Kalter Hund (German Chocolate Dessert) - Christmas Version image

This is a spicy christmas version of the original kalter hund dessert. It uses speculaas or gingerbread men cookies to add a subtle spice. If you feel you might want some more holiday flavour, add some mixed spice or cinnamon to the chocolate cream mixture or serve this with a ginger flavoured whipped cream.

150 ml rice cream (soy might also work, but I have not tried that, can also use regular cream)
250 g bittersweet chocolate, broken into pieces
1 banana, sliced
100 g speculaas cookies (or try gingerbread men)
1/4 teaspoon mixed spice (optional)

Steps:

  • Heat your rice cream on the stove-top or in the microwave (I used a microwave-safe bowl and heated the cream at 765 watts for 1:20 min).
  • Add in the chocolate pieces (and mixed spice if using) and stir until smooth.
  • Line a small loaf pan (about 7X3 inches) with cling film and start assembling your dessert by covering the base of the pan with chocolate.
  • Continue by layering speculaas or gingerbread cookies, banana and chocolate into the pan until you have used up everything. The last layer should be chocolate (I got 9 layers in total).
  • Place dessert in the fridge and chill for at least 3 hours, best overnight.
  • Slice and enjoy. :) Its great with additional fruit.

A German chocolate cookie cake served with a cup of coffee. Great for dessert. Hey, it's chocolate. It's great anytime. The secret ingredient is the Palmin which is coconut fat. You can get it at a European Deli or buy it online. Google Palmin Coconut Fat in your search engine or try germandeli.com in Texas or scanspecialties.com in Seattle. You can substitute 3 sticks of butter, so I'm told. I haven't tried that yet. I make mine for the Christmas holidays. You don't have to worry about leftovers. This stuff magically disappears. Remember to leave some on a plate for Santa.

8 ounces confectioners' sugar (1/2 package)
250 g coconut fat (1 package Palmin)
1/4 cup coarsely chopped walnuts (optional)
1/4 cup Grand Marnier (optional) or 1/4 cup rum (optional)
1 teaspoon vanilla
1/3 cup hershey's cocoa powder
7 ounces leibniz butter biscuits

Steps:

  • Spread butter cookies out in a single layer on a baking sheet with sides. Brush or sprinkle with Rum. Line a 9x5 inch loaf pan with parchment paper leaving enough extra at the sides to fold over the top for storage.
  • In a medium bowl, combine powdered sugar and cocoa powder with the walnuts, and vanilla. Set aside.
  • Melt the package of Palmin in the microwave for 1 minute until liquid.
  • Blend with above mixture.
  • Using a spatula, spread a thin layer of the choco mixture on the bottom and up the sides a bit of the prepared pan. Place a layer of the drunken cookies in the choco mixture. Cover with a layer of chocolate and repeat with the cookies. Repeat the alternating layers leaving enough chocolate mixture to cover the top.
  • Fold aluminum foil over the top and refrigerate until firm, at least 2 hours. Slice into 1/2 inch slices and serve.

This is a recipe that was in my Grandmother's personal recipe collection. It translates from German to Cold Dog. It is very delicious layered cake that is kept in the refrigerator. Try it with chocolate wafers instead of butter cookies. Make sure you have a glass of milk ready with this dessert! This recipe contains raw eggs. 1 (16 ounce) package plain butter cookies
¼ cup rum
1 egg
¾ cup white sugar
1 teaspoon vanilla extract
¼ cup unsweetened cocoa powder
½ cup butter, melted

Steps:

  • Spread butter cookies out in a single layer on a baking sheet with sides. Brush or sprinkle with rum. Line a 9x5 inch loaf pan with aluminum foil, leaving enough extra at the sides to fold over the top for storage.
  • In a medium bowl, whip the egg and sugar together until thick and pale. Whisk in vanilla and cocoa powder until well blended, then stir in melted butter.
  • Line the bottom and sides of the prepared pan with butter cookies. Spread a 1/2 inch layer of chocolate cream over the bottom. Place another layer of cookies, followed by another layer of cream. Repeat until cream is gone, ending with cookies on the top. Fold aluminum foil over the top, and place in the refrigerator until firm, about 3 hours. Slice into 1/2 inch slices and serve.

This German dessert is very popular at birthday parties and potlucks. It features plain cookies, chocolate and in this variation of the classic also bananas for a fruity touch. Usually it contains eggs and/or copha, but this version is vegan and also copha-free! :) Feel free to use your favourite plain vegan cookies in this. Note please: This needs to chill for at least 3 hours.

This is the original recipe for that famous German pastry. It consists of biscuits placed on top of one another with chocolate filling in between. This recipe has been in the family of my husband for years. Prep time is cook time

500 g coconut fat (palmin)
4 eggs
330 g sugar
115 g cacao (chocolate)
2 1/2 packages butter cookies
3 -5 drops rum (optional)
3 tablespoons nescafe instant coffee
2 packages vanilla powder

Steps:

  • Mix the eggs with the sugar until foamy.
  • Add cacao through a sieve and the other spices/flavorings.
  • Let the coconut fat melt on a pan on low heat and add it to the mixture.
  • With a baking pan or mold lined with baking paper, add alternating layers of chocolate and cookies.
  • The topmost layer and the sides should be chocolate.
  • Put it in the fridge and wait 2-3 days.
