pressure to release naturally (or at least 12 minutes before venting).
  • OTHER ELECTRIC PRESSURE COOKER: Cook on HIGH pressure for 30 minutes, and allow pressure to release naturally.
  • STOVE-TOP P.C.: Please consult your manual. These normally cook at 15 psi instead of 11 psi attained by electric pressure cookers, so cooking times and Natural Pressure Release times will both be shorter. You will have to hang around to make sure the stove-top pressure cooker maintains the right pressure, however.
  • Once pressure cooker has released its pressure, remove the lid. Carefully remove the ribs with tongs. (I move the ribs to a colander to drain as I normally cook them ahead up to this point.).
  • OPTIONAL: Strain the cooking liquid and refrigerate, then remove the top fat layer. It would make a killer marinade for a rump roast. If you don't like that option, discard the cooking liquid as you see fit.
  • FINISHING:.
  • OVEN: Set to BROIL. Put racks meaty side up and glaze with BBQ sauce with a silicone basting brush. Broil for 2-5 minutes or until heated through. If you like, baste again and broil some more.
  • GRILL: Prepare grill. On BBQ mesh grate, place rib racks meaty side up and glaze with BBQ sauce with a silicone basting brush. Heat through. Baste again and heat some more if you wish.

5 lbs country-style pork ribs, cut into large pieces to fit into cooker (see note below)
salt and pepper
1 -3 teaspoon cajun seasoning or 1 -3 teaspoon chili powder
2 cups chicken broth
1/2 cup dry sherry or 1/2 cup dry marsala wine
2 (20 ounce) bottles barbecue sauce, premium quality

Steps:

  • Season meat with salt and pepper, if your rub doesn't contain it.
  • Rub meat on all sides with your chosen seasoning.
  • Let stand under refrigeration for at least 30 minutes, or up to 60 minutes.
  • Brown meat in large pan on top of the stove.
  • Deglaze the pan with water or wine. Pour into cooker.
  • Transfer meat to cooker.
  • Add the entire can of chicken broth.
  • Put on lid and set to seal.
  • Select meat function, and set timer on cooker to 60 minutes.
  • Unplug cooker at end of cooking time.
  • Open lid when pressure has dropped, as per instruction manual.
  • Leave liquid in cooker.
  • Remove pork and shred.
  • Return pork to cooker.
  • Mix well with liquid in cooker.
  • Add 1 to 2 20-ounce bottles of premium quality barbecue sauce, depending on consistency desired.
  • Mix well.
  • Plug cooker in, and set to warm function.
  • Put on glass cover and let stand for at least 15 minutes.
  • Yield: About 15 to 20 generous sandwiches.
  • NOTE: "Country style pork ribs" really aren't ribs at all. They're cut from the pork shoulder and are much more affordable.
