BAGUETTE STUFFED WITH BRIE AND CHERRIES



Baguette Stuffed with Brie and Cherries image

1 pound fresh Bing cherries, pitted and halved
1/2 cup good-quality Port wine
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
5 sprigs fresh thyme
1 crusty French baguette
3 ounces Brie, sliced into 1/2-inch slices
1 sprig fresh thyme

Steps:

  • For the compote: In a small saucepan on medium-high heat, add the cherries, wine, salt, pepper and thyme and stir. Bring to a boil, then reduce the heat slightly to medium. Continue to cook at a rapid simmer until the liquid is reduced by half, 25 to 30 minutes. Turn off the heat and let cool, then remove the thyme sprigs.
  • For the baguette: Preheat the oven to 400 degrees F.
  • Using a paring knife, cut a deep "v" on the top of the baguette. Pull out some of the soft bread to create a deep crevice. Place the Brie slices into the crevice, overlapping each slice. Transfer to a baking sheet.
  • Bake until the cheese is melted and the bread is slightly toasted, 5 to 7 minutes. Transfer to a cutting board. Spoon the cherry compote over the melted Brie. Slice into thick slices, garnish with the remaining thyme sprig and serve.

Chocolate Waffle Sundaes with Flambéed Cherries image

This recipe is a take on the beloved flavor combination of chocolate and cherries, but with booze thanks to the rum flambeed cherry topping. Flambee refers to lighting the rum on fire, which burns off the alcohol while still imparting a rich flavor into the cherries and syrup. Don't forget to serve with ice cream for the ultimate waffle sundae!

1 1/2 cups whole milk
1 1/2 teaspoons active dry yeast
1/3 cup plus 2 tablespoons unsweetened cocoa powder
1 large egg
1/3 cup vegetable oil
1/4 cup sugar
1 teaspoon pure vanilla extract
1 3/4 cups all-purpose flour
1 1/2 teaspoons kosher salt
3/4 cup semisweet chocolate chips
Melted butter, for brushing
1 pound fresh cherries, pitted (about 3 1/2 cups)
1/2 cup sugar
1 cinnamon stick, broken in half
1/4 teaspoon kosher salt
2 tablespoons water
1/3 cup dark rum
2 tablespoons unsalted butter
Vanilla ice cream, for serving

Steps:

  • Make the waffles: Put the milk in a medium microwave-safe bowl and microwave until warm, about 1 minute. Remove 1/2 cup of the warm milk to a small bowl, sprinkle the yeast on top and set aside until foamy, 5 to 10 minutes. Stir the cocoa powder into the remaining 1 cup warm milk and set aside 5 minutes.
  • Whisk the egg, vegetable oil, sugar and vanilla into the cocoa mixture. In a large bowl, whisk the flour and salt, then add the egg-cocoa mixture and the yeast mixture and stir until combined. (It's OK if there are some lumps.) Fold in the chocolate chips. Cover and set aside until the batter is almost doubled in size, 1 to 2 hours.
  • Preheat the oven to 250˚ F. Heat a waffle iron to medium high. Brush with melted butter, then add 2/3 cup to 1 cup batter and cook until crisp, 3 to 4 minutes. Remove to a baking sheet, then repeat to make more waffles. Transfer the baking sheet to the oven to keep the waffles warm.
  • Make the flambéed cherries: Combine the cherries, sugar, cinnamon stick, salt and water in a large skillet and bring to a simmer over medium heat, stirring. Cover, reduce the heat to medium low and cook, swirling the pan occasionally, until the cherries are softened, 4 to 7 minutes. Remove the pan from the heat and pour in the rum. Return to medium-high heat and carefully tilt the pan to ignite the rum, then swirl the pan until the flame burns out. Reduce the heat to medium and continue to simmer until the sauce coats the back of a spoon, 2 to 3 minutes. Add the butter and swirl the pan until melted.
  • Divide the waffles among plates. Top each with a scoop of ice cream, then spoon the cherries and sauce on top.

The pudding in this recipe is set with gelatin instead of eggs, making it very similar to Italian panna cotta. Marinating raw cherries as a topping is a fun way to highlight the fruit during their peak season.

1/2 cup whole milk
1 1/2 teaspoons unflavored gelatin powder
1 cup heavy cream
1/4 cup sugar
Pinch of salt
1 tablespoon unsweetened cocoa powder
1 tablespoon hot water
4 ounces semisweet chocolate, chopped
1 cup fresh cherries, pitted and halved or quartered
1/2 teaspoon vanilla bean paste
1 teaspoon bourbon or cherry juice (or use water)

Steps:

  • Put 1/4 cup milk in a small dish and sprinkle the gelatin on top. Let stand until the gelatin softens and looks wrinkly on top of the milk, 5 to 10 minutes. Meanwhile, combine the remaining 1/4 cup milk, the heavy cream, 3 tablespoons sugar and the salt in a medium saucepan. Stir the cocoa powder with the hot water in a small bowl until smooth, then add to the saucepan with the heavy cream mixture.
  • Set the saucepan over medium heat and cook, whisking, until the sugar is dissolved, 3 to 4 minutes. Microwave the gelatin mixture until warm, about 20 seconds, then stir to fully dissolve the gelatin. Pour the gelatin mixture into the saucepan and cook, whisking, until the mixture is smooth and steaming but not boiling.
  • Remove the pan from the heat and add the chopped chocolate. Let stand a few minutes, then whisk until very smooth and the chocolate is fully melted. Strain through a fine-mesh sieve into a large measuring cup or bowl.
  • Evenly divide the mixture among 4 cups or ramekins. Let cool until no longer steaming, then cover with plastic wrap and refrigerate until set, at least 4 hours or overnight.
  • Toss the cherries in a medium bowl with the remaining 1 tablespoon sugar, the vanilla bean paste and the bourbon. Let stand until juicy, tossing occasionally, 10 to 15 minutes. Spoon over the pudding.
