Freezer Sweet Corn image

People ask me how to freeze corn on the cob because my frozen corn tastes as good as fresh! This way it stays crisp-tender and now I can have "fresh" corn any time of the year. -Judy Oudekerk, St. Michael, Minnesota

Number Of Ingredients 5

4 quarts fresh corn (cut from about 20 ears)
1 quart hot water
2/3 cup sugar
1/2 cup butter, cubed
2 teaspoons salt

Steps:

  • In a stockpot, combine all ingredients; bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes, stirring occasionally. Transfer to large shallow containers to cool quickly, stirring occasionally. Freeze in airtight containers, allowing headspace for expansion.

Easy! We have a relative that gives us fresh corn from his farm in the month of July. We freeze it to use throughout the year. It does not need to thaw and is placed into the boiling water. Ready to be served in 10 min.

2 cups frozen sweet corn
3/4 cup boiling water
2 tablespoons butter
2 teaspoons pillsbury shake and blend flour
black pepper
salt

Steps:

  • Bring water to boil. Add frozen corn and butter. Season with salt and pepper to taste.
  • Boil for 5 minutes and quickly stir in flour to thicken. Boil 5 more minutes and serve.

Judy Orton's Frozen Sweet Corn image

We love sweet corn in the wintertime. My mother would freeze it after blanching and cutting it off the cob. I think she added some salt and sugar to the liquid in the freezer cartons. Judy Orton's recipe is similar, but doesn't require blanching. She said her kids always request a bowl of her freezer corn at their Christmas dinners. That's seems like a good recommendation, so I'm sharing her recipe here.

Number Of Ingredients 4

20 cups sweet corn, cut fresh from cob (about 48 large ears)
5 cups crushed ice, with a little cold water to make it stirrable
1 cup sugar
1/4 cup salt (or less if desired)

Steps:

  • Combine all ingredients and gently until sugar and salt are completely dissolved.
  • DO NOT COOK. DO NOT BLANCH. DO NOT BOIL. ABSOLUTELY NO HEAT!
  • Ladle into quart sized baggies and freeze. Make sure the corn is covered with the liquid. Press out all air; lay flat to freeze.
  • Or use quart sized freezer containers.
  • TO PREPARE FOR SERVING put frozen sweet corn into medium sized sauce pan. Bring to a simmer over low heat. Let simmer for about 15 minutes. Do not boil. Drain off liquid and add 4 T of butter or margarine. If desired, add 3 T of cream cheese and 3 T of cream to create a rich, decadent side dish. OPTIONAL: Stir in 1 small jar of drained chopped pimientos and garnish top with chives before serving.

Frozen corn is a quick answer to a fast side dish. Most of it is pretty good but it can be improved without a lot of effort. This modification adds a few calories to the dish but the difference in the flavor of the end product is remarkable -- I've been using this recipe for years.

16 ounces frozen corn
1/2 cup tap water, warm
2 tablespoons butter
1 1/2 teaspoons granulated sugar

Steps:

  • In a large saucepan over medium heat, pour in all the ingredients. Cover and bring it to a boil, stirring occasionally.
  • When the blend begins to boil, reduce the heat to low, allow it to sautee for ten more minutes (covered) and then serve.
  • NOTE: If you want the sauce to be thickened, just whisk in a tablespoon of cornstarch into the water, which should be increased to 3/4 cup, before adding it to the corn.

8 ears corn, husk and silk removed
1 1/2 tablespoons macadamia nut oil
1/2 cup melted butter
2 tablespoons minced garlic
1 teaspoon crushed rosemary
1 teaspoon rubbed sage
1 teaspoon dried basil
1 teaspoon dried thyme leaves
1 1/2 teaspoons kosher salt
1 1/2 teaspoons ground black pepper
1/2 cup grated parmesan cheese

Steps:

  • Soak corn in cold water for 1 to 3 hours.
  • Stir together macadamia nut oil and melted butter in a bowl. Season with garlic, rosemary, sage, basil, thyme, salt, and pepper; stir in Parmesan cheese.
  • Drain corn and pat dry. Spread butter mixture evenly over each ear of corn, and place each piece on a square of aluminum foil. Tightly wrap each ear and puncture to allow excess steam to escape while grilling.
  • Preheat an outdoor grill for medium heat or preheat oven to 450°F.
  • Grill or bake the corn cobs until tender, about 20 to 30 minutes, turning frequently. Remove from the grill and check for doneness; if the corn is not done, continue cooking an additional 5 minutes.

This is a wonderful comfort food all year round. I put it up in the summer and ration it out the rest of the year. When family visits, they always beg for this.

10 -12 ears corn
1 cup water
1 tablespoon sugar
1 teaspoon salt
1/2 cup margarine (NOT butter)

Steps:

  • Shuck and remove silk from corn.
  • Place corn in boiling water and let water return to a boil and boil 1 minute.
  • Remove corn from water and place in cold water (I use my sink).
  • Cut corn from ear to make 8 cups.
  • To 8 cups cut corn add the water, sugar, melted margarine, and salt.
  • Portion into freezer containers or bags and enjoy the rest of the year.

3 tablespoons butter
1/4 cup shallot, thinly sliced (or onions)
1 red bell pepper, seeded and diced
3 lbs green beans, trimmed, cut into 2 inch lengths
2 cups corn kernels (fresh or frozen)
salt, to taste
black pepper, to taste
2 teaspoons fresh dill, chopped
2 teaspoons fresh tarragon leaves, chopped
1 teaspoon fresh thyme leave, chopped

Steps:

  • Cook or steam green beans until just tender.
  • In a large skillet melt butter. Cook shallots or onion and red pepper over medium high heat about 3 minutes or until slightly wilted.
  • Add green beans and corn and cook about 2 minutes until heated through.
  • Add salt and pepper to taste. Combine herbs and stir in half of them.
  • Remove mixture to a serving dish and sprinkle with remaining herbs.
  • If using dried herbs, reduce to 1/2 tsp each and add a little fesh chopped parsley to the second herb treatment.

This was my Mother-in Law's recipe that I've used for about 26 years now. I no longer can corn. Just freeze. The picture is of some that has been frozen now about 6 months. Just as good as the day it went in. Fresh! The salt & sugar bring out the sweetness in the corn.

24 c fresh sweet corn, cut off cob
1 c sugar
3 Tbsp canning salt
ziplock freezer bags

Steps:

  • 1. Cut corn from cob & measure into LARGE stainless steel, glass, or other non-corosive bowl.
  • 2. Add remaining ingredients, except bags & stir well. Set aside on counter for about 30 minutes, stirring every 10 minutes.
  • 3. Measure the amount you will use into freezer bags & pushing all air out, close the seal. Freeze.
  • 4. Note* When I serve, I use the little bowls shown in picture to hold all the sweet juices too, so I know we only eat a bowl a piece, so that's what I measure into bag. No waste. Have company, get 2 bags out.
